This Easy Croissant Recipe Will Make You Feel Like A French Pastry Chef In No Time

In the realm of baked goods, few creations can rival the allure of a perfectly executed croissant. Its delicate layers, ethereal crispness, and buttery richness are enough to transport you to a charming café on a Parisianboulevard, even if you're thousands of miles away.
But here's the secret: crafting these heavenly pastries at home is not only possible, but also incredibly rewarding. From the initial mixing of dough to the mesmerizing folds of buttery layers, I'll guide you through each step, demystifying the process and empowering you to create croissants that rival those of the finest patisseries.

You'll see the effort is well worth once you take your first bite into a freshly baked, homemade croissant on a Sunday morning! To make things easier I am sharing some of the mistakes to watch out for that will make your croissant-making journey smoother and more successful.

Ingredients:

For the Dough:

  • 2 1/4 cups (280g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 packet (7g) active dry yeast
  • 1/2 cup (120ml) warm milk
  • 1/2 cup (120ml) warm water
  • 1 tsp salt
  • 1 cup (2 sticks or 225g) cold unsalted butter

For the Egg Wash:

  • 1 egg
  • 1 tbsp water

Step by Step Instructions For How To Make Croissants

1. Activate the Yeast:

  • In a small bowl, combine the warm milk and warm water.
  • Sprinkle the yeast over the liquid and let it sit for about 5-10 minutes until it becomes frothy. This indicates that the yeast is active.

2. Mix the Dough:

  • In a large mixing bowl, combine the flour, granulated sugar, and salt.
  • Pour the activated yeast mixture into the dry ingredients and stir until a shaggy dough forms.

3. Knead the Dough:

  • Turn the dough out onto a floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Add more flour if necessary to prevent sticking.

4. Chill the Dough:

  • Form the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 1 hour or overnight for best results.

5. Prepare the Butter Layer:

  • Place the cold unsalted butter between two sheets of parchment paper.
  • Using a rolling pin, pound the butter into a 7x7-inch (18x18cm) square. Ensure it's pliable but still cold.

6. Laminate the Dough:

  • Roll out the chilled dough into a larger rectangle.
  • Place the butter square in the center of the dough and fold the dough over it like a letter, enclosing the butter entirely.
  • Roll the dough out again into a larger rectangle, then fold it into thirds like a letter. This completes one fold.
  • Chill the dough for 30 minutes.
  • Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.
  • After the final fold, refrigerate the dough for at least 1 hour or overnight.

7. Shape the Croissants:

  • Roll out the laminated dough into a large rectangle, about 1/4 inch (0.6cm) thick.
  • Cut the dough into triangles. Each triangle should be about 5 inches (12cm) wide at the base.
  • Roll each triangle from the base to the tip, forming a crescent shape.

8. Proof the Croissants:

  • Place the shaped croissants on a baking sheet lined with parchment paper.
  • Cover them loosely with plastic wrap and let them rise at room temperature for 2-3 hours until they double in size.

9. Preheat and Egg Wash:

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together the egg and water to make an egg wash.

10. Bake the Croissants:

  • Brush the proofed croissants with the egg wash.
  • Bake in the preheated oven for 15-20 minutes or until they are golden brown and flaky.

11. Cool and Enjoy:

  • Let the croissants cool on a wire rack for a few minutes before serving.

  • Don't Rush The Dough: Avoid speeding up the dough's rise or resting times. Properly letting the dough rise and rest ensures a flaky texture.
  • Don't Use Warm Butter: Ensure that your butter remains cold and firm throughout the lamination process. Soft or melted butter can lead to greasy and less flaky croissants.
  • Don't Skip The Folding and Rolling: Skipping or minimizing the number of folds and rolls can result in less distinct layers in your croissants. Be patient and complete the full folding and rolling process as directed.
  • Don't Overwork The Dough: Be gentle when handling the dough, especially after laminating with butter. Overworking the dough can make it tough rather than flaky.
  • Don't Roll The Dough Too Thin: While rolling out the dough, avoid making it too thin. A thickness of about 1/4 inch (0.6cm) is ideal. Very thin dough can result in overly crispy, less tender croissants.
  • Don't Skip Chilling Time: Skipping the chilling time between folds and after shaping can cause the butter to melt and seep out, leading to uneven layers and loss of flakiness.
  • Don't Open The Oven Too Soon: Avoid opening the oven door frequently while baking. Sudden temperature changes can cause the croissants to collapse. Only open the oven when necessary.

This snack only bakes for a total of 30 minutes, making the hour-long process a major time saver in putting the final touches on your holiday parties. In addition to being an efficient bite, these scones are Paleo-approved and flavorful as ever. Eat this sweet treat with family, bring them to this year's holiday party, or enjoy by yourself for a cozy night in.

What You Need To Make These Cherry-Cranberry Almond Paleo Scones

For the scones:
  • 1/2 cup ghee, melted
  • 1/2 cup full-fat coconut milk
  • 2 eggs
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups almond flour
  • 1/2 cup arrowroot starch or tapioca starch
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1 cup dried cherries
For the cranberry glaze:
  • 1/2 cup fresh cranberries
  • 1/3 cup water
  • 4 tablespoons maple syrup, divided
  • 2 tablespoons arrowroot starch
  • Sliced almonds, for topping
  • Shredded coconut for topping, optional

How To Make The Cherry-Cranberry Almond Paleo Scones

  1. Start by heating the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, add in the melted ghee, coconut milk, eggs, maple syrup, and vanilla and almond extracts. Whisk the mixture until it is well combined.
  3. In a separate mixing bowl, add in the almond flour, arrowroot starch, salt, and baking powder and whisk or sift until it is well mixed.
  4. Slowly pour the dry ingredients into the wet mixture until the batter is uniform. Fold in the dried cherries, then let the batter sit for 20-30 minutes to get fully hydrated.
  5. Carefully pour the batter onto parchment paper and lightly roll it out with a rolling pin to a large circle, about 10-12 inches across. Sprinkle the top with arrowroot starch if the batter is sticking at all to the rolling pin.
  6. Use a wet knife to cut eight triangles into the circle. Bake the scones in the oven for about 25 minutes. Remove the scones from the oven and re-cut the wedges gently with a clean knife and separating them a bit from each other, then bake in the oven for another 4-5 minutes until golden brown.
  7. While the scones are baking, make the cranberry glaze. Add the cranberries to a sauce pot, along with the water and 2 tablespoons of maple syrup. Bring the mixture to a boil for about 5 minutes, letting the cranberries burst and begin to make a thicker sauce. Continue simmering and stirring until the sauce has thickened up slightly, another 2-3 minutes. Then remove from the heat.
  8. Whisk together the remaining 2 tablespoons of maple syrup and arrowroot starch in a small bowl to create the base of the glaze, then add in the cranberry mixture until the desired taste and color are reached.
  9. Remove the scones from the oven, let cool for a few minutes, then drizzle the cranberry glaze over them. Top with the sliced almonds and shredded coconut, if desired.

And after Gabriel realized how much he wants to be with Emily in the season 4 finale, it looks like season 5 will feature even more of the show's signature relationship drama. "I think [Gabriel] realized that he wasn’t even aware of the fact that [Emily] left and how disconnected they’d become," Star continues. "He’s met the guy; he realizes the circumstances under which they met, and I think he just didn’t understand how fast things had moved between them."

But as much as we love to see Emily and Gabriel together, Lily Collins is excited to explore a Emily and Marcello. “Marcello is a whole other adventure that we want for Emily because we ultimately want Emily to be able to have a better work/life balance,” she tells TUDUM. “We want to have Emily be able to smile without condition. We want to see her beyond her vacay mode. And he comes at that perfect time.”

MAJOR The Last of Us season 2 spoilers ahead!

If you thought The Last of Us season 2 couldn't get more dramatic than its premiere, then you'd be wrong. Season 2 primes us for some emotional drama by showing just how much Ellie (Bella Ramsey) and Joel (Pedro Pascal) are at odds, and throwing Abby (Kaitlyn Dever), who's seeking revenge on Joel for her own father's murder, into the mix shatters everything.

The Last of Us season 2, episode 2, "Through The Valley" is already being heralded by social media users as one of the best episodes in TV history. But it's definitely memorable for one specific reason: the episode killed off Joel, played by Pedro Pascal.

Let's talk about what the heck just happened with Joel Miller (Pedro Pascal) in The Last of Us season 2.

Does Joel die in episode 2?

Joel Miller (played by Pedro Pascal in the hit HBO show) dies in The Last of Us season 2, episode 2. "People are going to be upset. That's sometimes how good drama goes," executive producer Craig Mazin tellsUSA Today. "This was something that was always meant to happen. So much of the first season was, in a weird way, leading to this moment. And it's upsetting."

The horrifying moment comes after a blizzard — and some infected — put Abby, Joel, and Dina (Isabela Merced) on a collision course. After they rescue her from the aforementioned infected, Abby brings the two Jackson residents back to the lodge in the mountains where her group is hiding. Meanwhile Jackson, dealing with its own infected attack, burns in the distance.

Joel's anxious to return to town, but he's got bigger problems: Abby recognizes him as the man who killed her father (and wiped out the Firefly hospital) and, after putting Dina to sleep, Abby takes out five years' worth of anger and devastation on him with a golf club. Yeah. I can't believe it either.

But even more horrifying is when Ellie finds the lodge and bursts into the room. When she begs Joel to get up, there's a moment when you can see a beaten Joel start to lift himself up from the ground before Abby uses the now-broken golf club to kill him. I hope Ellie holds onto this moment and knows Joel was willing and able to do whatever it took to keep her safe!! I will scream about them forever!!

As Abby's group leaves, Ellie swears she'll kill them, and "you can't help but believe it is absolutely true," Craig says. There's a truly devastating shot of Ellie lying over Joel's body in the empty room that parallels her nursing him back to health at the end of season 1, episode 7 and I don't know if I'll ever get over it.

Why was Joel killed off?

In addition to being literal retribution for the death of Abby's father, Joel's death is a catalyst for Ellie's journey throughout the rest of the season as she grapples with revenge, grief, and anger. "Loss is kind of how this story functions, so this was largely preordained," Craig continues.

And yes, Pedro was aware of this devastating scene when he signed up for the life-changing role. "When I talked to Pedro the first time, I said, 'This is how this will go,'" Craig says. "I wanted him to know that we're not going to do this for seven seasons with you in that spot. We're going to do a season, and if it goes well and there's a second season, this will happen."

What happens to Ellie after Joel dies?

The trailer for the rest of The Last of Us season 2 shows that Ellie and Dina aren't giving up until they enact their own revenge on Abby and her group. The two women are headed for Seattle and they're up against infected, the militia, and everything else this post-apocalyptic world has to throw at them.

But even though Joel's gone for good, Pedro isn't. We're in for plenty of flashbacks that fill in those five years between seasons 1 and 2!
