Stars & Stripes… in Fruit Form!
Oh say can you see… this is one of the easiest and most patriotic dishes to grace your BBQ table this July 4th. Honor Old Glory by recreating its likeness in colorful fruit kebab form! Jaymee Sire from E is for Eat shows us how.
Ingredients:
– 1 box of strawberries
– 2 apples
– 1 box of blueberries
– juice from 1 lemon
– water
– 1 (6 ounce) container of non-fat Greek yogurt
– 1 tablespoon honey
– 1 teaspoon lime zest
– juice from 1/2 lime
– kebab skewers or cocktail toothpicks
To make a zesty and healthy yogurt dip, simply mix some Greek yogurt with honey, lime zest and lime juice. (Psst…this is also a delicious way to make your very own key lime pie yogurt!)
To make your kebabs, start by peeling the apples. To keep them from turning brown, keep a bowl of water mixed with the juice from one lemon nearby and plop your apple cubes into them while you work. Try to cut your apples and strawberries in uniform sizes to make for easier “stripe creating” later on.
Now the fun part! Create your “stripes” by threading onto skewers or cocktail sticks, alternating strawberries and apples and laying the skewers next to each other on a rectangular platter. As you add more skewers, your stripes will start to take shape.
For the “stars,” place the yogurt in a small square dish and arrange the blueberries close enough together to create a nice blue pop of color, but far enough apart so you can see the white “stars” peeking through.
And that’s it! Of course, you can use other red, white and blue fruit such as bananas, raspberries or blackberries. Bonus points if you make a big enough flag to represent the accurate number of stars and stripes.
