We love a good healthy substitute for our favorite dishes, especially when said recipes are extra delectable. When dietician Desiree Nielsen set out to make Good For Your Gut, a gut-friendly, plant-based cookbook and guide for those with digestive issues and food sensitivities (or, just those who want to eat lighter and healthier), she knew she wanted each recipe to be just as good as the original — and this Zucchini Cacio e Pepe recipe definitely lives up to the hype.

Not only are the noodles subbed in with lighter, gluten-free noodles, the traditional Parmesan cheese is recreated with nutritional yeast. The result is a low-FODMAP recipe that tastes creamy, rich, and indulgent, all while being extra nutritious. Take it away, Desiree!

Zucchini Cacio e Pepe Pasta with Pan-Fried Oyster Mushrooms

Ingredients:

  • 1 package (12ounces/340g) gluten-free pasta (see Tip)
  • ¼ cup (60mL) pine nuts
  • 5 tablespoons (75mL) avocado oil, divided (see Tip)
  • 1 ⅓ cups (325mL) peeled and chopped zucchini (about 1 medium zucchini)
  • ¾ teaspoon (3mL) salt, divided, plus more for seasoning
  • ½ teaspoon (2 mL) freshly cracked black pepper, plus more for seasoning
  • 2 teaspoons (10mL) nutritional yeast
  • 1 pound (450g) oyster mushrooms, trimmed and separated
  • 1 tablespoon (15mL) fresh thyme leaves

Tips:

  1. If you are not following a low- FODMAP diet, I highly recommend making this dish with chickpea pasta to provide extra fibre and enough protein to make it a more complete meal.
  2. You cannot substitute olive oil in this recipe. The sauce has such a delicate flavour that any bitter notes in olive oil will throw it off.
  3. FODMAP Note: Most mushrooms are high-FODMAP, but oyster mushrooms are the exception. If oyster mushrooms are not available and you are following a low-FODMAP diet, do not substitute regular mushrooms. Instead, sauté some kale or another low-FODMAP vegetable to accompany the dish.

Directions:

  1. Bring a large pot of water to a boil. Cook the pasta according to package directions. Drain in a colander, reserving at least ¼ cup (60 mL) of the cooking liquid. Rinse the pasta under cool running water. Return the pasta to the pot off the heat.
  2. Heat a medium skillet over medium heat. When hot, reduce the heat to medium-low and add the pine nuts. Toast, stirring often, until the pine nuts are fragrant and golden, 2 to 3 minutes. Transfer the pine nuts to a small food processor (or bullet blender).
  3. In the same skillet, heat 1 tablespoon (15 mL) of the avocado oil over medium heat. Add the zucchini and cook, stirring occasionally, until softened, 6 to 7 minutes. If the zucchini is browning too quickly, reduce the heat to medium-low. You want the zucchini soft and golden, not crispy and brown. Season with ¼ teaspoon (1 mL) of the salt and some pepper. Transfer the zucchini into the food processor with the pine nuts. Wipe the pan clean.
  4. To the food processor, add 2 tablespoons (30 mL) of the avocado oil, nutritional yeast, the remaining ½ teaspoon (2 mL) salt, and the pepper. Blend until smooth. It will be very thick at this point. Set aside.
  5. In the same skillet, heat the remaining 2 tablespoons (30 mL) avocado oil over medium-high heat. Add the mushrooms and fry, shaking the pan occasionally so they don’t stick, until golden brown and almost crisp on one side, about 4 minutes. Turn the mushrooms over and fry for 2 minutes more until golden brown. Sprinkle with a generous pinch of salt, more pepper, and the thyme.
  6. Add 2 tablespoons (30 mL) of the reserved pasta cooking liquid to the sauce. Mix together to loosen up the sauce. (I like to blend with an immersion blender.) Toss the sauce with the pasta. If the sauce looks too thick, add more pasta cooking liquid, 1 tablespoon (15 mL) at a time, tossing after each addition, until the sauce coats the pasta well but is not runny. To serve, divide the pasta among shallow bowls and top with the mushrooms.

Red Wine Pear Cake With Chocolate Ganache

Ingredients:

Pears

  • 3-4 firm Bosc pears
  • 1 cup water
  • 1 1/2 cups red wine
  • 1 teaspoon cinnamon
  • 3-4 whole cloves or 1/4 teaspoon ground cloves

Cake

  • 2 eggs
  • 1/2 full-fat coconut milk
  • 1 teaspoon apple cider vinegar
  • 11 tablespoons unsalted butter
  • 1 1/2 cups coconut sugar
  • 1/2 cup red wine
  • 1/2 teaspoon pink salt
  • 1/2 cup 85% dark chocolate chips or bar broken into small pieces
  • 1 tablespoon vanilla extract
  • 1/2 cup cocoa powder
  • 1 cup gluten-free or regular all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Ganache

  • 2/3 cup dark chocolate chips
  • 1/3 cup full-fat coconut milk or heavy whipping cream
  • 2 tablespoons reserved spiced wine (see recipe notes)

Directions:

  1. Peel the skin off the pears and remove the stems, seeds, and core. Slice in half. Add water, red wine, cinnamon, and cloves into a saucepan and place the pears in the liquid. Bring the wine mixture to a boil, then reduce to a simmer. Let simmer for 20 minutes, until the pears are tender. Remove the pears from red wine and let cool. Continue simmering until sauce is reduced, and reserve 2 tablespoons for the chocolate ganache.
  2. Preheat oven to 350 degrees F.
  3. Grease two 9-inch springform cake pans with butter or oil and set aside.
  4. Whisk two eggs in a separate bowl and set aside.
  5. In a small bowl, add the coconut milk and apple cider vinegar and whisk thoroughly. Let sit for at least 5 minutes.
  6. In a separate saucepan, melt butter over low heat. Whisk in the coconut sugar then remove from heat and add in the red wine and salt until well mixed. Quickly add in the dark chocolate pieces and stir constantly until the chocolate is melted. Pour the vanilla extract in and whisk again.
  7. Add about one third of the chocolate mixture to the whisked eggs. Mix thoroughly and then pour back into a mixing bowl with the rest of the chocolate mixture.
  8. Add in coconut milk mixture, cocoa powder, flour, baking powder, and baking soda, and mix until well combined.
  9. Pour the cake batter into two greased cake pans.
  10. Slice wine-poached pear halves in quarters and place in your desired design on top of the cake batter in the cake pans.
  11. Bake the cakes for 20-30 minutes.
  12. While cakes are baking, add the dark chocolate and coconut milk or heavy cream to a small saucepan. Heat on low until the chocolate is melted, whisking so that it is well mixed. Add in the reserved wine sauce and whisk again. Remove from heat and set aside.
  13. Remove the cakes from the oven and let them cool completely before removing them from the springform pans. Place one cake on a cake platter or stand, and drizzle some chocolate ganache on top. Then place the second cake on top of the first and pour the remaining chocolate ganache over the top.

So when it was announced that Amazon was developing a Fourth Wing TV show inspired by Rebecca Yarros' viral book series, fans immediately started talking about who should play Violet, Xaden, and the rest of the characters. Especially since we’ve all been imagining them for so long!

Well there are two actors at the top of the rumor mill for this TV show — and I am crossing all my fingers and toes we see them in the series.

Did the 'Fourth Wing' TV show already find its Xaden?

The biggest Fourth Wing casting rumor at the moment is that we could see Josh Heuston as dragon rider Xaden Riorson. The Australian actor is known for roles in Heartbreak High and Dune: Prophecy. Elle points out that not only does Josh follow Rebecca Yarros and Michael B. Jordan (who's producing the series) on Instagram, he also has a dragon in his bio!

"We’re just going to say [Xaden] is POC," Rebecca said in an interview with Variety. "I want to make sure that role is open to as much diversity as possible. So I was never going to give the readers my vision because I know that once you give the readers your vision, that’s what they’re gonna stick to. And I wanted to make sure we left it open to as much diversity as possible."

There's also one 'Twilight' actress fans would love to see as Violet.

Plus I can't pass up the opportunity to mention that Elle also points out Twilight's Mackenzie Foy (who played Renesmee in the franchise) also follows Rebecca Yarros — and she posted Onyx Storm to her Instagram story! She also matches Violet's description perfectly.

"Best fancast I've seen so far..." one TikTok user commented on our TikTok, while another added, "You know what, I’m not mad at it! I’m actually loving this combo!!" I couldn't agree more.

While we haven't gotten an official cast confirmation quite yet, we do know that Anne With An E's Moira Walley-Beckett is serving as showrunner — and that Rebecca Yarros is just as excited as we are to see who fills the cast list.

"I’ve never done this before, so I don’t have an opinion on if [the cast] should be established or if they shouldn’t, or what attention that brings," she tells Variety. "I’m going to trust that they bring in the right people when they start casting. And then I’m gonna hope that they fit who’s described in the book, and I think we’ll know when we know. But I honestly don’t have a preference, just whoever can fit the character."
