BBQ Pork Belly “Sliders” With Jalapeno Cheddar Deviled Egg Salad

Deviled eggs are delicious, as is pork belly. And together they create a flavor burst like nothing else. Today we’re making pork belly sliders with jalapeño cheddar deviled egg salad. We worked with LAY’S® Wavy and their esteemed chef Jody Denton who came up with a delightful twist to the classic slider. Rather than buns, we’re using LAY’S® Wavy Hickory BBQ Flavored Potato Chips to sandwich our ingredients together. Move over, bread — chips are the new bun.

Here’s what you’re going to need to construct your sandos.


– 1 bag (15 ounces) LAY’S® Wavy Hickory BBQ Flavored Potato Chips

– 1 1/2 pounds BBQ Pork Belly (see recipe)

– 2 cups Jalapeño Cheddar Deviled Egg Salad (see recipe)

First we need to make the deviled egg salad. This can be done a day ahead if you want to spread out the recipes.

Ingredients:

Jalapeño Cheddar Deviled Egg Salad

– 5 hard boiled eggs

– 3 tablespoons mayonnaise

– 1 tablespoon sweet pickle relish

– 1 teaspoon yellow mustard

– 1/4 teaspoon salt

– 1/8 teaspoon freshly ground black pepper

– 1 jalapeño, roasted, peeled, seeded and chopped

– 1/4 cup grated sharp cheddar cheese

Instructions:
1. In a bowl, mash the egg yolks with a fork and mix in the mayo, relish, mustard, salt, pepper, jalapeño and cheese.

2. Roughly chop the egg whites and mix into the yolk mixture.

3. Refrigerate until ready to serve.

Remove the yolks from your hard boiled eggs and smash them in a bowl using a fork. Then add all of the other ingredients and mix well to combine.

Roughly chop the egg whites and then add them to the mixture.

This is going to take over four hours to cook, so we recommend you get an early start. Set your oven to 300 degrees Fahrenheit.

Ingredients:

BBQ Pork Belly

– 1 1/2 pounds pork belly, lean end, block cut

– 1/2 cup light brown sugar

– 1/2 cup paprika

– 1/4 cup chile powder

– 2 tablespoons kosher salt

– 1 tablespoon ground black pepper

– 1 tablespoon garlic powder

– 1 tablespoon dried thyme

– 1 tablespoon dried oregano

– 1 tablespoon yellow mustard seeds

– 1 teaspoon cayenne pepper

– 2 teaspoons liquid smoke, hickory flavor

Instructions:

1. Mix the rub ingredients together and thoroughly coat the pork belly with a healthy layer of rub.

2. Pour 1 cup of water into a baking dish and lay the belly fatty side up in the dish, cover tightly with aluminum foil and place in a 300 degree oven until tender, about 4 hours.

3. Remove the foil, drain the liquid and brush the mop liberally on all sides. Put them back into the oven uncovered for another 10-15 minutes until the mop reaches a glaze consistency.

4. Repeat the mopping process two more times.

5. Remove the belly from the oven and wrap it in aluminum foil. Keep it in a warm place until ready to slice and serve. It can be wrapped in plastic and refrigerated for later use, but for best results serve warm within an hour of leaving the oven.

Add all of the rub ingredients to a bowl.

And give it a whirl, smashing any clumps.

Add a generous layer of rub to the pork. Then add a cup of water to the bottom of your baking dish. Place the pork in the dish, fatty side up. Cover the baking dish with foil and cook it for 4 hours.

In the meantime, make your BBQ mop (see recipe below). Once the meat is tender, coat it with the mop. Put it back into the oven for 10-15 minutes and then glaze it again. Repeat this process two more times.

If you’re going to make a slider, you need a good sauce. Memphis-style mops are thin and delicious with a vinegar flavor.

Ingredients:

Memphis-Style BBQ Mop

– 3 tablespoons butter

– 1/4 cup minced onion

– 1 cup vinegar

– 1 cup tomato sauce

– 1/4 cup Worcestershire sauce

– 2 teaspoons sugar

– 1 teaspoon salt

– 1/2 teaspoon fresh ground black pepper

– 1/8 teaspoon cayenne pepper

– dash of Tabasco sauce

Instructions:

1. In a heavy-bottom sauce pan, heat the butter over medium heat.

2. Add the onions and sauté for 8 to 10 minutes until they reach a golden brown color.

3. Add the remaining ingredients and bring the mixture to a boil. Reduce heat to a simmer and cook the sauce for 20 to 30 minutes until it reaches a thin BBQ sauce consistency.

Add butter to a heavy sauce pan. Let it melt and then add the onions. Cook them for 8-10 minutes on medium heat.

Add the remaining ingredients and then bring the liquid to a boil. Lower the heat and simmer for 20-30 minutes. It will stay thin unlike other BBQ sauce that gets thick.

Time to make these babies.

Instructions:
1. Arrange 24 LAY’S® Wavy Hickory BBQ Flavored Potato Chips on a platter.

2. Slice the pork belly into pieces about 1/4″ thick and 2″ x 2″ square and place one piece on each chip.

3. Place about 1 tablespoon of the Deviled Egg Salad on top of each, then top with another chip to create a mini sandwich. Serve immediately.

Cut the meat into 1/4 inch slices. Add one piece of pork to a chip. Then add a teaspoon of egg salad on top. Top your sandwich with a second chip and pop it into your mouth!

What is an unexpected business challenge that you faced and how did you overcome it?

I wouldn't call myself a FAFSA (Free Application for Student Aid) expert, but I ended up having to know a lot more about it than I ever anticipated. FAFSA is what administers Pell Grants, which is what a lot of colleges base their financial aid on. I knew about the application changes, and some were excellent, but they made a series of critical errors and a lot of parents were scrambling. It was not my intent to have this as my area of focus; it just became a necessity.

What's a recent small win for your business?

Recent small wins are my collaborations. I formed partnerships with one organization that focuses on students with special needs. I hosted a webinar with the executive director of that organization. I formed a partnership with members from an insurance company on planning and paying for college. That was my first corporate sponsorship. And I've got a series of events coming out because others actually reached out to me. One of them I met through another networking platform, but I got to that platform from one of the sessions that I did with Verizon Small Business Digital Ready Program.

How did you start to collaborate with external partners?

Just changing my strategies and my approach, and just being more secure and more emphatic in making connections. It ends up being this continual cycle.

Is there a woman in business that you admire or that you look up to?

I have two. Leontyne Anglin, who runs a nonprofit called Beyond Expectations. She works with a small pool of students, but she just gives them enormous exposure and opportunity. She's brilliant with collaborating with individuals and businesses and really bringing the students what they need. And then the other on a bigger scale is Cate Luzio, founder and CEO of Luminary, who taught her Business Plan Bootcamp through the Verizon Small Business Digital Ready Program. She is just a dynamo. She is just so supportive of women entrepreneurs. She's awesome.

How did the Verizon Small Business Digital Ready Program help propel your business forward?

All of the collaborations and partnerships with the exception of one all came from joining the Verizon Small Business Digital Ready Program. I’ve taken all of the free classes and the one on projections and pricing, something every entrepreneur struggles with, was very helpful. There have been so many of them. Sometimes you're completely ignorant in a category so you take the class and it's like, okay, that's good to have. But then sometimes you sign up for it and it's like, oh, yeah, I did know 90 percent of that, but this other 10 percent is going to be very, very helpful.

This is actually a practice I picked up in therapy to help redirect my anxious thoughts. It's something I often refer to when I'm fixated on the future and things that might happen. Any time you feel yourself not being present because you're worried about what's next, focus on things that are immediately in front of you or around you.

For example, here's what's reminding me to be present:

  • I can hear one of my favorite gospel songs playing and the subtle humming I'm doing.

  • I can smell the clean laundry my fiancé took out of the dryer.
  • I'm touching the keys on my keyboard as I type this.

When in doubt, think about a moment that was hilarious or filled you with joy. It can be from your childhood, first year in college, or even your wedding day! The one memory that always makes me smile is from an interesting moment I told one of my uncles he looked like Santa Claus. What's an unexpected business challenge that you've had to face and how did you overcome it?

The hardest thing for me was my sister passed away and I ended up taking custody of my nieces. I ended up being a single mom of four kids. This is the thing that transitioned my whole entire life. I stopped doing web design and started my podcast Mom Owned and Operated. I wanted to reconnect with other moms and figure out how they were able to run their businesses and raise a family and take care of themselves because I wasn't able to do all three at the same time. Through that journey, I realized that I really needed to connect with other people and how important it was for my business. It helped me to create that community that I was yearning for that I didn't realize that I needed.

What's a recent small win for your business?

For me, the win was just pivoting back to something that I actually wanted to do. Also, I’ve started to say no to things that I no longer want to do.

Who is a woman in business that you look up to and why?

I have always admired and looked up to Amy Porterfield [author of Two Weeks Notice]. I listened to her all the time when I was starting out. I think that she's amazing and I love her stuff. She just seems like a very genuine person.

Is there a resource that has made an impact on you as an entrepreneur?

I listen to a lot of audio books. One of my favorites that has been huge for me is You Are A Badass by Jen Sincero. I was told when I first started my business, by a friend who was a business coach, that I have a mindset problem. Ten years ago, I had no idea even what “mindset” was. Sincero’s book helped me to see what she meant by “mindset” and helped me adjust that mindset and fix some of the things that I didn't realize were broken.

How has the Verizon Small Business Digital Ready Program helped propel your business forward?

There are a lot of things that I have loved about it. There are local networking and training opportunities, and that has been great, and the online training is very valuable. It's a great resource. I find that marketing needs a three-tiered approach, meaning you need to network it locally, socially, and then also have a very comprehensive online approach to your marketing. One of the Verizon Small Business trainings that I took was all about taking advantage of your local resources. I found that to be extremely valuable because often people think they need to just focus on social media. I don't think that people focus enough on their local community.

For the shortbread crust:

  • ½ cup butter
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoon cornstarch

For the pecan pie filling:

  • 2 eggs
  • ¾ cup brown sugar
  • ½ cup light corn syrup
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon cornstarch
  • 1 & ½ cup pecans chopped

How To Make Easy Pecan Pie Bars

  1. Preheat the oven to 325 F, then line an 8x8 pan with parchment paper and set aside.
  2. In a large bowl, add in the flour, salt, cornstarch, and mix. Add in the cold butter and work it into the dough with your hand or a pastry cutter until cookie dough forms. Press it onto the prepared baking pan and bake for 20 minutes.
  3. In a separate large bowl, mix the eggs, brown sugar, light corn syrup, heavy cream, salt, vanilla extract, and cornstarch until combined. Stir in the pecan pieces.
  4. Once the crust is done baking, pour the pecan pie filling on top of the crust and bake for 30-35 minutes. The edges will brown a little, and the center will be barely jiggly.
  5. Remove from the oven, and let cool completely before transferring to chill in the fridge for at least 30 minutes. Slice the bars and serve.
