The *One* Foolproof Way to Cook Fish at Home

For many of us, 2017 was a doozy, but we here at Brit + Co are ready to hit refresh in 2018! Follow our Hit Refresh series through January for new ideas, hacks, and skills that will help you achieve (and maintain!) those New Year’s resolutions.

Overcooked and under-seasoned fish — can you slap anything worse onto your dinner plate? A lot of folks want to incorporate more pescatarian meals into their diets these days, but fish becomes an easy flop when you’re not used to working with it. (Especially on the grill.) However, there is *one* foolproof way to cook fish, and that’s by steaming it in a parchment packet. This method promises a tender and flavorful fillet every time, not to mention the countless flavor combinations you can create.

How to prepare your fish in parchment

Before you start drooling over our flavor combos, it’s best you know how to package your fish in parchment. Here’s a useful way to do it:

Heart-Shaped Packet

  1. Prepare a large sheet of parchment paper that measures approximately 14 by 12 inches.
  2. Fold the paper over lengthwise and cut half of a heart into the paper using scissors. When you unfold the paper, you should be left with a paper heart. (Cute, right?) Make sure you have about a one- to two-inch border for folding later.
  3. Place the parchment onto a flat surface and transfer the fillet of fish to the center of one of the heart halves.
  4. Deck out your fish with your chosen ingredients including your seasoning, toppings, and drizzles.
  5. Fold the parchment over your fillet and line up the edges of your parchment. At the rounded end, start folding the parchment in two-inch segments. Work your way around the packet until you reach the end, and carefully twist and tuck the end piece under the packet to secure.
  6. Cook your fish in the oven at 425 degrees Fahrenheit for 12-15 minutes, depending on the thickness of the fillet. You’re looking for opaque and flaky flesh and an internal temperature of 145 degrees Fahrenheit.

Once you’ve mastered the technique, try out these three flavor combos. Soon, you’ll be coming up with your own in NO time.

Mediterranean influence

Toppings to include:

  • a sprinkle of salt and pepper
  • Kalamata olives
  • capers
  • grape tomatoes
  • thinly sliced red onion
  • marinated artichoke hearts
  • lemon slices

To make it saucy:

  • a knob of butter or a drizzle of olive oil
  • a few generous drips of dry white wine

East Asian Influence

Toppings to include:

  • a sprinkle of salt and pepper
  • red bell pepper
  • scallions
  • edamame
  • bok choy
  • daikon
  • lime slices
  • fresh cilantro
  • sesame seeds for garnish

To make it saucy:

  • sesame oil
  • soy sauce
  • rice vinegar
  • spicy chili sauce
  • miso paste (thoroughly mixed into all or any of the above)

Simple Herb and Butter

Toppings to include:

  • a sprinkle of salt and pepper
  • your favorite fresh herbs, chopped (dill, thyme, basil, parsley, etc.)
  • lemon slices

To make it saucy:

  • a knob of butter
  • a few generous drips of dry white wine

In a world where people are hopping onto strange food trends without hesitation, like making pizza with naan and customizing their morning coffees beyond repair, it’s amazing anyone could still be grossed out by food. Needless to say, we still have our limits… especially when it comes to those itty bitty white worms wiggling around in our pretty pink salmon fillets (HUH?). But before you swear off these healthy omega-3-rich fillets for good, let’s understand what these worms in salmon are, why they’re present, and why you don’t have to snub your fave lox at brunch this Sunday.

The white worms we occasionally spot in salmon fillets are parasites called roundworms. Though these worms are more noticeable in salmon due to the contrast in color, they can be found in many white fish too — they’re just camouflaged.

But we shouldn’t be freaking out.

Despite the fact that our knee-jerk reaction is to panic and consider things contaminated, roundworms are as natural to fish as insects are to fruits and veggies. A teeny white worm in your salmon is the equivalent to an aphid, thrip, or mite in your recently harvested greens. Yes, it’s still yucky AF, but totally natural.

The good news is that roundworms don’t pose health risks when fish is thoroughly cooked to an internal temperature of 145 degrees Fahrenheit, which is the FDA’s recommendation. When it comes to lightly preserved or raw fish — like sushi, sashimi, ceviche, or gravlax — as long as the product was commercially frozen to an internal temperature of -4 degrees Fahrenheit for at least seven days prior to preparation, parasites are terminated. (High five, fellow sushi lovers!)

Just be sure to avoid sketchy sushi joints; when you hear about people getting sick from eating at low-profile all-you-can-eat sushi spot, it’s because they aren’t handling their fish properly.

It is believed by some that wild-caught fish are more susceptible to roundworms due to the fact that they interact with an external ecosystem, while farmed fish are segregated from the wild and are fed pellets treated for parasites. This isn’t something *we* can confirm, but it’s food for thought nonetheless.

If you really want to feast on fish but paranoia has now gotten the best of you, there is an at-home method you can try: fish candling. This method has you place a bright light beneath a fillet of fish so you can see the shadows of any worms present. You can then grab some tweezers and remove, then discard of the worms yourself. (This method obviously isn’t for the faint of heart.)

Emily in Paris season 4 was the buzziest season yet, and for good reason. Emily's in Rome, Camille was never pregnant, and Gabriel's hair went from très hot to tragique. In addition to the viral response to Gabriel's new hair, season 4 left me pretty sad because after four years of waiting for Emily and Gabriel to get together, they almost immediately break up — and actor Lucas Bravo is just as confused as we are.

“The ‘sexy chef’ was very much part of me in Season 1 and we grew apart season after season because of the choices he makes and because of the direction they make him take,” Lucas Bravo told IndieWire while promoting Mélanie Laurent’s Freedom. “As they made him kind of unaware of his surroundings, of the dynamic, always victimizing and always being completely lost in translation and oblivious to anything that is happening around him and being manipulated by everyone, it kind of became not fun for me to shoot or to see a character I love so much and brought me so much, being slowly turned into guacamole. I really grew apart from him.”

Honestly it makes me really sad that a character we all love so much is becoming unrecognizable. But at the same time, it makes me feel a little bit better, because we're not the only ones who feel like Gabriel has changed. And while Lucas has done what he can to bring those early-series aspects of Gabriel back, he says "there is only so much I can do in the limits of a script.”

“I tried for seasons to bring nuances but we don’t have much liberty on set," he continues. “It makes me question if I want to be part of Season 5…because my contract ends at Season 4. I really want to see if Gabriel gets back to his fun, cheeky, playful, alive self. Because three seasons playing melancholic, sad, depressed, and lost is not fun anymore. It’s a comedy, everybody is having fun around me, everybody is jumping around, and I’m just slowly sinking into god knows what.”

Say what now?! If Lucas Bravo leaves Emily in Paris, I truly don't know what I'd do. Gabriel is my favorite character on the show! (Or at least, early Gabriel was.) Seeing him move from 30, flirty, and thriving to someone who's consistently in the middle of an existential crisis doesn't make sense within the world of the show. And even though Lucas thinks the show has a "lack of risk," he still loves everyone involved.

“I love the show. It started everything for me. I love the show and the people in it," he says. "With saying that, I feel like I am not being nice or grateful, but when you love something you want it to be…you want the best version of it. I’m not going to lie, I’ve been frustrated with the direction by character is taking. But we’ll see where it goes. The show is not over.”

Just like the show's iconic costumes are all about expression and fun, here's hoping Emily in Paris is able to bring some life back into our favorite chef. Because if not, it sounds like we could be nearing the end of the show's most popular would-they-won't-they relationship. Fix this Netflix, I beg you!

If you’re a pasta lover, it’s a great time to be alive. The pasta aisle is filled with alternatives to traditional semolina and whole-wheat varieties, from red lentil penne to edamame spaghetti. Red lentil pasta stays firm even after being refrigerated, so you’ll have no more mushy leftovers! Plus, it boasts 13 grams of protein per serving.

Cooking Tip: Use this one for your baked pasta dishes, like baked ziti. On busy nights, simply toss with jarred sauce and Parmesan cheese. (If you have a few extra minutes, sauté fresh garlic in a bit of olive oil, along with oregano, fennel seeds, and crushed red pepper to make your store-bought sauce feel fancier.)

Pair It With: Your favorite pasta sauce. The short pasta can handle chunky sauces, and it soaks up thin and creamy sauces too. There’s no sauce that red lentil pasta can’t handle!

Why We Like It: Like the red lentil pasta above, these lentil elbows have a neutral flavor and cook up without much guesswork on the timing. (We’ve tried a few brands.) They’re also the perfect swap in your favorite mac and cheese recipe. Each serving contains a whopping 20 grams of protein.

Cooking Tip: Use a thick or darker sauce to fool picky eaters and mask the slight green color. (Try pesto!)

Pair It With: Toss hot pasta with two cloves of minced garlic, plus plenty of olive oil or butter, and Parmesan for a quick weeknight dinner. Garnish with black pepper and crushed red pepper.

Why We Like It:Chickpea pasta is one of the best protein pastas. This pasta looks and tastes surprisingly like the real deal, with a bit more texture (like a whole-wheat pasta). It cooks quickly and doesn’t fall apart if you forget to set a timer and let it go a couple of extra minutes. (It’s worth buying in bulk!) Also, did you see the 20 grams of protein per serving?

Cooking Tip: Garbanzo bean pasta is tasty chilled too, so use it in your favorite pasta salad recipes. Make a quick lunch by mixing chickpea shells with hummus, chopped olives, and roasted red peppers. Serve over arugula.

Pair It With: Toss hot pasta with tahini (thinned with water and lemon juice), then salt to taste. Serve with steamed broccoli.

Cooking Tip: Keep a box of these awesome noodles on hand for all your lasagna cravings. Get creative by turning other favorite pasta dishes into layered feasts. Try roasted butternut squash rings with ricotta, gorgonzola, dried cranberries, and sage, then top with a simple tomato or Alfredo sauce (seasoned with rosemary and black pepper).

Why We Like It: This pasta cooks quickly and is a tasty alternative to rice when stir-fry is on the menu.

Cooking Tip: Set a timer, and don’t walk away. Any thin, long legume pasta like this one needs to be stirred often and not overcooked. If you overcook it, you’ll end up with a congealed blob.

Pair It With: Asian-inspired sauces like sesame ginger or traditional noodle dishes like Korean japchae.

Why We Like It: Unfortunately, we don’t, even with its 14 grams of protein per serving. Every brand we’ve tried needs far longer than the recommended cook time to reach al dente, and we experienced some, um, bean-y side effects every time we ate this one. Since black beans take longer to cook from dried than the other legumes listed here, we suspect that’s why black bean rotini was a fail. Black bean spaghetti did fare slightly better, but it’s still not worth the price.

Peacock first shared a video clip on Instagram that hinted something special involving Paris Hilton and Nicole Richie is coming in May. A nostalgic TV set with a black and white screen can be seen while our favorite duo's voices can be hearing saying, "Sanasa, Sanasa."

Peacock captioned the post, "New Era. Same Besties. Coming soon to Peacock," and fans could barely contain their excitement. Even celebs like Naomi Campbell and Katy Perry commented on these hot vibes.

Then Paris Hilton took to her own Instagram to share more about what fans could expect. She said, "As some of you may know, we are doing a reunion special to celebrate 20 years of our show The Simple Life and it's been so much fun."

Not only that, but fans can expect to see an Opera version of the show they fell in love with two decades ago. Paris said, "The idea of the opera was unexpected" while Nicole chimed in with, "What people need, even though they don't know it yet, is for 'Sanasa' to be an opera.'"

The two besties came up with the idea via a series of texts that started off as ideas between them. Nicole said everything "came up organically" for the two and we can only imagine the memories this brought up for them. OG influencer Paris even talked about how The Simple Life was an "important show in pop culture history" and we couldn't agree more!

Nicole truly wants people to enjoy themselves while watching Paris & Nicole: The Encore and "find the same joy" she had while filming it. According to Paris, she feels what they have is "magic" because "there's just so much history behind it."

The average calf circumference for women is 15 inches – a fact that a lot of brands making trendy tall boots completely ignore.

My calves measure 16 inches around, meaning fitting comfortably into the boots I would give an arm and leg for (ahem, the famed Frye Campus boots and these sleek Sam Edelman steppers, 14 and 15 inches, respectively) will never be a reality.

I can’t always wear the same styles that smaller women do, and even if I do find similar boot designs fashioned for wide calves, they look noticeably cheap or simply don’t check all the boxes in terms of my desired look.
