This Pressure-Cooker Ramekin Eggs Recipe Is Ready in Less Than 5 Minutes

Are you ready to go beyond pressure-cooked hard-boiled eggs? The next breakfast to try in your Instant Pot or multicooker is eggs en cocotte, French for "in pot" or ramekins more specifically. Traditionally, raw eggs are cracked into a buttered ramekin along with a splash of cream and, optionally, your choice of cheese, veggies, and herbs. The ramekins are then placed in a pot filled with a little bit of water. The lid goes on the pot, and the pot goes on the stovetop to boil the water and steam the contents of the ramekins until the egg whites set. It tastes like a cross between poached eggs and an omelette and is heavenly when scooped and spread onto fresh toast. A multicooker makes this process less than five minutes compared to the traditional method, which can take eight minutes to bring the water to boil and another six to seven minutes for the eggs to steam.

You will need an electric multicooker like Instant Pot or Crock-Pot Express, as pictured, as well as a trivet that will fit in the base of the multicooker's bowl and three small ceramic ramekins. We sautéed mushrooms and chives for our pressure-cooked eggs in cocotte, but you can also add in sautéed leek or shallot if you have them on hand. Just keep the overall veggie ingredients about the same so everything fits below the lipped rim of the ramekins.

If you have slightly larger ramekins, try cracking in an additional egg to fill it to just below the rim. A bigger vessel may affect your overall cook time, so be patient as you fiddle with what settings yield eggs the way you like them.

Consider this recipe a loose guideline to introduce the technique. The most important thing to remember is the multicooker will set those egg yolks FAST. So, if you love a runny yolk, start with setting it on a low pressure cook for one minute. Medium eggs, as pictured, will take two minutes.

Ingredients

  • 1 tablespoon ghee, plus more for greasing
  • 2 cups mushrooms, chopped (or other veggies of your choosing)
  • salt
  • 1 tablespoon chives, chopped
  • 3 eggs
  • 3 tablespoons heavy cream

Directions

Using the sauté setting of a multicooker, melt ghee, then sauté mushrooms together, until tender, caramelized, and reduced to 3/4 cup. Season with salt to taste.

Meanwhile, grease the ramekins. When mushrooms are cooked, divide into ramekins. Top each with a teaspoon of chives, a freshly cracked egg, and a tablespoon of cream.

The multicooker pots are nonstick, and so you shouldn’t need to wash them. Simply add 2 cups of water to the bottom of the Instant Pot.

Add the trivet, and place the egg-filled ramekins on top. Secure and lock the lid of the multicooker. Pressure cook on low for 1-2 minutes. Quick release and immediately remove the top when the pressure has normalized. Carefully remove the ramekins. They’ll be hot, so use heatproof oven mitts or mason jar lifters (if you have them).

Serve with freshly toasted bread, like walnut levain as pictured.

It's taken years (kid you not) to develop this thickvegan instant pot chili. Many recipes out there turn out too soupy and have a sort of muted steamed taste. We've toyed with the measurements here and there and finally can present something we're impressed with. Fascinatingly enough, quinoa helps to bind the veg and tomatoes together; the pseudo-grain swells up and soaks any extraneous liquid. It's an essential part of this simple vegetarian chili that calls for only a handful of ingredients.

We intentionally tried to make it easier on you, because we know getting a home-cooked meal on the table is trouble enough. The most effort you'll have to put forth is cranking open a bunch of cans and rough-chopping onion and pepper. We promise you can get through that prep in about the same amount of time it takes to listen to a single on Spotify.

How To Make Pressure-Cooked Vegetarian Chili

Once cooked, the onions, tomatoes, and peppers practically melt in your mouth, while the beans retain their firmness and chew. This is not a five-alarm chili in terms of heat, but you can certainly crank things up by doctoring it with sriracha, cayenne pepper, or diced jalapeño. If you need more textural contrast, serve it with some tortilla chips. The recipe yields quite a large amount — certainly enough for you to reheat and enjoy all week long. That, or inspire you to host a last-minute dinner party with spicy paloma cocktails for all.

Recipe Notes: Don't rinse the beans! They help thicken the chili. To crank up the heat, dice up a fresh jalapeño (ribs and seeds), and toss it in the pressure cooker along with all the other ingredients. The hot capsaicin will infuse into every bite of the chili.

Step One

In the pot of a multicooker, combine all ingredients in the order they appear. Secure the lid and lock. Cook on chili/bean setting or on high pressure for about 15-20 minutes.

Quick-release, carefully remove lid, and stir until all ingredients are thoroughly mixed. Salt and/or sprinkle cayenne pepper to taste.

Transfer leftovers to an air-tight container, and refrigerate for up to 5 days. Flavor will improve each day as the spices sink into the ingredients.

Just how expensive is it to have a baby in 2024? One woman sharing her experience on social media has sparked a much-needed conversation about financial transparency when it comes to starting (or growing) a family.

Josephine Anderson, who posted a video on her Instagram @fosterthevalley, outlined the costs of her uncomplicated vaginal birth, and TBH, it was shocking.

The financial breakdown of her experience (with Cigna for insurance):

  • Routine office visits (including 2 ultrasounds): $1,266
  • Labs: $3,440.81
  • NIPT genetic testing: $15,319.36
  • Anatomy scan: $1,270
  • RhoGam: $360
  • Hospital for mom: $23,722.10
  • Hospital for baby: $7,402.80
  • OBGYN for delivery: $5,000
  • Epidural: $5,720
  • Breastfeeding support: $2,589.78
  • Pediatrician: $209
That all racks up to a whopping total of $66,299.85. After insurance was factored in (her deductible was $3,000 while her max out-of-pocket for in-network expenses was $11,000), the total cost for her uncomplicated vaginal birth was $4,788.98. Forbes Advisor reports the average cost of having a baby in 2024 is $2,854.

Josephine’s video warranted thousands of comments, most of which were appalled by the costs of her experience:

“This needs to be shared in SexEd classes,” one commenter wrote.

“The US medical system is BROKEN,” another said.

“And people are still confused why more women are choosing to remain child free… we literally can’t afford it,” another user commented.

Brit + Co spoke with Wendy Colson RN, IBCLC and CEO/Founder of BOOBIE Superfoods to gauge if Josephine’s costs were typical for the care she received. Colson has significant insight into how insurance works not only from an employer’s perspective, but from personal experience as a patient with breast cancer.

“The $4,788.98 net amount she mentions is realistic given that her deductible was $3,000. If she had chosen a plan with a $1,000 deductible – which is a common ceiling for good coverage – the same scenario would have cost her around $2,789,” Colson said. “The video highlights the importance of understanding what you're getting with an insurance plan, especially when you anticipate major life events like childbirth.”

Colson primarily attributes unanticipated costs for medical care (like in Josephine’s case) to patients that choose their insurance plans with, well, no real plan.

“Many [people] opt for the [plan] with the lowest paycheck deductions without fully evaluating the benefits,” Colson said.

There’s often a tradeoff between paying less per paycheck and receiving your desired benefits: for example, if you elect to contribute less money towards your insurance per paycheck, you may end up paying more out of pocket for things like doctor’s office visits and prescriptions.

“Making an informed choice is key to saving money in the long run,” Colson continued. “In short, it's crucial to consider both the immediate costs (like paycheck deductions) and the potential future costs (like deductibles and copays) when choosing an insurance plan.”

Another major cost Josephine mentions in her video was 12 weeks of unpaid maternity leave, which cost her a total of $18,000 (in lost income).

Per the passing of the Family and Medical Leave Act (FMLA) in 1993, moms have a legal right to up to 12 weeks of unpaid maternity leave. The U.S. Department of Labor notes that the act was designed to help employees balance their work and family responsibilities, accommodate the legitimate interests of employers, and promote equal employment opportunity for men and women.

It all sounds great until you realize the time off is indeed unpaid, which doesn't really aid in the amount of money parents end up owing after all is said and done in the pregnancy and childbirth processes.

Only 13 states plus the District of Columbia offer paid maternity leave. When you compare the United States’ laws to that of other industrialized nations, they don’t exactly measure up.

Colson says Sweden’s maternity leave policy is “one of the most generous,” offering 390 days of paid parental leave (shared between parents) and 80% of wages covered for a significant portion of the leave. In Germany, mothers are entitled to 14 weeks of maternity leave plus a tax-free, income-based allowance straight from their insurance provider.

Though it’s likely that US laws will never be that generous in terms of paid maternity leave, there are a few things you can do to make the blow of medical costs hurt a little less, says Colson.

“My advice is to be your own advocate,” she says. “If you’re planning to have a baby, start by understanding what your state provides in terms of paid leave to avoid surprises after delivery.”

To keep the cost of having your baby (if you’re planning to have one) transparent and free of surprises, Colson recommends:

  • Asking your physician’s office for a detailed breakdown of insurance billing codes, including:
    • Office visits
    • Lab work
    • Epidural (and the anesthesiologist’s separate fee)
    • Hospital admissions
    • Specialist consultations during admission
    • Optional procedures like circumcision, if desired
  • Email the insurance billing codes to your insurance provider, who can help calculate your out-of-pocket costs and deductible

“Having a baby is priceless,” Colson says. “By planning ahead – understanding your insurance options, healthcare costs, and available benefits – you can ensure peace of mind and focus on what truly matters: your growing family.”

No official news about the comeback of McDonald's all-day breakfast has broken, but in 2020, the company tweeted that they're "evaluating" the need to bring it back. Obviously, there haven't been any new 24-hour breakfast McDonald's locations to make our all-day breakfast dreams come true.

Originally, McDonald's planned an all-day breakfast option because of failing sales across the US. They hoped that giving so many of us what we’d been asking for so long would improve the company’s bottom line. Turns out, not only has it not worked, but the chain’s sales of all-day breakfast menu items such as McDonald’s Sausage McMuffins, Egg White Delights, Sausage Biscuits, and Sausage McMuffins to name a few have decreased by almost 2% in the last few months (!).

In an interview with Buzzfeed News, CEO Steve Easterbrook said that the chain is trying to figure out how to fix sales here at home, even though around the world, the company is still doing quite well. Easterbrook says that focusing on making McDonald’s the “restaurant of the future” is a top priority (although sales are down while wait times are up). New focuses include curbside check-in, mobile ordering and advanced kiosks.

Bloys continued, “We’ve got two shows at the moment, including Game of Thrones [prequel House of the Dragon]. I think the movie is the same idea. They’ll develop an idea, we'll see if it's good. We'll read the scripts along with them. I think it could be fun and interesting. That’s the point of development: you see, is there a story that's worthy of being in theaters and a big spectacle? I think it would be fun.” We are sooo excited!
