You’ll Never Guess What This Healthy Alfredo Sauce Is Made Of

Alfredo pasta is one of the easiest dishes you can cook at home (almost as easy as these copycat burger recipes). It normally takes less than 15 minutes to make and only requires a few ingredients. While cooking this all-time favorite is always a good idea, buying pasta sauce from the jar really isn’t. Ready-made sauce usually comes with loads of unnecessary sugar. Even though ready-made sauce is the easiest option, creating your own homemade pasta sauce doesn’t have to be hard. That’s where this delicious Alfredo concoction comes in. Cauliflower Alfredo sauce is a great way to have your favorite comfort food without feeling like going into a coma after eating it. It’s healthy, delicious and doesn’t take long to make. So instead of reaching for that jar at the grocery store, make your pasta come to life with your very own sauce. Enjoy the healthy pasta recipe below.

Ingredients:
— 5-6 cups cauliflower florets

— 2 Tablespoons butter

— 2 teaspoon minced garlic

— 1 teaspoon salt

— 1/2 teaspoon pepper

— 1/2 cup milk

— 1/2 cup grated parmesan cheese (optional)

Instructions:

1. Bring a pot of water to a boil and add the cauliflower florets to the water. Let it cook for about 7-10 minutes.

2. In a skillet over low heat, add the butter and garlic. Cook until the garlic has a sweet smell, not browned (usually around 30 seconds).

3. Once the cauliflower is cooked, transfer it over to a blender. Add one cup of the water from the pot, milk, garlic, salt and pepper, and blend for a few minutes until it is completely smooth. Add more liquid if you would like the sauce to be thinner.

4. If you would like to add cheese, transfer the sauce back into the saucepan and grate Parmesan cheese into the sauce. Mix together until it’s completely melted.

Twohy’s been a TJ’s fan ever since she was little, where she remembers joining her mom on grocery trips to the very first Trader Joe’s store in Pasadena, California. Since then, her love for the Trader Joe’s ‘treasure hunt’ (AKA finding fun, new products to try) hasn’t wavered.

In developing The I Love Trader Joe's Cookbook: 15th Anniversary Edition, Twohy said crafting the collection of 150 recipes took years.

“Many were tested and debuted when I had a cooking school in CA,” she said. “Now that I live 3 hours round-trip from the closest Trader Joe's, the drive can take longer than the recipe testing! I don't pay much attention to the clock when honing a recipe, because it's so much fun.”

When asked about her favorite items to pick up from TJ’s Twohy was quick to give her best recommendations! Some of her go-to’s include: puff pastry, fennel, the Umami Seasoning Blend, the Corn and Chile Tomato-less Salsa, frozen garlic cubes, creme fraiche, and 10 Minute Farro – and, of course, the entire cheese section.

“If you are a ‘can of this, package of that’ sort of cook, TJ's products are great because they don't use artificial colors, preservatives and all that stuff,” Twohy offered. “Not only [are they] time saving, but good for you, too.”

We were lucky enough to get a peek at some recipes from Twohy’s cookbook: One-Pot Pesto Pasta, Potatoes, and Green Beans and Linguini with Leeks, Shrimp, and Arugula. Scroll on for the deets!

Recipe: One-Pot Pesto Pasta, Potatoes, and Green Beans

"The first time I heard of this classic Ligurian dish, I thought it sounded so strange," Twohy writes. "Talk about carb overload! But the flavors, textures, and colors couldn’t be more perfectly paired, and you’ll be converted to the pasta-and-potato combination with the first bite."

Ingredients:

  • 1 large boiling potato (or two small ones)
  • 1/2 pound green beans, trimmed and cut into 3-inch lengths
  • 1/2 (16-ounce) bag thin pasta, such as capellini or spaghetti
  • 1/2 cup Trader Joe’s Pesto alla Genovese (in the refrigerated section)
  • 2 ounces Trader Joe’s Chevre Goat Cheese, softened
  • Salt and pepper

Directions:

  1. Bring a large pot of salted water to a boil. Meanwhile, scrub the potato and cut into 1-inch cubes. Place the potato cubes in the boiling water and cook until barely tender, about 7 minutes. Scoop the potatoes out of the water with a slotted spoon and set aside.
  2. Add the green beans to the same water and cook until just tender, 5 to 6 minutes. Remove with a slotted spoon and add to the potatoes.
  3. In the same water, cook the pasta until tender. When you drain the pasta, reserve 1⁄2 cup of the cooking water.
  4. In the pasta pot, combine the pesto, goat cheese, and 1⁄4 cup of the water, then add the cooked pasta and toss. Add the potatoes and green beans.
  5. If a saucier consistency is desired, add a bit more of the reserved pasta water. Adjust seasonings to taste with salt and pepper.

Recipe: Linguini with Leeks, Shrimp, and Arugula

"I’m a sucker for the pink-and-green look of this dish," Twohy writes. "The leeks, arugula, and shrimp get all tangled up in the long pasta strands, and the grated Parmesan provides a nutty saltiness I just love."

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 leeks, cleaned and thinly sliced
  • 2 cubes frozen crushed garlic
  • 1/2 cup vegetable broth
  • 1/2 pound medium shrimp, peeled and deveined
  • 1 (16-ounce) bag linguini (or another long pasta), cooked and drained
  • A handful of arugula
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper

Directions:

  1. In a medium sauté pan, heat the olive oil and butter. Sauté the leeks over medium-high heat until tender, about 5 minutes.
  2. Add the garlic and sauté 1 to 2 minutes, until fragrant.
  3. Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 5 minutes, until the sauce is slightly reduced.
  4. Add the shrimp and cook for 3 to 4 minutes, until pink.
  5. Toss the leek-shrimp mixture with the cooked pasta. Add the arugula and toss.
  6. Add the grated Parmesan, toss, and adjust seasonings to taste with salt and pepper.

Bonus Recipe: Buffalo Chicken Wrap ​from Half Baked Harvest!

As a bonus, we're throwing in one of our favorite easy and healthy wrap recipes that pushed all the right buttons on flavor. You'll combine shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, fold them up in wraps, then pan-fry until warm and crispy!

These easy wraps, made by Half Baked Harvest, come together in mere minutes. They're crunchy on the outside, cheesy on the inside. Serve with the deliciously creamy jalapeño lime ranch and additional buffalo sauce! These healthy wraps are great for both lunch and dinner, but equally fun for a game night, too!

First things first: start with the buffalo chicken. Shred up a couple of chicken breasts and toss them with homemade buffalo sauce, Greek yogurt (for creaminess), and fresh herbs. Most buffalo chicken fillings are made with cream cheese, but you can swap in yogurt for a healthier choice.

Ingredients:

  • 1 cup cooked shredded chicken
  • 1/4 cup plain greek yogurt
  • 1/3 cup buffalo sauce
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 4 large (burrito size) whole wheat or gluten-free tortillas
  • 2 cups shredded romaine lettuce
  • 1-2 jalapeños or poblano peppers, chopped
  • 3 green onions, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • Olive oil, for cooking

Ingredients for jalapeño ranch:

  • 1 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños chopped + 2 tablespoons brine
  • Juice from 1 lime
  • 1 teaspoon kosher salt

To assemble:

Make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry. So you've got...

  • One-quarter of buffalo chicken
  • Another quarter wrap of greens n' things
  • A quarter full of ranch
  • And finally a quarter full of cheese
  • Fold it all up into one triangle

Instructions:

  1. In a bowl, combine the chicken, yogurt, buffalo sauce, chives, parsley, and dill.
  2. To make the ranch. Combine all ingredients in a bowl.
  3. To assemble, cut down from the center of the tortilla to the edge. Spread the chicken in the bottom left corner, then add a handful of the lettuce, jalapeño/poblano pepper, and green onions on the top left corner. Spread the ranch on the top right corner, and the cheese on the bottom right corner. Fold the buffalo chicken over the lettuce. Then, working clock-wise, folding that quarter over the ranch. And finally, fold that quarter over the cheese.
  4. Heat a drizzle of olive oil in a skillet, add 1 wrap and cook 2-3 minutes per side until crisp and golden brown. Serve warm with extra buffalo sauce, ranch, and lettuce.
