Celebrate St. Patrick’s Day With This Cheesy Shepherd’s Pie Recipe

St. Patrick’s Day is quickly approaching (is it really March already?!), and what’s the only thing better than baking a pie to celebrate? Baking a pie within a pie! This cheesy shepherd’s pie pie (no, that’s not a typo!) is a tasty mash-topped shepherd’s pie, all encased in a crispy pastry crust (with a bit of extra cheese on top for good measure). I used a simple lentil-based filling, making this vegetarian shepherd’s pie super hearty and filling. It’s so good with gravy and extra veggies on the side.

Ingredients:

  • 1 roll shortcrust pastry
  • 1 Tablespoon oil
  • 1 onion, diced
  • 1 large carrot, diced
  • 3 medium mushrooms, diced
  • 1 cup peas and / or sweet corn (I used frozen)
  • 1 1/3 cups cooked puy lentils
  • 4 medium potatoes, cut into chunks
  • 3 Tablespoons milk
  • 1 cup grated cheddar cheese
  • salt
  • black pepper

Instructions:

1. Preheat the oven to 375 degrees Fahrenheit. Lightly grease a deep baking dish, and lay a sheet of shortcrust pastry over the top. Carefully press the pastry down to the corners of the dish and trim any excess. Prick the base several times with a fork and blind bake for around 20 minutes, until the pastry is crispy and golden brown.

2. While the pastry is blind baking, prepare the shepherd’s pie filling. Heat a dash of oil in a frying pan, and add the diced onion, carrot, mushrooms, frozen peas, and sweet corn. Cook over a medium heat for 5-10 minutes, until the vegetables are soft.

3. Add the puy lentils and mix to combine. At this point, you can also add any other flavorings that you fancy, e.g. a squeeze of ketchup, dash of Worcestershire sauce, some dried herbs or spices, etc.

4. Boil the chunks of potato until completely soft and mash thoroughly. Add a dash of milk and about 2/3 of the grated cheese (just hold a little back for topping). Season generously with salt and pepper, and mash well until it’s creamy.

5. When the pastry is golden brown and crispy, add the lentil mixture and top with the mashed potato.

6. Top with the remaining grated cheese.

7. Bake for about 30 minutes longer, until the cheese is golden brown and crispy.

You can use alternative veggies if you feel like it — celery, garlic, peppers, whatever you have on hand. Shepherd’s pie is a great way to clear the fridge!

Add the puy lentils and mix to combine. At this point, you can also add any other flavorings that you fancy, e.g. a squeeze of ketchup, dash of Worcestershire sauce, some dried herbs or spices, etc. Make it your own! Just make sure the mixture doesn’t become too wet, or you may end up with soggy pastry.

Boil the chunks of potato until completely soft, and mash thoroughly. Add a dash of milk and about 2/3 of the grated cheese (just hold a little back for topping). Season generously with salt and pepper and mash well until it’s creamy.

I love skin-on mash, so I left the skins on mine, but you can peel your potatoes first if you prefer.

When the pastry is golden brown and crispy, add the lentil mixture and top with the mashed potato.

Top with the remaining grated cheese.

Bake for about 30 minutes longer, until the cheese is golden brown and crispy. Serve hot, topped with some fresh parsley, if desired.

Shepherd’s pie is always the most amazing comfort food, but add a crispy pastry crust and that beautiful cheesy topping, and it’s taken to the next level! All you need is a few veggies on the side and some gravy for pouring over the top, and you have a super hearty dinner.

When St. Patrick's Day rolls around, coffee enthusiasts and cocktail connoisseurs gather 'round one of the most popular St. Paddy's drinks: Irish coffee! Made with piping-hot coffee, a shot (or two) of Irish whiskey, sugar, and fresh cream, Irish coffee makes for one totally irresistible coffee cocktail.

Grab your favorite mug and whip out the whiskey to create our easy Irish coffee recipe – it comes together in just a few minutes! We're spilling all the need-to-know secrets to crafting the perfect Irish coffee, from selecting the finest ingredients to mastering that signature whipped cream topping.

Irish coffee is guaranteed to warm both your heart and soul for the lucky holiday and beyond. Let's get into it!

What is the difference between Baileys coffee and Irish coffee?

Photo by Jill Wellington / PEXELS

The most obvious difference between Baileys coffee and Irish coffee is that Baileys coffee uses Baileys Irish Cream to make the recipe, whereas Irish coffee is made using whiskey and brown sugar. Both drinks use hot coffee as the base and are garnished with fresh whipped cream.

Because of this, Baileys coffee is a bit creamier and milkier than traditional Irish coffee.

How much alcohol is in an Irish coffee?

Photo by Maria Orlova / PEXELS

The standard recipe for Irish coffee calls for 1.5 ounces of Irish whiskey, which equates to one shot. You can always customize the ratio, though, adding less or more whiskey as you please.

Can you order Irish coffee at a bar?

Photo by Andrew Neel / PEXELS

You can order Irish coffee at a bar as long as the bar is equipped to brew coffee and has all the ingredients on-hand. Most bars you visit might not have a full coffee bar, so it really depends. Baileys coffee is super similar to Irish coffee, and might be easier for bartenders to make for you since Baileys is more common.

Is Irish coffee a thing in Ireland?

Photo by Mathias Reding / PEXELS

Yes, Irish coffee actually originated in Ireland and it's a fairly common bar order there. While it may not be as popular as Guinness, most bars in Ireland are prepped to serve Irish coffee at any time. Irish coffee is particularly frequented more on special occasions, holidays, and cold days.

Ingredients

Serves 1

  • 1 cup hot coffee
  • 1-2 shots Irish whiskey (depending on how boozy you want it!)
  • 2 teaspoons brown sugar (you can also adjust this amount based on your preference for sweetness)
  • Freshly whipped cream
  • Cinnamon or cocoa powder, optional for garnish

StableDiffusion

Directions

  1. Brew a hot cup of coffee how you like it. Just make sure it's fresh for optimal flavor and authenticity!
  2. In a mug, add the brown sugar and hot coffee, stirring until dissolved. Make sure you leave a little bit of room at the top for the booze!
  3. Next, add the Irish whiskey to the mug. Stir.
  4. To make the whipped cream, vigorously whisk a small amount of heavy whipping cream in a separate mug or bowl. You could use store-bought whipped cream, but it just isn't the same as fresh whipped cream. This version is a lot thicker and tastes less processed in the end.
  5. Once whipped, spoon the whipped cream over the drink to create a solid layer over top of the mug.
  6. If preferred, garnish the Irish coffee with a dash of ground cinnamon or cocoa powder for extra flavor and immaculate presentation. For an extra special treat, pair your Irish coffee with ourSt. Patrick's Day Rainbow Donuts!

And just like that, it's time to celebrate St. Patrick’s Day once again, where rainbows are a staple and you’ll be sure to find a pot of gold at the end! 🍀 Rainbow food has yet to fade away any time soon, but what about turning your food into actual rainbows – clouds and all?

You’re definitely in luck (wink wink) for finding this rainbow donuts recipe now! Gear up for St. Paddy’s Day this year with a little sugary sweetness and tons of color with these rainbow donuts! Let's get into the recipe! 🌈

Ingredients for Rainbow Donuts

  • Plain glazed donuts
  • Rainbow sprinkles
  • Donut icing
  • Shredded coconut

Directions for Rainbow Donuts

  1. Cut your donuts in half using a sharp, serrated knife.
  2. Set your icing in a shallow dish. Dip the tops of each donut half into the icing.
  3. Starting with your pink (or red) sprinkles, line the outside edge of the donut, creating the first "arc" of the rainbow.
  4. Continue adding sprinkles in rainbow order until the whole donut is covered.
  5. Add a little more icing to the top of the donut ends and place a pinch of shredded coconut on top for the "clouds"!

Try to choose donuts that have a very round shape, so the rainbows turn out with more of an arc.

Be careful not to leave your donuts sitting for too long after you’ve iced them. You’ll need the icing to still be wet/tacky when you add the sprinkles so they stay on securely. Plus, you want 'em to look flawless for all the Instagram pics!

Avoid making your rows of sprinkles overly thick or else you won’t be able to fit in all of the colors of the rainbow. We need the full spectrum!

🎶 Somewhere over the rainbow… there are rainbow donuts! 🎶 These rainbow donuts will be a fun recipe to make with everyone in the family since you can use pre-made donuts – no oven required.

We don’t know about you, but we’re all set for St. Paddy’s Day now! If you're in search of more fun St. Patrick's Day recipes, check out our list of lucky green cocktails, festive green pasta recipes, and try your hand at these delicious dessert shots!

Our favorite dancing queens (Meryl Streep included) might be returning to the big screen for a third encore of Mamma Mia! and we’re already rewatching the first two movie musicals in preparation.

In an interview with Deadline in May of 2023, Mamma Mia! franchise creator and producer Judy Craymer said a third movie musical is in "earliest stages." She also shared that she has come up with a way to bring Meryl Streep back again.

"I don't want to over-egg it," she said of the unofficial news, "but I know there's a trilogy there…and I do think Meryl should come back, and if the script is right, she would, I think, because she really loved playing Donna."

"Of course I want to do it," Streep said during the 2024 Cannes Film Festival (via Deadline). Sounds promising to us!

Is Mamma Mia 3 happening?

Universal Pictures

Yes, Mamma Mia 3 is in its early planning stages! Christine Baranski just told The Hollywood Reporter that she's met with producer Judy Kramer, and that Kramer has plans for the third movie. "She gave me the narrative plotline of how it’s going to happen," Baranski says. "That’s all I can say! But, it’s not like, 'Oh, I wish it could happen!' Judy Kramer makes things happen. She made number two happen, and it was a phenomenal hit. I wouldn’t put it past Judy Kramer to get everybody back together."

Universal Pictures

A third installation was first mentioned way back in 2020, during a Collider interview with Mamma Mia! star Amanda Seyfried. Seyfried said she was on board — and at the time, she thought the rest of the star-studded cast would be too.

"Listen, every single person in that movie would say yes in a heartbeat because we want to hang out with each other," Seyfried told Collider at the time. "That's what we talked about last time, like did we ever think that we'd end up here again on an Island in Croatia?"

When will Mamma Mia 3 come out?

Universal Pictures

We don't have an official answer about when to expect this highly anticipated sequel. The project is in the "earliest stages," according to creator and producer, Judy Craymer. Cher also revealed to Entertainment Weekly that everyone is "talking about it," but she doesn't "know when they're going to do it."

Has casting information been shared about Mamma Mia 3?

Jonathan Prime/Universal Studios

While nothing's been made official, Amanda Seyfried just said something that made my heart skip a beat. She told ABC News she loves Sabrina Carpenter's music and dropped this admission: "If Sabrina Carpenter wants to play my daughter, I’ll make it happen."

But before she admitted that, the actress said something else that made me raise my eyebrows. "Everybody says it’s gonna happen, but I mean, I haven’t seen a script."

Cher is also eager to return to the beloved franchise and is rooting for Meryl to make an appearance again. "I keep saying, 'Meryl, you've got to come back,'" she said (via Entertainment Weekly). She also said she's told her, "'It'll be fun. You'll have a good time. You'll be able to sing.'"

I don't know what it'll take, but hope someone gets a script in Amanda Seyfried, Cher, and Meryl Streep's hands ASAP!

What is the first Mamma Mia about?

Universal Pictures

The first film follows Donna (Streep) and Sophie (Seyfried) as mother and daughter living on a remote Greek island. When Sophie is about to marry Sky (Dominic Cooper), she sets out to learn who her real father is after discovering it could be one of three men (played by Pierce Brosnan, Stellan Skarsgard, and Colin Firth).

Who does the second Mamma Mia follow?

Universal Pictures / NBCUniversal

Mamma Mia 2takes viewers back to 1979, where young Donna (Lily James) embarks on a series of adventures throughout Europe following her Oxford University graduation. On her journeys, she makes the acquaintances of Harry, Bill and Sam – the latter whom she falls in love with. In the present day, pregnant Sophie dreams of renovating a taverna while reuniting with her mother's old friends and boyfriends on a Greek island island.

TBH, we’re pretty happy that Mamma Mia! is far from over, and we can’t wait to see what the franchise has in store for us next. Stay updated on all the latest entertainment news with Brit + Co.

There's nothing ~normal~ about how much we love Normal People's Paul Mescal & Daisy Edgar-Jones. While it turns out we're not getting a Normal People season 2 (yet), the two actors are starring in some of 2024's biggest blockbusters (Twisters and Gladiator II, namely), and we've been soaking up their presences ever since.

Paul recently exhibited his ongoing friendship with Daisy at the Gladiator II premiere in Los Angeles. While he approached Brittany Broski on the red carpet for an interview, he recognized her from her recent 'Royal Court' interview with Daisy:

"You were with Daisy!" he chimed in excitingly. We just love this power duo!

Enda Bowe/Hulu

Daisy Edgar-Jones also revealed that she's remained incredibly close to Paul Mescal after their time on Hulu's Normal People. "Paul is one of my lifetime best friends," she says. "He’s an incredibly grounded person and I am too, I think, so it’s nice to be able to have those touchstones and those people you can laugh about it with and be lighthearted with. We met when I was 20 and Paul was 22; I’m so excited to see where we’ll be at 32, 42, and what life will bring us."

But the coolest thing is that not only is Normal People special for Paul and Daisy, but they've also been able to see the effect of the show on its fans.

"The thing I love people saying the most is, 'It made me contact my ex,'" Daisy continues. "Especially when much older people say, 'I just wanted to reach out to the person I was with when I was 17 just to say you were a big part of my history and thanks for being part of who I am, the tapestry of my life.' And that I really love, because I’m a massive romantic."

Daisy recently revealed they bonded over their training for Twisters and Gladiator II.

"I did running lessons — isn’t that crazy?" she told Variety. "Actually, Paul [Mescal] and I were laughing about it, because he was training for 'Gladiator II' and I was training for 'Twisters,' and obviously he had to be huge and I was like, 'Don’t worry, I’m going to be right up there with you.'"
