Spike Your Sweets: Boo-zy Cointreau Cupcakes

Don’t let these demure cupcakes fool you, they pack quite the boozy punch! Keeping in line with our tricked out Reese’s shooters, we’ve created another spiked masterpiece for your pleasure. While they seem like merely a delicious chocolate cupcake on the outside, the frosting is lavishly made with Cointreau to add a feisty orange flavor. Make sure to warn your guests… or not.

Ingredients:

Cupcakes

-1 box chocolate cake mix, extra fudgey if possible

– 4 large eggs

-1 cup full fat sour cream

-1/2 cup vegetable oil

-3/4 cup Cointreau

– 2 tablespoons cocoa powder

Frosting

-1 cup room temperature butter

-4 tablespoons Cointreau

-3-4 cups powdered sugar

-orange

We’ll start with the cupcakes. Mix all the cupcake ingredients together.

Keep mixing as long as you can, preferably until most of the small lumps are all gone. It should turn into one delicious, ooey gooey mass. Doesn’t that look amazing?! If you’re unsure about the flavor, it’s probably time to do a taste test.

Once it’s all well mixed, begin to put them in the cupcake tins.

Bake in the oven at 325 degrees for about 12-15 minutes, or until a toothpick stuck through the center of the cupcake comes out clean. Let the cupcakes cool while you make the frosting. To do so, mix together room temperature butter and Cointreau, and beat by hand or a hand mixer.

When the Cointreau is fully mixed in, slowly add powdered sugar. We added about 3 cups, but add as much or as little to your taste preference.

Once the powdered sugar is fully immersed in the frosting, grate or zest an orange for the garnish.

Now that you’re done with the orange, it’s time for decorating! We used a Wilton frosting tip to frost the cupcakes, but a plastic knife also works just as well! Once done frosting the cupcakes, add some orange zest for flavor, and just ‘cause it’s pretty.

Our buddy Skully was a little hungry, so we gave him a bite too. Nom nom nom.

His eyes were agog with excitement!

While the chocolate and orange colors work well for Halloween, this cupcake is versatile and is great for any event!

No matter what kind of day you're having, Marissa Cooper's having a worse one. Mischa Barton's The O.C. character went through the ringer during the first three seasons of the teen drama (remember how she overdosed in Tijuana...and also saw her parents post-hookup after their divorce?).

And during her time on The O.C., Mischa Barton struggled with drug and alcohol abuse. She was arrested for a DUI in 2007 and eventually received involuntary psychiatric hospitalization in 2009 after allegedly threatening to end her own life. And in a new interview, Peter Gallagher (who played Sandy Cohen on the show) says he's "just so grateful" for "the fact that she’s still alive."

The O.C. follows Ryan Atwood, who moves in with the Cohens after getting kicked out of his mom's house, and starts a relationship with Marissa shortly after. While Peter Gallagher played Adam Brody's TV dad instead of Mischa's, Sandy was a definitely father figure for Marissa, and it seems like Peter felt that same responsibility off camera.

"I’ve always felt very protective of her," Peter told The Independent. "First fame is toxic. First fame can kill you. She was 16 years old when she started working with us, so just the fact that she’s still alive, I’m just so grateful."

“You can go to therapy every day for the rest of your life,” Mischa said in a 2023 interview with The Sunday Times. “There’s just a certain amount of trauma [from] all that I went through, particularly in my early twenties, that just doesn’t go away overnight.”

Josh Schwartz and Stephanie Savage revealed that season 1 overdose not only served as a cliffhanger, but gave “network executives an escape hatch on a performer they had been wary about” (via People). But Mischa Barton got her big break, becoming "how people knew the show," and (thankfully) Marissa recovered — only to die after a car crash in season 3.

As hard as that season 3 ending is to watch, Mischa did have the opportunity to watch it with Rachel Bilson and Melinda Clarke for the first time on their rewatch podcast. "It needed to be a thing, after everything she's been through, but if it's here I'll watch it with you," Mischa says.

"I couldn't do it, Mischa, I couldn't do it," Rachel adds. "But I'm going to do it if you're going to do it."

Mischa says even though being written off the show "was a little bit of a bummer," it wasn't necessarily a surprise. "The character was just doing too much," she told Vanity Fairin 2023. "And I think they ran out of places for her to go. It was not the best thing in the world, [but] there wasn’t much you could do at that point. It was whether she could sail off into the sunset, or die. At that point, I guess it’s better to have the more dramatic ending.”

If there's one thing The Seaside Baker blogger Jackie Bruchez knows, it's the sweet spot between fresh ingredients and luxurious desserts. In her new cookbook, Decadent Fruit Desserts($22), there is a little something comforting for everyone in more than 60 recipes, such as grilled peaches and a banana-chocolate pot de crème with cognac sauce. At the heart of each recipe is a key fruit ingredient, meant to shine as the star of the show. Bruchez elaborates in the intro of her book, “Transforming fruit, be it apples or oranges or more exotic varieties like dragon fruit, into a decadent, sophisticated, blow-your-mind dessert is the revelation I want to share with you." You don't have to just take our word for it. The paloma tart recipe below takes the tequila-grapefruit drink and morphs it into a bright and snappy multi-layered fruit tart.

Paloma Tart

(Serves 8-10)

Baker's Note: When making the curd, it is necessary to whisk the egg yolks and sugar before adding the citrus juice to avoiding curdling.

Ingredients:

Crust:

  • nonstick cooking spray
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lime zest, freshly grated
  • 1/2 cup coconut, shredded
  • 1 cup unsalted butter, cold
  • 1 tablespoon fresh lime juice

Grapefruit Tequila Curd:

  • 6 egg yolks
  • 1 1/4 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon grapefruit zest
  • 2 cups grapefruit juice, freshly squeezed
  • 1/4 cup cornstarch
  • 3 tablespoon unsalted butter, cold
  • 1 tablespoon tequila, optional

Whipped Cream:

  • 1 1/2 cups heavy whipping cream, cold
  • 1 1/2 tablespoon powdered sugar
  • 1/2 tablespoon lime zest, freshly grated
  • lime and grapefruit wedges, for garnish

Directions:

1. Preheat the oven to 350°F. Lightly spray a 9-inch fluted tart pan with nonstick cooking spray.

2. Make the crust. In a large bowl, mix the powdered sugar, flour, salt, lime zest, and coconut until they're well blended, about 30 seconds. Add the butter and lime juice; mix to combine them until moist clumps form. Press the dough into the bottom and up the sides of the pan.

3. Bake the crust until it's golden brown, about 23 to 25 minutes. Cool it for 10 minutes.

4. While the crust is cooling, make the curd. In a heavy-bottomed, medium-sized pot, whisk the egg yolks and sugar until it's light and pale. Whisk in the salt, grapefruit zest, juice, and cornstarch. Place the pot on the stove over medium heat and cook the curd until it thickens and coats the back of a spoon, about 5 minutes. Remove it from the heat; stir in the butter, one tablespoon at a time, and then add the tequila, if using.

5. Pour the warm curd into the crust; let it sit for 30 minutes, then transfer the tart to the refrigerator to chill for at least 1 hour.

6. Right before serving, make the whipped cream. Beat the heavy whipping cream, powdered sugar, and lime zest on high until stiff peaks form.

7. Dollop the cream onto the tart and garnish it with lime and grapefruit wedges.
