According to Food52, women (see: 17th century baddie Aphra Behn) were at the very forefront of clarified milk punch, the somewhat elusive yet fascinating element that’s used to make clarified cocktails. Popping up exponentially in boutique city bars, it’s time to face what a clarified cocktail *actually* is. Hint: it’s just like your favorite cocktail, except with a science-y twist. What is a clarified cocktail?

A clarified cocktail is the result you get from a bartending process called milk-washing.

Simply put, milk-washing is mixing your favorite high-acidity cocktail with full-fat cold milk, which (because science) curdles the milk. The filtered-out curdles absorb the bitterness and the acidic punch (caused by compounds called polyphenols) of the alcoholic mix. Instead, your drink is crisp and clear – literally.

Clarification reduces the, well, alcohol-y taste of cocktails for a more pleasant sipping experience. Sometimes it’s all about balancing out each flavor note in the glass, which is why bartenders love it – aside from its aesthetically-pleasing crystal-clear appearance.

What does a clarified cocktail taste like?

Abandon any expectations for a clarified cocktail to taste like the one you typically order. Clarification can really affect the flavors of spirits, for better or for worse. Lighter notes (like florals) may get lost in the sauce… erm, milk, but can create something magical. There’s still no denying that, asJoanna Carpenter for Food52 put it, clarified cocktails are “significantly boozy.”

What is the best way to clarify cocktails?

  • Use whole milk. For more technical reasons, use full-fat milks only. It’ll yield the clearest result, as the milk’s casein proteins bind better to the cocktail’s polyphenols. Sorry to all the plant-based milk stans.
  • Use *cold* milk. Some recipes for clarified cocktails call for warm milk, but most bartenders find using cold milk is more successful.
  • You’ll want or use an acidic cocktail. Think of using repelling liquids for making clarified cocktails – the acid from your cocktail mixture will repel the milk’s fatty proteins, resulting in a clearer drink. Hello, sours!
  • Let it sit. Approaching milk-washing with patience (simply letting the mixture sit overnight) will give it time to become more clarified, which is what you want for a smoother, more enjoyable cocktail.

How To: Milk-Washing + Clarified Cocktails

According to Diageo Bar Academy, there are a few different ways to clarify cocktails, but I’ll present the easiest method here.

  1. Prep a larger batch of your fave acidic cocktail (sours, margs, anything lemon-y or lime-y) in a pitcher.
  2. Using a 4:1 ratio of cocktail to cold whole milk, pour milk into a large bowl.
  3. Slowlyyyy pour the cocktail mixture into the bowl, over the milk.
  4. Stir gently, then let the combination sit at room temp for anywhere from 1 to 24 hours. You should see the milk curdling.
  5. When ready, filter the mixture into a bottle using a funnel and a fine coffee filter, colander, or metal strainer. Voila!

Get into the Thanksgiving spirit with these Spiced Cranberry Rosé Spritzers! Homemade spiced cranberry jam, woodsy rosemary, fruity rosé, sweet elderflower liquor, fresh citrus, and spicy ginger beer. Mix everything together to create a festive pitcher-style cocktail that's easy to create, refreshing, and delicious. Bonus: this drink can be made ahead of time for easy holiday entertaining, and the festive red color doubles as a gorgeous decor piece on any table!

And just like that, I'm in full on holiday mode. Can't help it, this time of year makes me so happy! And with Thanksgiving less than two weeks away it's hard not to be excited. Anyone else feeling the same?

We've been having the coziest weather up here in the mountains. It's inspired me to create recipes that will to warm us up from the inside out. That's honestly one of the cheesiest things I'll say, but it's the truth. I know it's hard to imagine a drink warming you up, especially one that's served over ice, but the spices in this wine spritzer do just that.

Half Baked Harvest

The key to this fun drink is the cranberry jam-syrup. It's actually kind of a mix between a jam and syrup. It uses fresh fruit like a jam would, but it's consistency is much more syrup like. So, it's kind of a cross between the two. Whatever you'd like to call it, it's a delicious mix of sweet honey, fresh tart cranberries, rosemary, and warming cardamom. The honey balances out the tart cranberries, while the rosemary and cardamon add coziness and warmth. Perfect for a Thanksgiving spritzer!

To make the jam, just add all ingredients to a pot. Bring to a boil, boil a minute or two, and done. So simple.

Once the jam has cooled, add it to a pitcher along with a bottle of your favorite rosé, elderflower liquor (this is my favorite right now), cranberry or pomegranate juice, and a few dashes of orange bitters. Chill the mix, and then just before serving, add fresh citrus slices. I used blood oranges, but regular oranges or grapefruit would be great too. Top it all off with fizzy, spicy, ginger beer (another one of my favorites).

This cocktail is both refreshing and warming, perfect for a chilly November night, or a snow-filled Thanksgiving Day complete with cozy blankets, a roaring fire, and candles galore.

Ingredients for Spiced Cranberry Rosé Spritzers

Half Baked Harvest

  • 1/2 cup honey
  • 2 cups fresh cranberries
  • 2 sprigs fresh rosemary, plus more for serving
  • 1 tablespoon cardamon pods or 1/2 teaspoon ground cardamom
  • 1 bottle (750 ml) rosé wine
  • 4 ounces elderflower liquor
  • 1/3 cup cranberry or pomegranate juice
  • 2-3 dashes orange bitter
  • 2 blood oranges or regular oranges, sliced
  • 4-6 (12 ounce) ginger beers, to your taste

Directions for Spiced Cranberry Rosé Spritzers

  1. To make the cranberry syrup: In a medium pot, bring 1/2 cup water, the honey, cranberries, rosemary, and cardamon to a boil over high heat. Boil 5 minutes or until the cranberries begin to burst, then remove from the heat. Let cool. Remove the rosemary and cardamon pods. If desired, strain out the cranberries.
  2. In a large pitcher, combine the cranberry syrup, rosé, elderflower liquor, cranberry juice, and orange bitters. Chill until ready to serve, up to 2 days.
  3. Add the orange slices and ginger beer just before serving. Garnish each drink with a candied rosemary (recipe below), if desired.

For the candied rosemary garnish:

  1. Line a baking sheet with parchment paper.
  2. Gently run rosemary sprigs under a little water to dampen and place on the prepared baking sheet.
  3. Sprinkle the rosemary with granulated sugar on all sides, making sure the rosemary is thoroughly coated in sugar.
  4. Allow to dry on the baking sheet for 1 hour. The rosemary can be made 1 day in advance and stored at room temperature.

4. Verity by Colleen Hoover

Verity is on everyone's lips and for good reason! Written by Colleen Hoover, it introduces Lowen Ashleigh to the less than stellar lives of popular author Verity Crawford and her husband Jeremy. It's full of shocking twists that readers couldn't get enough of so there's much anticipation for the film adaptation of this novel.

We know Dakota Johnson will be playing Lowen Ashleigh while Anne Hatheway will star as Verity Crawford with Josh Hartnett taking the role of Jeremy. According to PEOPLE, Amazon MGM Studios is backing this powerhouse movie though a release date has yet to be shared.

5. The Midnight Library by Matthew Haig

Next up is Matthew Haig's The Midnight Library. It's being produced by StudioCanal and Blueprint Pictures to bring main character Nora Seed's incredible journey to the big screen (via The Hollywood Reporter). Readers will get to see her introduction to the incredible library that allows her to live different lives.

6. People We Meet on Vacation by Emily Henry

We love Emily Henry so we're excited to see People We Meet on Vacationget a film adaption in 2025. Written by the charming and witty Emily Henry, the book follows the 'best friends to lovers' troupe that we can't help falling for. Starring Emily Bader as Poppy and Tom Blyth as Alex, readers will get to watch their characters embody the sometimes hilarious frustration of realizing two people aren't better off as friends. Other cast members include Sarah Catherine Hook, Jameela Jamil, Lucien Laviscount, and Lukas Gage (via Deadline).

7. Klara And The Sun by Kazuo Ishiguro

Earlier this year,The Hollywood Reporter shared an exciting update about the adaptation of Kazuo Ishiguro's novel Klara And The Sun. Not only will it be directed by Taika Waititi, but Jenna Ortega and Amy Adams will be starring in it! Ortega will play the titular character, an A.I. "robot" that Adams' character buys "for her teenager."

8. The Hunting Wives by May Cobb

This book felt like reading something from an alternate timelines of The Real Housewives or The Stepford Wives being that it features familiar troupes. The most glaring difference is the reality that there's form of corruption and murder that takes place when a mom moves to the south with her family. She encounters a fun "socialite" who becomes her main focal point until she realizes all that glitters isn't gold. But by then, it's too late (via Variety).

9. The Seven Husbands of Evelyn Hugo by Taylor Jenkins Reid

Taylor Jenkins Reid is another author who's incredible work made it to our TBR pile this year so we're excited to see The Seven Husbands of Evelyn Hugo being adapted for film. Netflix has their hands all over this movie and we don't blame them! Cast information isn't available yet, but fans can expect this adaptation to closely follow the plot of the book.

As a refresher, up-and-coming writer Monique Grant is given a once-in-a-lifetime opportunity to pen the biography of the popular star Evelyn Hugo. The latter gets candid about the marriages that didn't last and everything she's kept hidden from others. Eventually, she'll reveal the connection she has to Grant which will change the perception the writer had about one aspect of her life.

10. The Housemaid by Frieda McFadden

The Housemaid is another book to film adaptation we can't wait to watch because it stars Amanda Seyfried (Mamma Mia!, Sydney Sweeney (Euphoria, Anyone But You), and Brandon Sklenar (It Ends With Us). Sweeney will play Nina, a woman who becomes a maid for Nina (Seyfried) and her husband in their glamorous home. It'll also star Uma Thurman, Anthony Hopkins, and Phoebe Dynevor!
