A (Spiked Donut) Hole in One!
Fore! On Father’s Day, a Sunday morning filled with donuts, coffee and a little U.S. Open golf is par for the course. Make dear ol’ dad’s donuts even more special by filling them with spiked pudding and serving them up on golf tees. You’re sure to score a hole in one!
Ingredients (makes 3-4 dozen donuts)
– 1 1/3 cup all-purpose flour
– 1/3 cup sugar
– 1 tbsp baking powder
– 1/2 tsp salt
– 1/2 c milk
– 1/4 c vegetable oil
– 1/4 cup sour cream
– 1 egg
– 1 1/2 teaspoon vanilla
– Powdered sugar
– 1 small box instant chocolate pudding
– 1 1/4 cups heavy whipping cream
– 3 ounces Kahlua
– 3 ounces Bailey’s Irish Creme Liquor
To make the donut holes, we used a Babycakes Cake Pop Maker. This couldn’t have been easier! The batter is a snap to whip up and each batch only takes about 4 minutes to bake. To further ease the process, you can also just buy some pre-made donut holes from the store.
Combine the flour, sugar, baking powder, salt, milk, oil, sour cream, egg and vanilla in a medium bowl. We used an immersion blender to blend all ingredients; just take care not to over-mix or your donuts will be dense. Mix only until large lumps disappear.
Fill each opening with about a tablespoon of batter. Don’t overfill or you will get little saucer looking shapes.
Bake for 4-5 minutes until lightly browned and a toothpick comes out clean when inserted into the middle of one. Note: The bottoms of the donut holes will be more brown than the tops.
Immediately toss the hot donuts in powdered sugar. A brown paper bag would work well for this.
Once you have finished your donuts (you will have 3-4 dozen in all), you can make your filling while they cool.
Combine pudding mix, both alcohols and heavy whipping cream. Using a hand mixer, mix until stiff peaks start to form and pudding sets.
Fill the flavor injector (included with the Babycakes machine) with chocolate pudding and fill your donuts. Remember, you won’t need a whole lot! If you are using store bought donuts, you can use a pastry bag with a tip or a squeeze bottle to fill your donuts.
Of course, we had to taste test by taking a bike… just to make sure we had the right amount of spiked pudding. ;)
Using either cake pops or actual golf tees, serve them up on a bed of wheat grass, and you’re all set!
