Cheers to Summer + National Mojito Day With This 6-Ingredient La Croix Cocktail
After a long day out in the summer sun, there is nothing better than a refreshingly cold cocktail. And in my opinion, there is no better option than a mojito :) After upgrading wine into a slushie, making Capri Suns boozy and turning avocadosandwatermelon into spiked sips, we decided to remix a classic mojito recipe with one of everyone’s favorite light and bubbly drinks — La Croix. Invite the gang over, light up the grill and relax poolside while you enjoy THE drink of summer ’16.
Ingredients:
— 1/4 cup sugar
— 1/4 cup hot water
— 3 limes
— 1 1/2 cups white rum
— 2 cans lime La Croix
— 1 cup mint leaves
— push muddler
Instructions:
1. Mix 1/4 cup sugar and 1/4 cup warm water into a carafe. Add in 3/4 cup mint leaves and squeeze in two limes.
2. Use the push muddler to muddle all ingredients together into a minty simple syrup.
3. Pour in 1 1/2 cups of white rum and top it off with two cans of lime La Croix. Give it a good stir and pour over ice.
Mix the sugar and warm water together to create a simple syrup, then add in most of your mint (leave behind a bit for garnish) and the juice of two limes.
Grab your push muddler and get at it! You will want to really press into the leaves to release the minty goodness into your simple syrup.
Pour in 1 1/2 cups of white rum and two cans of lime La Croix to finish off your fresh summer mojito.
Fill your glasses with ice and pour a drink for you and your friends. Garnish with extra mint and lime slices.
