We love ourselves all sorts of spiked recipes. From our cappuccino stout brownies to strawberry cheesecake jello shots, we can’t resist trying out all sorts of different ways to cook with booze. Seeing as we’ve got a long weekend ahead of us, it only makes sense to turn our attention back to beer, and all the ways you can cook, mix, and bake with it. Of course, any recipe that involves actual cooking doesn’t still count as spiked, but what better drink to serve with a beer-induced recipe than beer? ;)

1. IPA Ceviche: Nothing says hot weather like a serving of ceviche. This combines shrimp, lemon, jalapeño, Sriracha, and IPA. (Recipe and photo: The Beeroness)
2. Campfire Beer Pancakes: If you’re getting one last camping trip in this weekend, you’ll love this take on campfire pancakes. Using beer instead of water in this one makes pancakes super airy. Can’t wait to try it! (Recipe and photo: CHOW)
3. Guinness Bloody Mary: That’s right. Guinness in a bloody mary! This recipe includes as many veggies and spices as a batch of gazpacho and is too delicious not to try out. (Recipe and photo: Bon Appetit)
4. Bacon and Beer Cupcakes: We whipped these up for Father’s Day a couple months ago and still can’t get over them. Great for a cool oceanside night or for cozying up by the campfire. (Recipe and photo: Brit + Co.)
5. Beer Can Grill-Roasted Chicken: Beer can chicken is one of those recipes that seems to be a classic but you probably have yet to make it. A long summer weekend is the perfect time to try! And yes, we did include a grill-less take on this for Father’s Day if you’re looking for an indoor version. (Recipe and photo: Cooking with Michele)
6. Drunken Strawberry Tart with Beer Lemon Curd: The minute we saw the title of this sweet treat, we were in love. It’s summery, easy, and makes you just a little bit tipsy. (Recipe and photo: The Beeroness)
7. Jalapeño IPA Hummus: Another one from the masterful Beeroness, this hummus is light, delicious, and a great change-up from your usual store-bought variety. (Recipe and photo: The Beeroness)
8. Ginger-Peach Beer Cooler: Making cocktails with beer is a great way to add a bit of bubbly to a fruity summer drink. This cocktail combines peach nectar, fresh peaches, and homemade ginger simple syrup for a flavor that is super refreshing. (Recipe and photo: Giada De Laurentiis)
9. Pale Ale Soft Pretzels: A great take-along for a potluck or barbecue any time of year, this soft pretzel recipe gets a unique taste from a 1/2 cup of pale ale-style beer. After all, what pairs more perfectly with a soft pretzel than an ice cold beer? (Recipe and photo: Martha Stewart)
10. Corona Cupcakes: Another cupcake! This one is a bit more summery, using a refreshing bottle of Corona with a wedge or two of lime. Like any recipe that involves baking or cooking, this loses its alcoholic quality the minute it hits the oven but is the perfect match for a cold beer. (Recipe and photo: Not Your Mama’s Dinner)
11. Barbecue Kale & Onion Pizza: Even pizza can be made better with beer! For the kale topping, sauté your greens in beer for a deliciously different flavor. Serve with… beer! (Recipe and photo: Fake Food Free)
12. Raspberry Beer Cocktail: Who knew that fruit and beer were such a delicious combo? This is sort of like a more alcoholic shandy, combining beer, lemonade, vodka, and fresh raspberries. (Recipe and photo: A Cup of Mai)
