Caviar is having a moment right now. If it sounds crazy, that's because it kind of is. Caviar seemed a distant bite reserved for the elite, so why have heralded fish eggs have crept their way into the culinary mainstream?

As we reluctantly crawled out of our peaceful dwellings post-pandemic, we craved for those long, flashy, chaotic nights out. What happened to the bougie girl that blew hundreds onfancy cocktails in a single outing? We wanted her back in all her That's Hot glory.

So while indulging in caviar may seem a little extra, we think your inner party girl deserves it. And surprisingly, the fish eggs aren't as lavish as you may think. You can order anything from a casual snack like HŪSO’s caviar hot dog, to more delicately plated dishes a la The Menu. Caviar is truly that girl, and restaurants are taking note to serve this high-dollar ingredient in more affordable ways than ever. Don’t get it twisted – you may still dish out upwards of $50 for a caviar-covered meal or drink, but hey, it’s time to treat yo’ self.

What is caviar?

Caviar at its core is unfertilized, salt-cured eggs from female sturgeon fish. It was first popular in Russia, and soon became a renowned European delicacy. Caviar tastes overwhelmingly salty, fishy, and briny. The texture is appealing to connoisseurs and newbies alike – the roe satisfyingly pops in your mouth when eaten. Though more widely available in recent times, caviar is still considered a gourmet food. It's been long associated with wealth and opulence due to a hefty price tag.

Why is caviar so expensive?

Caviar typically costs significantly more than your average can of tuna due to the process it takes to farm it. Prices depend on companies' harvesting processes, fish rarity, production times, and shipping. Higher-end caviars are more aged and have richer flavors, while lower quality caviars are younger and carry a less fishy taste. Caviar is like wine, in the way you can get hyper-technical and uppity about where it's sourced, and its flavor notes and textures.

How do I eat caviar?

Caviar is traditionally served in small quantities, typically less than a tablespoon. According to connoisseurs, it's best enjoyed alone so you get the raw, unmasked flavor of the eggs. See also: caviar "bumps" – when a serving of roe is enjoyed off the back of the hand like salt after a tequila shot. The ritual is a new and novel way to consume the salty treat that's spread its way throughout the high-end culinary mainstream.

If doing a literal shot of caviar is not at all appealing, traditional pairings also include Russian blinis, plain crackers or breads, bagel and lox, and hard boiled eggs. It’s meant to be served chilled between 26-34 degrees Fahrenheit, if you want to get technical.

Caviar can cost from tens to thousands of dollars, depending on where it comes from, the amount you desire, and how it’s processed. The more extensive the farming process, the more you'll pay for caviar. Thanks to streamlined farming practices, the briny treat has become a lot more accessible than it had been in the past.

The rising popularity of caviar has also facilitated more sales. When patrons at casual restaurants like NYC's Tokyo Record Bar see that they can add on a serving of roe to their meal for $20, the financial barrier that once stood between them and the delicacy slowly crumbles. The opulence and ritualistic nature of eating caviar drowns consumer in an element of exclusivity, too. Caviar culture is birthed from a classic peer-pressure case: "Hey, if everyone's doing caviar, maybe I should too!"

Is caviar healthy?

Caviar is super healthy. It is full of Omega 3 fatty acids that protect you from heart disease, selenium that supports thyroid function, and B12 vitamins that boost energy. The benefits of caviar altogether support reproductive health and mental health.

Is caviar ethical?

Ethics are foggy in the world of caviar. The traditional, longtime practice to harvest caviar requires that the sturgeon fish be killed in order to get her eggs. This is still the case in many harvesting techniques, in order to preserve the quality of the product. Luckily , parts of the industry have moved away from the sea and are now focused on using domestically farmed fish for caviar. Farmed sturgeons are being used for the practice, instead of wild fish. Now, there are no-kill harvesting methods that utilize C-section or milking techniques. It's important to recognize the processes behind caviar, and to stay informed about harvesting practices.

The Non-Bougie Approach to Caviar

This seemingly high-strung delicacy has been casual-ified many times over. Chefs have brought caviar to finger foods like French fries, scrambled eggs, onion rings, and more. You no longer have to abide by the bougie guidelines to eating caviar – if it tastes good, and looks good, it's good. Implement the roe into your own recipes for a boost of elegance and just plain fun.

Yellowstone season 5B is here! Twisters might have been THE summer movie of 2024, but the western vibes aren't going away, even after the Glen Powell movie has left theaters. The second half of Yellowstone season 5 returned to Paramount November 10 and it did not disappoint. 16.4 million viewers tuned into the premiere over a variety of networks — making it the most-watched season premiere in the show's history.

And it's a major season for one very specific reason: Kevin Costner isn't returning as John Dutton. The star decided to exit the series after season 5's eighth episode premiered in January 2023, but as big of a change is this is, Costner is still an executive producer on the series, giving it a familiarity fans will appreciate.

What happened on the finale of Yellowstone?

Yellowstone season 5 had two major themes: save the ranch and avenge John Dutton's death. And the Yellowstone finale saw both of those things happen in their own way. Kayce sells the property to High Chief Thomas Rainwater at $1.25 an acre (the price when his ancestors took it) on two conditions: his family stays in their home, and the land will never be developed or sold to anyone else.

And after John's funeral (where Beth literally tells his casket she'll avenge him), Beth runs off to Jamie's house, gets into a brutal fight, and stabs him in the heart before moving to start a peaceful (?) new life in Dillon, Montana with Rip. I guess all's well that ends well?

Is this the last season of Yellowstone?

It's always hard to say goodbye to a beloved show, but despite reports that Yellowstone would end with season 5, it looks like we could be getting a Yellowstone season 6 after all. Deadline confirmed that negotiations are happening for a potential continuation, which would focus on Kelly Reilly's Beth and Cole Hauser's Rip.

Reilly told Entertainment Weekly ahead of the season 5 premiere that "Beth is more like a wild animal this season than ever. When I read the scripts, it made me think [that] she is, for the first time, maybe afraid she will lose it for [her dad]."

"It's dark, brutal and desperate stuff — gaining power, losing it, defending and fighting," she continues. "It's bloody and at times beautiful in how it breaks them into their core selves." The setup for a potential season 6 will totally depend on how season 5 ends — and how it affects Beth, Rip, and the rest of the family.

Is Kevin Costner in Yellowstone season 5 part 2?

No Kevin Costner is not in the second half of Yellowstone season 5, and we find out the fate of his character John Dutton immediately. When Beth and Kayce find John dead in the bathroom, Beth immediately suspects foul play and blames it on Jamie. Well, Kevin is finally speaking on his character's end, and told The Michael Smerconish Programon November 11 that he actually didn't know the show had premiered the night before.

“I’m going to be perfectly honest. I didn’t know it was actually airing last night,” he says. “That’s a swear-to-God moment. I’ve been seeing ads with my face all over the place and I’m thinking, ‘Gee, I’m not in that one.’ But I didn’t realize yesterday was the thing...I heard it’s a suicide, so that doesn’t make me want to rush to go see it.”

But even if Kevin isn't over the moon about watching his character die, he doesn't have any bad blood with the writers. “They’re pretty smart people,” he continues. “Maybe it’s a red herring. Who knows? They’re very good. And they’ll figure that out.”

Well, the actor told Entertainment Tonight that he STILL hasn't seen the season 5 premiere as of November 17. “I didn’t watch it, so I don’t really have any thoughts about it,” he said. Due to delays from the writer's strike, and a tug-of-war between Paramount saying Kevin couldn't film new episodes and Kevin saying creator Taylor Sheridan took too long to write the scripts, the actor chose to leave the series, reportedly in part to promote his Horizon movie franchise.

“I gave this thing five seasons,” the actor told The Hollywood Reporterthis summer. “I was really happy to do it. And I don’t need drama. So, let’s just take that drama away, let’s take the guessing [away]. The fans have been way too good to me. And my obligation is to go on and continue to make things that mean something to them.”

Every season has been gritty and powerful, and in the fifth season, we've seen John become Montana's governor and make Beth his chief of staff. Luke Grimes recently told Entertainment Weekly how pleased he is with the finale, and Kelly Reilly revealed creator Taylor Sheridan actually told her the ending to the series while they filmed season 1.

“I read the last episode the day before we started filming,” Luke says. “I couldn't be happier. I think it's a perfect ending for the show for every character. It's just a testament to what a good writer Taylor is, and it's a very, very profound, beautiful ending. I can't wait to sit down and watch it one day.”

Christmas cookie decorating is holiday tradition for us here at B+C, so we were so stoked to find this recipe for paleo cookies that adds a healthy twist to this classic holiday dessert. These sweet treats will shine among the rest of your Christmastime tablescape, and they are super easy to make. Plus, they'll pair well with just about any Christmas dessert. Just combine your paleo-friendly ingredients to prep the dough, let it sit overnight, then bake for ten minutes! The best part about this recipe is of course, all of the fun holiday-time shapes you can cut. Consider this recipe your go-to for healthy cookies, though, since you can make them year-round in any shape you like. Let's get to decorating!

Ingredients for Paleo Christmas Cookies

For the cookies:

  • 1/2 cup grass-fed salted butter, softened
  • 6 tablespoons raw honey
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda

For the frosting:

  • 6 tablespoons coconut butter or coconut manna
  • 1/4 cup cacao butter
  • 1-2 tablespoons honey
  • Plant-based food coloring
  • Vegetable-dyed sprinkles, for topping*
* Look for vegetable and fruit-dyed food coloring and sprinkles in natural grocery stores or online, and avoid artificial colors to keep these cookies Paleo friendly!

How to Make Paleo Christmas Cookies

  1. Add the softened butter and honey to a large mixing bowl. Cream the mixture together using a handheld mixer until it is smooth. Add in the eggs, vanilla extract, and almond extract and whisk until they are well combined. Pour in the almond flour, coconut flour, and baking soda, and continue mixing until the batter has come together smoothly.
  2. Separate the dough into two, and place each one on top of a piece of plastic wrap. Roll each dough into a ball, then flatten to a thick disk, cover completely with the plastic wrap, and place in the refrigerator to firm up for at least 2 hours or overnight.
  3. Preheat the oven to 350 degrees F. Remove one of the dough discs from the refrigerator, unwrap the plastic and place the dough on top of a piece of parchment paper, then top it with another piece of parchment paper. Use a roller to flatten out the dough to about 1/4 to 1/2 of an inch thick. Work quickly with your favorite Christmas cookie cutters, and use a thin spatula to lift the cut cookies onto a baking sheet lined with parchment paper.
  4. Bake the cookies in the oven for 10 minutes. Let them cool for a few minutes, then place on a wire rack for further cooling. Gather the leftover scraps back into a ball in the plastic wrap or parchment paper and place it back in the refrigerator, while working with the other piece of dough. Do this in batches to keep the dough from getting too warm and so you don’t overcrowd the baking sheet.
  5. While the batches of cookies are baking, use a small saucepan to lightly melt the coconut butter and cacao butter together over low heat on the stovetop. Remove the pan from the heat when the ingredients have just melted together. Stir in the desired amount of honey, then set aside to cool and thicken up slightly. If you are using food coloring, add in the desired amount into the frosting mixture (1-2 teaspoons of green or red should do the trick). If you plan on only using white frosting, only use a small amount of honey, as it can make the frosting an off-white or light brown color.
  6. After the cookies have completely cooled, decorate them with the frosting and sprinkles as desired. If you don’t have any professional piping tools, an easy fix is to place the frosting in a plastic sandwich bag and remove all the air when sealing the top. Cut a tiny tip off one corner of the plastic bag, then gently squeeze and pipe over the cookies. Use one plastic bag or piping bag for each color of frosting. Top with corresponding sprinkles and enjoy!
