How Two Friends Took a Risk and Launched a Trendy Vegetarian Taco Spot

Great business and innovative product ideas can strike anytime — even when you’re working full-time on something else. Bettina Stern, a former magazine editor, and Suzanne Simon, a former editor, and environmental consultant know this first-hand: After nine years of friendship, they ditched their day jobs to join forces and found ChaiaTacos, an adored all-veggie taco shop in Washington, DC. We recently talked with the dynamic duo to get tips for making a job change, their best advice for future founders, and how to stay inspired while pursuing a passion.

Brit + Co: You both had different career experiences before you came together to start Chaia’s Tacos; what was the most challenging part of joining forces to make a complete career change later in life?

Suzanne Simon: For me, the most challenging part of starting a new career later in life was (and still is) going back to that humbling feeling that you have no idea what you are doing.

Bettina Stern: I agree, for me, it was having zero clue how to do any of this — really. Becoming an entrepreneur, business owner, and leader has come with an incredibly steep learning curve. Leadership is the practice of a multitude of professional skills that take time to develop. I had to remember what I had to offer, which was the creativity, passion, energy, persuasiveness, and adaptability to hone those skills and to dig in.

B+C: What makes Chaia Tacos special? How did you know taking a risk to start the business was the right idea?

SS: What makes Chaia special is the authenticity and organic way this small idea turned into something big. We couldn’t know for sure that it was the right idea, but we knew it was the right time — people were craving more vegetables, farmers markets were growing in popularity, and we saw that really delicious food could be created quickly and casually with local and seasonal ingredients.

BS: Americans eat even less meat today; 2019 was declared to be “the year veganism goes mainstream” by the Economist and Forbes; fully one-quarter of 25 to 34-year-olds have declared to be vegans or vegetarians. Chaia is the only taco shop focused solely on vegetables. No meat. No processed food. No exceptions. At Chaia, vegetables are not an afterthought… they’re our only thought. Which is why we give vegetables all the love and attention they deserve.

We source and use the freshest, local (and whenever possible, organic) vegetables inventively prepared from scratch, and combined with spices, house-made salsas, and other tasty toppings — all tucked inside a handmade, griddled corn tortilla. We’ve kept our menu small and simple for a reason. Honestly, we all have enough choices to make in life already, and we want to do one thing really well.

B+C: Which tips do you share with people who dream about starting a business, being an entrepreneur, or making a job switch?

BS: Think big, be bold, and take risks. I love this quote from Frida Kahlo: “At the end of the day, we can do much more than we think we can.” I also suggest saying yes more often, looking at opportunities as options, and asking for help — nobody can do it alone. Last, get global. Open yourself up to new experiences, places, and people as much as you can.

SS: Be patient, because it takes time for new ideas to fully take hold and to discover new concepts. For us, it takes 6-8 months before we see any true consistency with our customers! A few other thoughts: Don’t be too busy. Enjoy your accomplishments as you go, especially in the early stages where it can be easy to focus on what’s going wrong instead of all the things that go right; creating something can be so much harder than you think. And network! It’s so important to do this as soon as you can because being an entrepreneur is all about building relationships and keeping in touch with people.

B+C: How can someone set themselves up for lifelong career success, or experiment with different kinds of work successfully over a long period of time?

BS: Be patient and hungry. Everything worthwhile takes a long time, and the longer it lasts. Set yourself up for success by investing your energy in a sustainable way. Set your sights on a long-term vision, and consistently work toward it.

SS: Do something that you genuinely like. If you can figure out what you enjoy and what you’re good at early on in your career, you’ll be in great shape to position yourself for long-term success.

B+C: How do you stay inspired at work during long days, challenging times, or when things seem like they’re smoothly humming along and the excitement is gone?

BS: You can stay inspired by being curious; challenge yourself to keep learning and growing. It’s crucial to regularly come up with new ideas and new ways of thinking — you’ll generate new experiences, opportunities, and uncover hidden gems.

SS: I stay inspired by drawing inspiration from others, like my partner and our team; I can’t imagine being an entrepreneur by myself. I love that together we try new things, and that push each other to grow.

B+C: Which skills do you believe are good for all careers? How can they help someone in a multitude of different roles or jobs?

SS: Hone your skill of self-awareness and learn how to be open to another point of view; it’s like stepping back to the distance and looking in on how you are handling or interpreting a conversation or situation. I think this is valuable because it forces you to not be so wrapped up in your thoughts.

BS: I recommend honing a few skills:

  • Communication: Developing strong communication skills is essential to being a really good leader and to grow a thriving, healthy company. These skills include empathy, eye contact, vulnerability, self-awareness, confidence, and good energy. Listen more and talk less — being an active listener encourages open communication with your colleagues, as well as with your friends and family members.
  • Adaptability: There’s power in being adaptable and listening to the needs of others. Developing your adaptability will allow you to have a deeper understanding of positions and behavioral styles. In turn, you’ll be better equipped to lead people! Leaders need to understand business issues from different perspectives.
  • Strategic Thinking: Strategic thinking is the ability to know what you want and how to achieve it. Learn how to imagine what the big picture is, identify an action plan for getting there, and then chart your course. Know your weaknesses too, because you’ll need to ask for help and advice from others. Work on being flexible so you can always shift gears mid-way when needed.

'Moana 2' Composers Barlow And Bear On Imposter Syndrome & Their Fave Disney Movies

TikTok sensations Barlow & Bear are no stranger to the spotlight. Besides the fact their Unofficial Bridgerton Musical won a Grammy (and basically broke the internet), popstar Abigail Barlow has millions of streams of her own, while Emily Bear performed in places like the White House and Carnegie Hall before turning 10.

So, it’s safe to say these two know what they’re doing. But one thing they never saw coming? Composing a Disney movie — or becoming the first female duo to do so. But that’s exactly what happened when they booked Moana 2.

How Barlow And Bear's Bond Influences Their Art

“We have such a sacred sisterhood!” Abigail tells me over email. “We met and found musical soulmates in one another. It’s more than just special. It’s a once in a lifetime connection that laid an incredibly strong foundation for creation.”

“Most of my life I’ve been the only girl in the room writing with much older people,” Emily adds. “Honestly because Abigail and I are like sisters, it creates such a safe place to be vulnerable together and create without restraint. When writing for Moana 2, we leaned on that emotional connection to explore the complexities of the story and how much we see ourselves in Moana!”

And the empowering message of the film, which follows Moana’s journey through Oceania, actually influenced their art. “Every day that I worked on Moana, I was empowered to continuously choose who I wanted to be,” Abigail says. “A leader, a listener, and a learner. In being tasked to write for this movie, I was being asked to go past my comfort zones. I think by being completely open hearted to this experience, it allowed me clarity when crafting the lyric and melody with Emily.”

“Moana 2 is a story about finding strength through vulnerability, and that message became a huge theme in the music,” Emily says. “All our characters’ journeys reminded us to embrace our imperfections and trust the process of growth — no matter how painful it may seem in the moment. Moana is THAT girl. No one defines her but herself and writing for such an inspiring heroine FOR SURE inspired us right back.”

Why Abigail Barlow And Emily Bear Loved Working On 'Moana 2'

But considering the fact these two women are huge Disney fans (Abigail tells me her favorite Disney movies are The Little Mermaid and Frozen, while Emily loves Hercules and Mulan), one of the most inspiring details about their involvement is the fact that Abigail Barlow and Emily Bear’s Moana 2 score marks the first time a female duo has composed a Disney movie — and it’s a moment they don’t take for granted.

“I hope this shows [young girls] that their voices matter,” Emily says. “Growing up, I barely saw people who looked like me in roles like this, so being here now feels surreal. I want girls and women to know that their stories are powerful and deserve to be told. I really hope that Abigail and I can continue to open doors for more female creatives in film and music.”

And Abigail agrees. “I hope our story encourages young girls and women to forge their own path, and to never let anyone tell them they can’t do something.”

But this unbelievable experience didn’t come without its challenges. “Imposter syndrome is so real and a part of life for every single creative, and anyone who tells you otherwise is lying,” Emily says.

“I’m just trying to enjoy the ride, trust the fall, and be so grateful for the opportunity to be a role model for any little girl who might have a song in her heart,” Abigail says. “It’s an absolute honor and privilege to show her that anything — even magic — is possible.”

And according to Emily, the challenge of imposter syndrome actually propels her forward. “I do feel like that little voice of self-doubt pushes me to do the best work I possibly can do…I zoom out and focus on the bigger picture: the little girls watching this movie and realizing they, too, can dream as big as they want.”

How Lin Manuel-Miranda Empowered Barlow And Bear

One friendly face that provided a soft place to land was actually the original movie’s composer, Lin Manuel-Miranda! To no one’s surprise, theIn The Heights and Hamilton writer had some wonderful advice for Barlow and Bear.

“He was such a wonderful resource especially at the inception of the project when we were just setting sail,” Emily jokes. “He urged us to lean into our heroes for inspiration!”

“He gave me a stack of books I needed to buy,” Abigail adds. “Finishing the Hat by Stephen Sondheim, LYRICS by Oscar Hammerstein, Lyrics on Several Occasions by Ira Gershwin to name a few. He empowered me to study the craft of musical theatre storytelling in a way I never had before.”

And thanks to Barlow and Bear, a whole new generation of young women will dream about musical theatre storytelling now too!

'Wicked' Star Michelle Yeoh On Pranking Ariana Grande & Singing With Cynthia Erivo — Exclusive

"I was terrified," she exclusively reveals to Brit + Co. "First of all, you know, singing in a room with your coach, singing in the recording studio, it's okay because it's very few people and it's you, and it's in a contained area, but that scene had so many people around and you know, and there you have the singing legend Cynthia [Erivo]."

"She was like my rock," Michelle says of the movie's leading lady. "She just looked at me, held my hands and she said, 'I know you can do this because I've heard you, so just sing, just go for it and have fun.' And you know when you have a dear friend who has confidence in you? It just like gives you that extra [push], and I did and I had fun. So that was all in all a good day."

It's no surprise on a movie set with so many musical geniuses — Cynthia Erivo, Ariana Grande, Ethan Slater, Jonathan Bailey — that the cast would break into song between takes. "I was, like, in a rock concert the whole time," Michelle says. "I was just sitting back and watching them and they are like little angels singing. They have such incredible voices."

When we meet Michelle Yeoh's character Madame Morrible, she becomes an integral part of both Glinda and Elphaba's lives as a professor and a mentor. And for Michelle, working with Ariana and Cynthia was an "incredible opportunity."

"It was really truly magical in that sense to be surrounded by that kind of kinship and love," she says. "That was very, very special indeed. Ariana is young and she's so eager, and so loving and lovely at the same time. And so working with her — Jon and I sometimes would play tricks on her. He'll come up to me and say, 'can you just scare the h—ll out of Ariana?' And I'm like, 'No,' he said, 'Please, it will be so fun.' And it was! I mean, I scared her so bad her eye lens popped out. We are so naughty."

"And then with Cynthia, she's a pro, come on!" Michelle continues. "She's an Academy nominee, he's a [Tony] winner. She's everything, but at the same time so grounded. And when you work with people like that who is passionate, who is because they only make you better, we only try to make each other better, and that is the true experience of an amazing storyteller. It was fantastic, and having Jon around again was wonderful."

In our final moments together I can't help but point out how the film makes room for every kind of woman, and how it'll make every viewer feel more powerful when the credits roll. "I think the most amazing thing, it's like you can be whatever you want to be, and believe that people will accept you for who and what you are," Michelle says. "I think that's the most important thing.

I think the very diverse cast makes a big difference because you know, you have a Madame Morrible who's Asian looking, then you have an Elphaba who's green, but more than green. So I think that the coming together of this cast and particularly at this time — why did they hold out for 20 years before they brought it to a cinematic experience? I think there are very good reasons for that."
