In a stand mixer fitted with a paddle attachment, mix sugar and butter on low until well blended. Increase speed to medium and beat for 3 minutes. Stop and scrape down the bowls with a spatula, if needed.
If adding color, divide into various mixing bowls. Drop in gel food dyes of your choice, stirring with a spoon until no streaks remain.
Transfer to piping bags with the piping tips of your choice. Secure with couplers(optional) and decorate.
