Spike Your Sweets: 5 Classic Cocktail Ice Cream Floats
When delving into the world of ice cream floats this week, it only made sense for us to get boozy with it. And why not keep to the classics? Today we’ll show you ridiculously simple recipes for mixing up a Pimm’s Cup, White Russian, Berry Bellini, French 75, and Spiked Root Beer… in float form!
Oh, and no these don’t all have ice cream. But sorbet floats and fizzes just like the creamy stuff, so we’re counting it as a float-maker too. ;)
For each of these delights, the process is the same. Scoop your ice cream into a glass, top with liquor, your assorted accoutrements (fruit, chocolate chips, etc), and top the whole thing with something bubbly.
The Pimm’s Cup Float: Pimm’s No. 1, cucumber, ginger beer, lemon sorbet, mint
Scoop up your ice cream, add the Pimm’s, toss in a few cucumbers and a squeeze of lemon juice, and top the whole thing off with ginger beer.
This is the perfect drink for summer days by the pool or on the beach, and tastes especially delicious when the sorbet is almost totally melted. Kick things up a notch by adding more fresh herbs, strawberries and rhubarb. Mmmm.
The White Russian Float: vodka, cream soda, coffee ice cream
Add a few scoops of coffee ice cream to your glass, a shot of vodka, and top with cream soda. The Dude would certainly abide.
If you really love the sweet stuff, use Fluffed Marshmallow Vodka instead. And if this is already too sweet, substitute half the cream soda with unsweetened iced coffee.
The French 75 Float: gin, champagne, lemon sorbet
Pop that bubbly and let it sit for a bit while you assemble the rest of the float. Lemon sorbet, a fresh wedge of lemon, gin, and, finally, the bubbles.
C’est magnifique!
The Berry Bellini Float: champagne, peach sorbet, berries
First, scoop your peach sorbet. Bonus points if you use a variety that has chunks of actual peaches. Yum. Add berries, and then champagne.
Voila! Your brunch just got a whole lot cooler (pun intended).
The Spiked Root Beer Float: kahlua, root beer, vanilla ice cream, mint
For our final concoction, we spiked the classic root beer float… with kahlua, of course.
All of these cocktail floats are perfect for a boozy summer brunch, bbq, or even a night in with your significant other. Dessert just got a whole lot tipsier. ;)
