This Dreamy Vanilla Tiramisu Cake Is Easy *And* Delicious

Vanilla Tiramisu Cake from Half Baked Harvest

Vanilla-infused sour cream cake swirled with chocolate chunks and soaked in sweet coffee syrup. This cake is no fuss, easy to mix up, and SO DELICIOUS! Every bite is layered with chocolate and moist coffee-soaked vanilla cake crumbs. Finish the cake with the creamiest whipped mascarpone frosting and a heavy dusting of cocoa powder for that classic tiramisu finish. Bonus? It's simpler to make than you'd think, and so very pretty…with very little effort.

Here is how you make the cake.

Surprisingly, this Vanilla Tiramisu Cake is actually really simple to make. Cream some butter with a touch of sugar. Then add eggs and sour cream.

Now, the sour cream is KEY. You can also use Greek yogurt, but I've decided that sour cream will give you the best flavor and the most amount of moisture too. This is just my second time baking with sour cream and it is quickly becoming one of my favorite ingredients to bake with. It's a game-changer and I'm just a little bit obsessed.

Once all the wet ingredients have been mixed. Simply beat in the flour, baking powder, and a pinch of salt. Then stir in lots of chocolate chunks. You can use semi-sweet or dark chocolate here, but the key is to give the chunks a good chopping before adding to the batter. You want them to be lightly swirled throughout the cakes, so small pieces are best.

And now you bake this up in a good ole' cake pan. Nothing too fancy. I am sure you could also do cupcakes too, which would be very cute!


Onto the coffee glaze...

The way tiramisu is made is by dipping ladyfingers in coffee. For this cake, I make a sweetened coffee glaze and brush it over the top of the cake after baking. The glaze slowly sinks into the cake, creating a creamy, moist, and delicious coffee-infused cake crumb.It. Is. SO GOOD!

Now that frosting…

If you LOVE tiramisu, you know that a classic tiramisu is really all about that oh so creamy and thick layer of mascarpone. It's essential to a GOOD tiramisu. So, to keep that flavor and texture, I made a simple whipped mascarpone frosting.It's just mascarpone cheese whipped with cream and a touch of vanilla. Seems so easy and simple, but do not let that fool you. It makes for the creamiest frosting, and is just perfect atop this cake.Every bite of this cake is filled with sweet vanilla flavors. And the whipped mascarpone cream on top is that final extra special touch that really elevates this cake above others. Trust me, I know this is different, but it's different in a very delicious way.

INGREDIENTS
  • 1 stick (8 tablespoons) salted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup plain greek yogurt or sour cream
  • 1 tablespoon plus 1/2 teaspoon vanilla extract
  • 3 large eggs, at room temperature
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 cup chopped semi-sweet or dark chocolate
  • 1/3 cup brewed very strong coffee
  • 1 tablespoon dark rum (optional)
  • 1-2 tablespoons honey
FROSTING
  • 1/2 cup (4 ounces) mascarpone or cream cheese, at room temperate
  • 3/4 cup heavy whipping cream
  • 1-2 tablespoons honey
  • 1 teaspoon vanilla extract

INSTRUCTIONS
  1. Preheat the oven to 350° F. Grease an 8 or 9 inch round cake pan and line with parchment paper.
  2. In a large mixing bowl, beat together the butter and sugar until combined. Add the sour cream and 1 tablespoon vanilla, beating until smooth. Beat in the eggs, one at a time, until combined. Add the flour, baking powder, and salt. Fold in the chocolate chunks. Pour the batter into the prepared pan.
  3. Bake for 28 to 30 minutes, until the center is just set. Let cool 5-10 minutes. Run a knife around the edge of the cake and invert the cake onto a plate, flip it back over onto a serving plate. Let cool.
  4. In a small saucepan, combine the coffee, rum, 1/2 teaspoon vanilla, and honey. Bring to a boil over high heat, boil 1-2 minutes. Remove from the heat. Let cool slightly. Brush the top of the cake with coffee syrup, repeating until all syrup has been used. Allow the cake to absorb the liquid for 30 minutes.
  5. Using an electric mixer, whip the mascarpone/cream cheese until smooth. Add the cream and whip until soft peaks form. Add the honey and vanilla. Whip once more until combined. Dollop frosting onto the cake. Dust generously with cocoa powder just before serving. Cake will keep for up to 4 days in the fridge.
RECIPE NOTES

To Make Gluten Free: Use an equal amount of your favorite gluten free flour blend in place of the all-purpose flour. I recommend Cup4Cup gluten free flour.

Remember when she performed at the Oscars with no makeup and ripped jeans?! Well the actress and singer just posted another adorable selfie without a stitch of makeup.

To celebrate "Die With A Smile" (her song with Bruno Mars) hitting number 1 on the Billboard Hot 100, Lady Gaga posted a photo of her laying in the grass with a huge grin on her face — and without any makeup.

"Thank you to all of the monsters and hooligans for helping make 'Die With A Smile' #1 on the Billboard Hot 100! We love you and are so grateful," she says in the post. "Having multiple songs of mine hit #1 across three decades feels surreal, and I am overwhelmed by the love and support you have shown me from the beginning. I have so much more in store for you and can’t wait to share it."

The song was released on August 16, and in a statement to Page Six, Lady Gaga praised Bruno Mars as a collaborator. “Bruno and I have a lot of mutual respect for each other and were talking about collaborating,” she says. “I was finishing up my own album in Malibu, and one night after a long day he asked me to come to his studio to hear something he was working on...It was around midnight when I got there, and I was blown away when I heard what he had started making.”

After revealing they "stayed up all night” to finish both writing and recording it, Lady Gaga continues, “Bruno’s talent is beyond explanation. His musicianship and vision is next level. There’s no one like him." There's no one like you either Gaga!

When it comes to prepping Thanksgiving dinner, we'll take any make-ahead ideas we can get. That's why we are *obsessed* with this insanely yummy mashed potato recipe from Half Baked Harvest. Easy to make, delicious to eat, and even better to check off your to-do-list, these mashed potatoes are rich and full of garlicky goodness. We'll let Tieghan Gerard take it from here!

Make Ahead Roasted Garlic Mashed Potatoes, the best holiday mashed potatoes. Made simply with sweet roasted garlic, fresh herbs, and salted butter. Each bite is perfectly smooth, creamy, and so delicious. The secret? Cooking the potatoes together with the milk and cream, then adding in roasted garlic cloves for a delicious garlic flavor that isn't overpowering. This method makes for the creamiest and most flavorful mashed potatoes. They're perfect for making ahead of time for easy entertaining!

What's the secret to these potatoes?

Two things… first, the roasted garlic. Roasting the garlic adds just the right amount of garlic flavor that's delicious but not over powering.

Second, cook the potatoes together with the milk and herbs. This means no boiling the potatoes, no extra steps, nothing fancy. It turns out that creating almost perfect mashed potatoes is actually really easy.

The Steps — Roast The Garlic

Start with the garlic since it takes time to roast in the oven. If you've never done it before it really adds a layer of deliciousness to your recipes.

Simply slice the top portion of the garlic head off to reveal the cloves. Then place the garlic on a small piece of foil, drizzle with olive oil, and wrap the garlic up. Roast for about forty minutes, until the garlic is deeply golden and soft.

Then simply squeeze the cloves out of the garlic skin.

Meanwhile, Make The Potatoes

Combine the potatoes with the milk and cream in a large pot on the stove. Add the herbs, then cook until the potatoes are tender. This will take about twenty-five minutes or so. Once the potatoes are cooked, drain them, BUT, be sure to save the cream – you'll need it!

Now, the potato ricer…it's key to making ultra-smooth mashed potatoes. Do you have to have a potato ricer? No, a good ole masher works too. But if you want the smoothest mashed potatoes, a ricer works really well.

Take the mashed potatoes and those roasted garlic cloves and put them right back into the pot. Then add back the cream and also add some butter. Cook until the butter is melted…and that's it…the most perfectly flavored creamy mashed potatoes!

Honest these are the BEST – classic, but with amazing flavor and texture.

The added bonus is just how easy these are to make…and that you can make them ahead of time. Steps for warming in the oven, slow cooker, or on the stove are listed in the directions!

Make Ahead Roasted Garlic Mashed Potatoes

Ingredients:

Directions:

  1. Preheat the oven to 400° F.
  2. Slice off the top portion of the garlic head to expose some of the cloves. Place the garlic on a piece of foil. Drizzle with olive oil, wrap it up, and bake for 40-55 minutes, until deeply golden and very soft.
  3. Let the garlic cool, then squeeze out the cloves.
  4. Meanwhile, In a large dutch oven, combine the potatoes, heavy cream, milk, sage, and thyme. Bring to a gentle boil over medium heat and cook 20-25 minutes, until the potatoes are fork-tender.
  5. Drain the potatoes, reserving all of the cream. Discard the thyme and sage. Press the potatoes and roasted garlic cloves through a potato ricer. Then add them back to the warm pot. Alternately, you can add the potatoes back to the pot and mash with a potato masher.
  6. Over low heat, add 1 1/2 cups of the reserved cream and the butter. Continue to add more of the cream until your desired consistency is reached. Season the potatoes with salt and pepper.
  7. If desired, brown a little butter with sage or thyme and swirl into the potatoes before serving. Serve warm and creamy.

To Make Ahead:

  • In the Oven: Prepare the mashed potatoes as directed through step 6. Spoon the potatoes into a large baking dish. Cover and refrigerate for up to 3 days. To reheat in the oven, preheat the oven to 325° F. Pour 1/2 cup milk or cream over the potatoes and add 2 tablespoons butter, do not stir. Cover the potatoes tightly with foil and transfer to the oven. Cook for 20-25 minutes, or until the potatoes are warmed through. Stir before serving.
  • Slow Cooker: Prepare the mashed potatoes as directed through step 6. Spoon the potatoes into the slower cooker, cover, and keep on low for up to 4 hours. About 30 minutes before serving, turn the heat to low or high, add 1/2 cup heavy cream and 2 tablespoons butter, do not stir. Cover and let the cream warm and the butter melt. Stir before serving.
  • On the Stove: Prepare the mashed potatoes as directed through step 6. Add 1/2 cup cream and 2 tablespoons butter. Place the potatoes over low heat, gently stirring until warmed throughout.

Following the 2024 Emmy Awards, Chairman and CEO of HBO and Max Content Casey Bloys toldDeadline that The Last of Us season 2 will premiere around “generally first half of the year [2025], I expect them to be in the Emmy window.”

Serving as a prequel series to the It movie franchise directed by Andres Muschietti, Welcome to Derry will delve into Pennywise’s origin story and how the child-preying clown arrived in Derry. But that’s not even the best part: Bill Skarsgård, who starred in It and It: Chapter Two, will reprise his role as the killer clown in the upcoming HBO series, which will be released in 2025. Last time we saw Eleven, Mike, Will and the rest of the Hellfire Club crew, they were facing an impending apocalypse after Vecna’s devious plan came to full fruition. So, will the group of friends defeat Vecna and save their home? Guess we’ll just have to wait and see because Stranger Things 5 likely won’t premiere until late 2025. Suits: L.A. — On NBC in 2025

Court is back in session! Only this time, our favorite lawyers from the OG Pearson Hardman firm are not on the case. Thanks to Netflix, the original Suits (which starred the Duchess of Sussex Meghan Markle) experienced a renaissance of sorts upon its arrival to the streaming service in June 2023. And as a result, NBCUniversal ordered a spinoff series earlier this year. But instead of the bustling streets of New York City, a new group of lawyers are setting up shop in the Golden State in Suits L.A.

The new spinoff will center around an entertainment and criminal lawler named Ted Black, who launches his own law firm in California after moving from the East Coast. Originally, Suits L.A was slated to be a part of NBCUniversal’s 2024-2025 lineup. However, according to Deadline, there was a slight change in the production location, making a Fall 2025 release more likely. So, who’s up for a Suits marathon?

Suits L.A. is speculated to premiere sometime in 2025 and is set to star Ted Black, Josh McDermitt, Rachelle Goulding, Victoria Justice, Troy Wingush, Bryan Greenberg, Lex Scott Davis, John Amos, Kevin Weistman and Alice Lee.

Wednesday Season 2 — On Netflix in 2025

Looks like Jenna Ortega won’t be giving us another macabre number anytime soon because Wednesday season 2 won’t arrive on Netflix until 2025. In a new interview with Vanity Fair, Ortega teases the upcoming installment will be much “darker” this time around. “I think the feel that we’re going for is a little bit more horror-inspired,” the Beetlejuice Beetlejuicestar adds. “Not to say that suddenly we’re the goriest show of all time. I mean, there’s six-year-olds watching.”

“This season is going to be bigger and more twisted than you can ever imagine," Catherine Zeta-Jones says in the new Wednesday season 2 first look.

“If we showed you any more, your eyes would bleed,” Ortega says. “And I'm not that generous.”

Kate Middleton has been top of mind for a lot of people over the last year after the princess announced in March 2024 she was battling cancer. "The last nine months have been incredibly tough for us as a family. Life as you know it can change in an instant and we have had to find a way to navigate the stormy waters and road unknown," she shared in a video update. "This time has above all reminded William and me to reflect and be grateful for the simple yet important things in life, which so many of us often take for granted. Of simply loving and being loved." And in honor of Kate's 43rd birthday, Prince William posted the sweetest tribute honoring her strength and perseverance.

Kate Middleton turned 43 on January 9, 2025. In honor of the big day, Prince William took to Instagram to celebrate, praising his "incredible" wife.

"To the most incredible wife and mother. The strength you’ve shown over the last year has been remarkable," he says in the post. "George, Charlotte, Louis and I are so proud of you. Happy Birthday, Catherine. We love you. W."

And well wishers flooded the comments. "Happy Birthday Catherine, wishing you a wonderful year ahead surrounded by family and loved ones," one user says, while another adds, "Happy Birthday Princess of Wales! What a gorgeous photo. Wishing you a wonderful year 😍 xx"

And the tribute comes after revealing Kate was doing "amazing" following her cancer battle.

The birthday celebration comes after the prince shared an update on Kate in early November that had us all breathing a sigh of relief. “She's doing really well thanks. And hopefully, she is watching tonight. So cheering me on," he said before the Earthshot Prize awards (via People). “She's been amazing this whole this whole year. I know she will be really keen to see tonight be a success."

"From what I understand, Catherine is doing very well," royal author Robert Jobson added in an interview withHello!that same week. "She is back training at the gym and doing all the things she wanted to do."
