Homemade Pickled Veg: the Latest Trend in Burger Toppings!

As much as we love those over-the-top, mouth-watering burgers with their mountains of melted cheese and piles of bacon, sometimes we like something a little more refined! Something like this juicy burger, topped with crunchy pickled cucumber and red onion. So simple to make, these pickled veggies will look amazing in mason jars in your refrigerator. The red onions look especially vibrant, sitting prettily in their bright pink pickling juice. Use them in salads (like these spiralized salads), sandwiches or on hot dogs. Or just put the jar straight on your party table and let everyone dig in as part of a gorgeous cheeseboard!

Ingredients:
Makes 2 burgers plus 1 jar of pickled red onions and 1 jar of pickled cucumber
— 1 cucumber

— 2 small or 1 large red onion

— 2 Tablespoons granulated sugar

— 3 1/2 teaspoons salt

— 1 cup cider vinegar

— 2 cups room temperature water

— 1/2 pound good quality ground beef — ideally 20% fat (for a juicier burger)

— 1/4 teaspoon ground black pepper

— 2 Tablespoons vegetable oil

— 2 brioche buns

— 1 little gem lettuce, washed

For the sauce:

— 2 Tablespoons tomato ketchup

— 2 Tablespoons mayonnaise

— 1 teaspoon yellow mustard

Instructions:

  1. Start by making the pickled veg the day before you plan to use them. Use a vegetable peeler to peel the cucumber into thin strips, right up until you reach the seeds. Peel and slice the red onions thinly.
  2. Place the cucumber strips into one mason jar and the red onion slices into another. Add one tablespoon of sugar and 1 1/2 teaspoons of salt to each jar (this will leave half a teaspoon of salt). Divide the vinegar and water between the two jars. Place a lid on each jar and place in the refrigerator overnight (they should keep for at least 2-3 weeks).
  3. When you’re ready to make your burgers, add the remaining 1/2 teaspoon of salt and the black pepper to the ground beef. Mix together with your hands and form the meat into two patties.
  4. Preheat a griddle or large skillet while you make the sauce. Mix the sauce ingredients together and put to one side.
  5. Brush the insides of the brioche rolls with the oil and place them on the griddle until griddle marks appear (about 45-60 seconds on a hot griddle). Place the burgers on the griddle and cook, turning once until cooked throughout (about five minutes).
  6. Now it’s time to assemble the burgers. Place the bottom of the burger rolls on plates. Add lettuce slices and the sauce. Top with the burger. Add a few lightly drained cucumber slices and one tablespoon of lightly drained red onion slices. Place the burger tops on and serve.

After news broke of Angelina Jolie and Brad Pitt's daughter, Shiloh, changing her last name from "Shiloh Jolie-Pitt" to "Shiloh Jolie," the whole world is wondering just what happened between this superstar family. Almost 10 years after Jolie and Pitt's divorce, it seems like the pair's children continue to draw a clear line in the sand, choosing to only remain close to their mother, and distance themselves even further from their dad.

Obviously, there's a lot of history to uncover from Jolie and Pitt's whirlwind (and controversial) romance, short-lived marriage, and abrupt breakup. Here's everything we know about what exactly is going on, and why this drama is unfolding between this high-profile Hollywood family.

How long were Brad Pitt and Angelina Jolie together?

The couple was only married from 2014-2016 when Jolie filed for divorce. Although they were only married for a short while, their relationship lasted much longer than that, having been together and starting a family long before their legal nuptials.

The iconic couple met in 2004 on the set of the famous movie, Mr. and Mrs. Smith — and despite Pitt being married to the Jennifer Anniston at the time, Jolie and Pitt fell in love. After this, the pair had a whirlwind romance over the years, filled with many movies and many kids. They decided to get married in Miraval in 2014, only to file for divorce about a year and a half later in 2016.

How many kids do Angelina Jolie and Brad Pitt have?

The couple shares six kids together! Their names are: Shiloh, Pax, Vivienne, Knox, Zahara, and Maddox. Zahara and Maddox were their first kids that they had (and actually were adopted!), then Shiloh was their first biological child, after that Pax was adopted, and lastly Angelina gave birth to the twins Vivienne and Knox!

Why did Angelina Jolie and Brad Pitt separate?

After Jolie abruptly filed for divorce from her husband, news started circulating that an incident might've happened on a plane between Jolie and Pitt in front of her children. In an FBI report given to CNN, Jolie accused Pitt of "injuring her and verbally abusing their children during a heated encounter aboard a private jet in 2016." This report has since been heavily redacted, but states that Pitt had been "drinking heavily" at the time of the incident, when he verbally attacked one of their children, and when Jolie confronted him, he “grabbed her by her head,” “grabbed her by the shoulders,” shook her, and was yelling very aggressive statements to her in front of their family. Angelina suffered many injuries from the abuse, even giving the FBI documentation of the bruises. Right after this, the FBI investigated Pitt's actions, but ultimately there were no charges were filed against Pitt.

Immediately following the investigation, Jolie requested full custody of their six children.

Have any of Angelina Jolie and Brad Pitt's kids chosen a side?

While Jolie requested full custody, Pitt came back and requested joint, which he was then granted in 2021. While he may have visitation rights and custody, most children are completely estranged from Brad and choose not to see him. Pax is also very publicly protective over his mother, so although we don't know if he's chosen a side, per say, we know he loves and protects his mom. The youngest ones, Knox and Vivienne, are still required to visit Brad for the time being, due to the joint custody agreement.

Have any of their children changed their name?

Their daughter, Zahara, has publicly declared her new name while at a ceremony for her sorority at Superman College. In the viral video, she announces herself to be "Zahara Marley Jolie" effectively removing "Pitt" from her name completely — though the change has not legally been made yet.

In regards to their other children, People recently announced that Shiloh was removing the "Pitt" as well, simply going by "Shiloh Jolie" legally. The rest of the kids' names remain the same for now.

How is Brad Pitt handling the estrangement?

Pitt has dropped sources and quotes over the last few years hinting at how he feels isolated from his children, and their decision to remain estranged. People recently reported that a source very close to Brad says, “He’s aware and upset that Shiloh dropped his last name." The source continued, "The reminders that he’s lost his children, is of course not easy for Brad. He loves his children and misses them. It’s very sad."

While Pitt may be upset, it's clear the kids are very frustrated over something that occurred in the family — plane incident, or otherwise — so it's ultimately up to the children, and how they want to proceed with (or without) a relationship with their father!

We know this must be hard on the whole family, but we hope their all able to find peace and happiness in the future!

Why are their children staying away from the spotlight?

On October 27, Angelina spoke with E! News at the premiere of her new project Maria. Though she was there to celebrate the film's debut, she didn't shy away from answering questions about the future of her and Brad's kids. Though their parents are famous, Angelina knows her kids aren't drawn to that lifestyle. "No, I think they're especially shy, very private people," she said. "...they want to be private."

An anonymous source told People how hard Angelina's worked to make sure the kids have a sense of love and normalcy these days. "In the past few years, she's been able to create a life for herself and the kids that make them all happy. It was a struggle for a while, but Angie is proud about how resilient and strong the kids are."

Buffalo Chicken Wrap ​from Half Baked Harvest

As a bonus, we're throwing in one of our favorite easy and healthy wrap recipes that pushed all the right buttons on flavor. You'll combine shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, fold them up in wraps, then pan-fry until warm and crispy.

These easy wraps, made by Half Baked Harvest, come together in mere minutes. They're crunchy on the outside, cheesy on the inside. Serve with the deliciously creamy jalapeño lime ranch and additional buffalo sauce! These healthy wraps are great for both lunch and dinner, but equally fun for a game night, too!

First things first: start with the buffalo chicken. Shred up a couple of chicken breasts and toss them with homemade buffalo sauce, Greek yogurt (for creaminess), and fresh herbs. Most buffalo chicken fillings are made with cream cheese, but you can swap in yogurt for a healthier choice.

Ingredients:

  • 1 cup cooked shredded chicken
  • 1/4 cup plain greek yogurt
  • 1/3 cup buffalo sauce
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 4 large (burrito size) whole wheat or gluten-free tortillas
  • 2 cups shredded romaine lettuce
  • 1-2 jalapeños or poblano peppers, chopped
  • 3 green onions, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • Olive oil, for cooking

Ingredients for jalapeño ranch:

  • 1 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños chopped + 2 tablespoons brine
  • Juice from 1 lime
  • 1 teaspoon kosher salt

To assemble:

Make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry. So you've got...

  • One-quarter of buffalo chicken
  • Another quarter wrap of greens n' things
  • A quarter full of ranch
  • And finally a quarter full of cheese
  • Fold it all up into one triangle

Instructions:

  1. In a bowl, combine the chicken, yogurt, buffalo sauce, chives, parsley, and dill.
  2. To make the ranch. Combine all ingredients in a bowl.
  3. To assemble, cut down from the center of the tortilla to the edge. Spread the chicken in the bottom left corner, then add a handful of the lettuce, jalapeño/poblano pepper, and green onions on the top left corner. Spread the ranch on the top right corner, and the cheese on the bottom right corner. Fold the buffalo chicken over the lettuce. Then, working clock-wise, folding that quarter over the ranch. And finally, fold that quarter over the cheese.
  4. Heat a drizzle of olive oil in a skillet, add 1 wrap and cook 2-3 minutes per side until crisp and golden brown. Serve warm with extra buffalo sauce, ranch, and lettuce.
