Liquor You Can Eat: No-Bake Bourbon Balls

Recent discovery: The way to every man, woman, but not child’s heart is through tiny balls of bourbon. There’s just something about eating liquor that gets people giddy (not to mention being able to say balls over and over again). But those aren’t the only reasons we’re busy making batches upon batches for all of our little lovelies. If your friends and fam live far, far away, these alcohol orbs are the V-Day giftable to send. They last up to two weeks, don’t require refrigeration, and actually get better with age. Meaning, while they’re being shipped around the country, the bourbon is mellowing and they’re getting tastier by the mile. Of course, they’ll only be as tasty as the ingredients, so make sure you go with a good bourbon and a good cocoa power. We’re fans of Buffalo Trace bourbon and Tcho natural cocoa powder.

Ingredients:
– 14 cinnamon graham crackers

– 1 cup walnuts

– 1 cup powdered sugar

– 1/4 cup natural or bittersweet cocoa powder

– 1 teaspoon freshly grated ginger

– 3 tablespoons honey

– 1/2 cup bourbon

Toppings:
– crushed Fruity Pebbles

– crushed graham crackers

– sprinkles (We used India Tree String of Pearls)

Instructions:

1. Preheat the oven to 375 degrees F. Toast the walnuts for 7 minutes. Let cool.

2. In a food processor, grind the graham crackers to a dust.

3. When the walnuts are cool, grind them in the food processor, but not so much that they turn into a paste.

4. In a large mixing bowl, combine graham cracker dust, ground walnuts, powdered sugar, and cocoa powder. Grate ginger on top, and stir to combine.

5. Stir in honey and bourbon. You might have to use your hands to get the honey and bourbon to fully incorporate.

6. Using your hands, roll the dough into one-inch, bite-size balls.

7. Once you’ve rolled all the dough, grind both the graham crackers and the Fruity Pebbles in the food processor, separately. If you want bigger flecks of Fruity Pebbles to dot your balls, which we highly recommend, take it easy on them in the food processor. Place toppings in three separate bowls.

8. One by one, roll the bourbon balls in your topping of choice to cover. Then eat!

Toasting nuts might seem like a pain. But the additional flavor from heating them up makes it well worth the effort.

Graham cracker dust! That’s what you’re after, but when it comes to the nuts, take it easy. You don’t want to end up with walnut butter.

Grate your fresh ginger on top and then use a spatula to combine all the dry ingredients.

Squeeze that honey bear.

Now we get to the best part. The part where we crack open the bourbon and hand mix the dough. You might feel the need to take a nip off the bottle. You should fulfill that need ;)

Ball rolling time. Shoot for 1-inch orbs. If the dough is too sticky, throw it in the freezer for 10 minutes before diving in.

After you’ve food processed the Fruity Pebbles and the grahams, cover your smooth bourbon-y balls in crumbs or sprinkles.

And there you have it, beautiful bourbon balls!

Test one yourself. But take it easy. Those little rounders pack a punch.

Trading dating horror stories usually ends with me laughing so hard I can't breathe. But in Stephanie Hsu's new romantic comedyLaid, going through her list of exes is anything but funny for one simple reason: they're all dying, and she needs to figure out why. When Ruby (Stephanie) finds out her exes are all dying in strange ways, she has to go back through her relationship timelines in order to embrace the future. According to the official Peacock site, this crazy rom-com answers the age-old question of "Is there something wrong with me?" with “Yes. There is. The problem is definitely you.”

“When we started to develop Laid, we were intrigued by the idea of bringing back the old-school, traditional romantic comedy (swelling music! kisses in the rain! Anne Hathaway or someone who is also appealing!), but because we were living in such a dark time (pandemic! industry strikes!), we felt it needed to have some kind of twist,” co-showrunners & executive producers Nahnatchka Khan and Sally Bradford McKenna said in a joint statement. “Sure, it could be optimistic and heartwarming and make you believe in love again, but it should probably also have suspense, death, and blood."

I'm obsessed with the title of this show because of its double meaning, too. Not only does "laid" connect to all of Ruby's sexual encounters but it's also a nod to the fact her exes are being laid to rest. So clever!

If there's one thing The Seaside Baker blogger Jackie Bruchez knows, it's the sweet spot between fresh ingredients and luxurious desserts. In her new cookbook, Decadent Fruit Desserts($22), there is a little something comforting for everyone in more than 60 recipes, such as grilled peaches and a banana-chocolate pot de crème with cognac sauce. At the heart of each recipe is a key fruit ingredient, meant to shine as the star of the show. Bruchez elaborates in the intro of her book, “Transforming fruit, be it apples or oranges or more exotic varieties like dragon fruit, into a decadent, sophisticated, blow-your-mind dessert is the revelation I want to share with you." You don't have to just take our word for it. The paloma tart recipe below takes the tequila-grapefruit drink and morphs it into a bright and snappy multi-layered fruit tart.

Paloma Tart

(Serves 8-10)

Baker's Note: When making the curd, it is necessary to whisk the egg yolks and sugar before adding the citrus juice to avoiding curdling.

Ingredients:

Crust:

  • nonstick cooking spray
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lime zest, freshly grated
  • 1/2 cup coconut, shredded
  • 1 cup unsalted butter, cold
  • 1 tablespoon fresh lime juice

Grapefruit Tequila Curd:

  • 6 egg yolks
  • 1 1/4 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon grapefruit zest
  • 2 cups grapefruit juice, freshly squeezed
  • 1/4 cup cornstarch
  • 3 tablespoon unsalted butter, cold
  • 1 tablespoon tequila, optional

Whipped Cream:

  • 1 1/2 cups heavy whipping cream, cold
  • 1 1/2 tablespoon powdered sugar
  • 1/2 tablespoon lime zest, freshly grated
  • lime and grapefruit wedges, for garnish

Directions:

1. Preheat the oven to 350°F. Lightly spray a 9-inch fluted tart pan with nonstick cooking spray.

2. Make the crust. In a large bowl, mix the powdered sugar, flour, salt, lime zest, and coconut until they're well blended, about 30 seconds. Add the butter and lime juice; mix to combine them until moist clumps form. Press the dough into the bottom and up the sides of the pan.

3. Bake the crust until it's golden brown, about 23 to 25 minutes. Cool it for 10 minutes.

4. While the crust is cooling, make the curd. In a heavy-bottomed, medium-sized pot, whisk the egg yolks and sugar until it's light and pale. Whisk in the salt, grapefruit zest, juice, and cornstarch. Place the pot on the stove over medium heat and cook the curd until it thickens and coats the back of a spoon, about 5 minutes. Remove it from the heat; stir in the butter, one tablespoon at a time, and then add the tequila, if using.

5. Pour the warm curd into the crust; let it sit for 30 minutes, then transfer the tart to the refrigerator to chill for at least 1 hour.

6. Right before serving, make the whipped cream. Beat the heavy whipping cream, powdered sugar, and lime zest on high until stiff peaks form.

7. Dollop the cream onto the tart and garnish it with lime and grapefruit wedges.

Ingredients:

  • 4 cups white tea, such asPOM Pomegranate Orange Blossom White Tea
  • 2 cups vodka, tequila, or gin
  • 1 1/2 cups pineapple juice
  • 2 cups orange or mandarin juice
  • 1/2 cup water
  • 3 cups sparkling water
  • Lychees and oranges, sliced for garnish
  • Ice

Preparation:

  1. In a large bowl or pitcher, add white tea, spirit of choice, water, pineapple juice, mandarin juice and water.
  2. Stir to combine.
  3. Top with sparkling water, and garnish with lychees and orange slices.

  • Mandarins, such as Wonderful Halos
  • Food coloring markers
  • Scissors
  • Black heavyweight paper or card stock
  • Paring knife
  • Adhesive dots

Instructions:

  1. Draw jack-o-lantern faces onto the mandarins with the food coloring marker.
  2. Cut pairs of bat wings, leaving an extra bit – around ¼ inch – on the flat side to fold back and act as a tab. Add an adhesive dot to the tab to adhere each wing to the mandarin.
  3. Cut pairs of small triangles for ears. Use the knife to cut small shallow slits on the top of the mandarin and tuck in the ears. (via Jodi Levine)
