Start Your Day With Healthy Apple Pie Chia Pudding
Healthy eaters of the world, are you hungry? Good, because we’ve got just the thing for you. By now you’re fairly familiar with chia, the superfood that was popular among ancient Mayans and Aztecs. History lesson aside, today we love it because it provides a healthy dose of fiber and boosts our energy. What’s not to love about that? Start off your morning with a chia kick with this Apple Pie Chia Pudding, which is pretty much like dessert for breakfast (Score!). You can prepare the chia pudding and brown butter apples the night before, then finish it off in the morning for a grab-and-go morning meal.
Ingredients (makes 4 servings)
– 4 tbsp chia seeds
– 1 cup almond, soy or coconut milk
– 2 cups vanilla or plain yogurt (to be extra healthy, go with plain)
– 1 pink lady apple (or any sweet apple)
– 1 pat butter
– 2 tbsp brown sugar
Heat a small saucepan over medium heat and melt the butter. Add the apples and brown sugar and lightly cook until the apples brown. Set aside in a container for later.
Put 1 tablespoon of chia seeds in a jar or whatever you plan to eat the pudding in. Add 1/4 cup of milk and repeat for the other three jars. Let sit for 5 hours or overnight. When the pudding is ready (the chia seeds will have swelled and absorbed the milk), add 1/2 cup of yogurt to each container.
Top off with the sautéed apples and enjoy!
