Sausage rolls are the ultimate British party food. They never go out of fashion, they’re always the first to go at any party and everyone can always manage just one more. As good as the classic British sausage roll is, we decided to give it a bit of a facelift with the addition of jalapeños and parmesan. That hint of cheesiness and hit of chili heat is so good you might just be able to manage three, four or five more!
Ingredients:
Makes 28-30 small sausage rolls
– 14-ounce pack ready-rolled puff pastry
– 5 thick, good quality sausages
– 3 jalapeños
– 1/2 cup finely shredded parmesan
– 1 egg
Directions:
- Preheat the oven to 400 degrees Fahrenheit/200 degrees Celsius. Chop one of the jalapeños into very small pieces and slice the other two into small slices. Set aside.
- Unroll the pastry and cut lengthwise into two equal-size strips.
- Remove the skin from the sausages and place 2 1/2 sausages lengthwise along the middle of one of the pastry strips. You may need to roll the sausages slightly to make them longer and thinner so they reach the ends of the pastry. Repeat with the remaining sausage and pastry.
- Sprinkle the chopped jalapeños and then the shredded parmesan over the sausage meat.
- Whisk the egg lightly in a small bowl, and brush the top length of each piece of pastry with the egg.
- Starting from the bottom, roll the sausage rolls up tightly so you have two long rolls. Turn the rolls over and press the seams shut using a fork, then turn over again and brush the top of the rolls with more egg wash.
- Slice the rolls into small slices — about 14-15 slices per roll. Then pierce each sausage roll with a fork. Place on one large or two medium baking trays, ensuring there is a little space around each sausage roll, as they will expand.
- Place in the oven and cook for 13 minutes.
- While the sausage rolls are cooking, pour the remaining egg wash out onto a plate and layer the jalapeños on the egg wash.
- Take the sausage rolls out of the oven and place a slice of jalapeño on top of each sausage roll, egg wash side down (using the egg wash like glue). Place back in the oven for 2-3 further minutes.
- Take out of the oven and allow to cool before using a sharp spatula to remove the sausage rolls from the tray. Using the sharp spatula will help if any of the sausage rolls stick to the tray. Serve warm, or allow to cool before serving.

Pro tip: Cooled sausage rolls can be placed in an airtight container in the fridge and eaten the next day.
