How to Make a Patriotic 4th of July Poke Cake

Can you believe the 4th of July is almost here? If you’re going to an epic Independence Day party, you’re gonna want to make sure you bring an epic all-American dessert with you. Our suggestion? Celebrate with our Raspberry Poke Cake! Read on for the recipe.

Ingredients:

— 2 boxes white cake mix

— 2 1/2 cups water

— 6 eggs

— 2/3 cup vegetable oil

— 3 cups raspberries

— 1/2 cup granulated sugar

— 1 lemon

— 2 Tablespoons cornstarch

— 1 1/4 cup water

— 3 cups heavy whipping cream

— 2 teaspoons vanilla extract

— assorted berries, to garnish

Instructions:

1. Preheat oven to 350 degrees Fahrenheit. Line a 13 x 9-inch baking sheet with parchment paper. In a large bowl, combine the cake mix, water, eggs and vegetable oil. Mix. Pour batter into sheet pan. Bake for 25 minutes, until golden brown. Let cool five minutes.

2. In a medium saucepan, combine raspberries, sugar, zest of one lemon, juice of one lemon, 1 1/4 cups water and cornstarch. Bring the mixture to a boil over medium heat. Simmer for five minutes, stirring constantly.

3. Using the handle of a wooden spoon, poke the cake every inch or so. Spoon raspberry sauce evenly over the cake. Chill for one hour.

4. In a stand mixer, beat heavy whipping cream and vanilla until soft peaks form. Top cake with whipped cream and fresh berries. Enjoy!
