This Enchilada Bean Tostada Recipe Is Budget-Friendly & Perfect For Sharing

Gone are the days of having to sacrifice your budget for a delicious, healthy, and satisfying meal. When it comes to budget-friendly recipes, the options typically fall into two buckets: A frozen TV dinner that lacks flavor and tastes like an airplane meal or an unhealthy takeout alternative after a long workday.

One solution? Smoky bean tostadas. The recipe takes less than 30 minutes to put together, and the price per serving is incredibly low. In fact, this recipe — starring Heyday Enchilada Black Beans — which serves 3-4, will run you about $8 in total.

The rich, savory beans meet a foil in a bright jalapeño and charred scallion salsa, bringing just the right amount of heat and crunch to the situation. If you’d like, have fun with extra toppings: sliced avocado or guacamole, crumbled Cotija cheese or queso fresco, pico de gallo, and hot sauce to name a few.

Plan on 2 to 3 tostadas per person; sans cheese, the meal is vegan and gluten-free (be sure to check the tostada package to ensure this, though). For a slightly heftier version, use two cans of beans.

Ingredients For The Easiest Bean Tostadas

  • 1 lime
  • 1 large jalapeño
  • Kosher salt
  • 1 tablespoon extra-virgin olive oil
  • 1 bunch (6-8) scallions
  • 1 (15-oz) can Enchilada Black Beans
  • 8-12 tostadas
  • 1 ounce (about ¼ bunch) cilantro (leaves and all stems)
  • Sliced avocado or guacamole, for serving (optional)
  • ½ cup crumbled Cotija cheese or queso fresco, for serving (optional)

How To Make This Enchilada Bean Tostada Recipe

  1. Heat the oven to 250ºF. Zest lime into a medium bowl, then halve and juice it. Stem the jalapeño and finely chop (removing ribs and seeds if you’re sensitive to spice) or very thinly slice into rings. Add to the bowl with the lime juice and season with a big pinch of salt. Toss to combine, let set aside to lightly pickle.
  2. Heat a medium skillet over high until smoking, then oil. Let heat for 20 seconds, then add the scallions in a single layer. Shake the pan to coat all the scallions in oil, and let cook undisturbed until charred on the bottom, 2 to 3 minutes. Toss and continue to cook undisturbed, tossing every 2 to 3 minutes until the scallions are evenly charred.
  3. Remove from heat. Season with salt, and slide out onto a cutting board, hanging onto the skillet. Let cool slightly, then trim the ends and slice the scallions into 3-inch pieces. Toss into the bowl with jalapeño.
  4. Heat the beans in the reserved skillet over medium-low, string occasionally, until warmed through, about 5 minutes. Meanwhile, arrange the tostadas on a sheet pan and bake until warm and crisp, about 5 minutes.
  5. Roughly chop the cilantro. Divide the warm beans evenly between the tostadas (figure 2 to 3 per person), then top with jalapeño-scallion mixture, cilantro, and avocado and/or cheese if using.

They're not necessarily Christmas-specific, either. Their simple design allows you to spruce 'em up in all kinds of ways year-round. Similar pieces at Target and Anthropologie range from $21 $68 for one tree, but you can get two trees for just $25 on Amazon right now.

Plaid Throw Pillow Covers

Plaid – specifically red plaid – is timeless when it comes to Christmas decor. It never fails to make a space extra cozy! These 18x18-inch covers are perfect for throw pillows on your bed and couch alike. You can snag this set of 2 in a few other holiday-ready colorways for just $10, and they'll likely last you a while with the right care.

    Artgar Real Touch Pine Garland

    If you have a mantle, use it! A mantle is prime real estate for Christmas decorations like stockings, candles, and cards – but none of that is truly complete without a good garland! This 6-foot faux pine garland can easily span your mantle to fill in any negative space and simply make things cozier. It comes with attached LED lights (no wall plug necessary, just a few batteries) as well as pinecone accents to make the garland itself feel fuller. Plus, $30 isn't so bad for a statement piece like this!

    Vintage Bow Decorative Tray

    This piece reminds me of a tray Pottery Barn Teen and LoveShackFancy sells in their collaborative collection, except it literally costs $60 less. It's not a total dupe, but the one thing it does have in common is bows: the most adorable reference to gifting season! I think this $9 pick could be so cute as a serving platter for Christmas desserts or even as a festive catchall you keep on your coffee table throughout the holidays.

    Kate Aspen Retro Floral Drinking Glasses

    The intricate design on these green-tinted glasses really has me hooked. They'd look so good with any sort of Christmas party tablescape – as long as you're sipping Christmas cocktails out of them! A similar set of 6 is currently being sold on Quince for $48. This one's only $26.

    You'd think someone with acne-prone skin wouldn't buy viral beauty finds without doing thorough research, but I'm not above trying to recreate all the latest makeup trends at home. All this did was remind me that everything isn't for everyone — and that's okay! Well...it's not okay I fee like I wasted money, but at least I know what to stay away from.     Here are all the overrated beauty finds I wish I wouldn't have bought

    1. MILK Hydro Grip Primer

    I should've known better than to buy this again, but I wanted to see if my skin would react better to it. The first time I tried to use this, I broke out along my jaws in tiny, red bumps. They were itchy and eventually turned into dark spots that took me over a year to get rid of.

    Instead of letting that be the red flag that kept me away from this beauty find, I decided to use it in place of my trusted e.l.f. Cosmetics Power Grip Primer I've been relying on. Two things happened:

    1. It created a beautiful base for my makeup.
    2. I didn't break out, but my faced still felt itchy.

    I even switched my makeup brushes and checked to make sure other makeup products weren't expired. The culprit continued to be this primer so it's made it to my overrated list.

    2. KORA Organics Kakadu Plum Vitamin C Serum

    I was initially sent this to test, but I decided to buy it myself to see if I truly like it. While it was easy to add to my skincare routine lineup, I realized I actually didn't need to spend $70+ for an effective Vitamin C serum. The only difference between this serum and the one I truly love are their colors and textures.

    This one has a slightly yellowish-orange tint to it while being a little thicker compared to the Timeless Skin Care Vitamin C serum I use. The latter is thinner and 100% transparent, plus the odor is slightly stronger. However, both of them aid in smoother skin, smaller pores, and a healthy glow.

    I honestly wouldn't buy this one again just because I can get the same benefits for a lesser price.

    3.NYX Cosmetics Fat Oil Lip Drip

    This is a controversial take, but I honestly didn't love the NYX Fat Oil Lip Drip. Although I love the color payoff, it was too sticky for my liking. I saw reviews that mentioned this, but I've purchased lip glosses other people didn't love that worked for me in the past. However, the reviews are telling the truth: the stickiness takes away from what could've been a great formula.

    4. L'Oréal Voluminous Panorama Washable Mascara

    I know people love this beauty find because it is great. I just didn't think the hype was enough to convince me to buy it again because my essence Lash Princess False Lash Effect Mascara gets the job done for $5. I will say I love the washable feature of L'Oréal's version, but it's still not enough to make me willingly spend over $10 for it.

    As great of a product as this is, it's overrated to me because of the price tag.

    5. Haus Labs Triclone Skin Tech Medium Coverage Foundation

    Sigh...it's so hard for me to admit this, but this Haus Labs foundation has become my most overrated beauty find of 2024. It's not that it doesn't work for a few hours, but my skin prefers tinted moisturizers more than anything. I talked about it briefly on TikTok, but skin tints feel like you're not wearing anything on your face.

    I'm always really oily after wearing this foundation for a few hours, but I can get extended wear out of the Danessa Myricks Yummy Skin Tint I've been wearing. I like to think it's because it has vegan collagen, ceramides, and cactus extract in it whereas this foundation has ingredients like fermented arnica in it.

    Both do a great job of calming inflammation, but something about this foundation makes my skin think it's incredibly dry.

    • 1 ¼ cups shredded zucchini
    • 1 ½ cups light spelt flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon fine sea salt
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground cardamom
    • ¼ teaspoon ground nutmeg
    • ¾ cup coconut palm sugar
    • ¾ cup unsweetened apple sauce
    • ⅓ cup neutral-tasting oil
    • 1½ teaspoons vanilla extract
    • ½ cup walnut halves, chopped
    • ½ cup dairy-free chocolate chunks or chips

    How to Make This Zucchini Bread Recipe

    The First Mess

    1. Preheat the oven to 350F. Lightly grease a 8×4 loaf pan and then line it with parchment paper. Lightly grease the parchment as well and set aside.
    2. Gather the shredded zucchini in a clean kitchen towel. Over the sink, gather up the edges of the towel and squeeze out as much moisture from the zucchini as you can. Set aside.
    3. In a large bowl, whisk together the spelt flour, baking powder, baking soda, sea salt, cinnamon, cardamom, and nutmeg.
    4. In a medium bowl, whisk together the coconut palm sugar, apple sauce, oil, and vanilla extract. Add this wet mixture to the larger bowl with the flour mixture. Using a rubber spatula, mix until just combined with a few little streaks of flour.
    5. Add the shredded and wrung out zucchini to the batter along with the walnuts and chocolate chunks. Fold these items in until they are evenly distributed.
    6. Transfer the batter to the prepared loaf pan and flatten the top of the loaf. Bang the filled loaf tin on the counter a few times to fully settle the batter.
    7. Bake the vegan spelt zucchini bread for 60-70 minutes, or until a toothpick / paring knife inserted into the center comes out clean. Remove the zucchini bread from the oven and let it cool in the loaf pan on a wire rack.
    8. Let the zucchini bread cool completely before removing from the pan and slicing.

Elements like leather furniture, rustic accessories, equestrian art, even wood walls, shown in this office designed by A1000XBetter, are making an impact in 2025 and beyond. But Shea notes that you can take this trend literally or just be inspired by the look. You can also mix it with other styles to personalize it for you. Add romantic pillows or ruffled tablecloths like McGee & Co. x Loeffler Randall Gardenia Ruffle Border Tablecloth – things you love that make it yours vs. based solely on one trend.

    Saturated Colors
