Add This Eggplant Recipe to Your Whole30 Meal Plan

Traditionally, Eggplant Caponata is served at room temp or chilled, spooned over crusty bread, but for this light, Whole30-friendly version, we’re leaving out the refined carbs and serving up this delicious and filling Sicilian eggplant stew on its own, au naturel. If you’re looking to add some protein, you can enjoy the caponata with a fried or soft-boiled egg. The beauty of this dish — aside from its vibrant colors and wholesome ingredients — is how quickly it comes together and that it can be made ahead of time, perfect for busy weeknights.

Ingredients:
Serves 4

  • 3 Tablespoons olive oil
  • 1 large eggplant, cubed into 1/2 inch chunks
  • 1 medium-sized onion, diced
  • 3 garlic cloves, finely chopped
  • 3 Tablespoons red wine vinegar
  • 10 kalamata olives, chopped
  • 2 Tablespoons capers
  • (1) 14-ounce can diced tomatoes (preferably organic)
  • salt and freshly cracked black pepper
  • 1/4 cup basil leaves, chopped
  • 3 Tablespoons pine nuts, toasted

Instructions:

1. Heat olive oil in a large heavy pot over a medium-high flame (a dutch oven is great for this recipe). Add the cubed eggplant and sauté until lightly golden, about 5 minutes, stirring occasionally. Add the diced onion and chopped garlic and cook for another 3-4 minutes, or until the onion is fragrant and translucent.

2. Pour in the red wine vinegar to deglaze the bottom of the pot. Once the liquid evaporates slightly, fold in the chopped olives, capers and diced tomatoes. Lower the flame, cover the pot and simmer for about 12-15 minutes, or until the eggplant is fork-tender.

3. Season the caponata to taste with salt and freshly ground black pepper, and fold the chopped basil leaves into the pot.

4. Serve the caponata warm with the toasted pine nuts sprinkled over the top.

  • 3 medium sweet potatoes, cut into wedges
  • 20 slices of bacon
  • 1/4 teaspoon pink salt
  • Freshly ground pepper

Directions for Bacon-Wrapped Sweet Potatoes

  1. Preheat your oven to 400 degrees F.
  2. Line a baking sheet with some parchment paper.
  3. Cut your sweet potatoes into thick-cut wedges or fry shapes.
  4. Wrap each sweet potato piece with a slice of bacon, slightly overlapping the bacon on itself as it goes around the sweet potato.
  5. Place the sweet potatoes in a single layer onto the baking sheet, leaving an inch or two in between each one. Do this in two batches, if needed. Sprinkle salt and pepper on top before baking.
  6. Bake the bacon-wrapped sweet potatoes for 35 minutes. The potatoes should be tender and the bacon should be crispy.
  7. Serve the wedges with your choice of ketchup, ranch, or aioli – or all of the above! Enjoy!

Oh, Canada follows the life of legendary (albeit fictional) filmmaker Leonard Fife. This story probably approaches Leo's career the way we think about Steven Spielberg's. AKA, he's very important. Leonard decides to tell his life story before he runs out of time. And even though he's got an impressive resumé, he also has to decide if he wants his Vietnam draft dodge and sticky relationships to become public knowledge.

"Leonard sits for an extended interview with his former student Malcolm (Michael Imperioli), relating candid stories about his younger self (Jacob Elordi) in the tumultuous 1960s and beyond," the synopsis says, adding that "at Leonard’s insistence, his wife and indispensable artistic partner, Emma (Uma Thurman), bears witness to it all."

Uma Thurman has been vocal about how excited she is to be a part of the project and told Deadline the movie feels like a "reverie" and has a "lyrical, sort of loosely knit, poetic" quality about it.

"The cinematic hand of Paul, of course, carried the day, as far as bringing this sort of illusionary dream together into something that you walk away from with the strong impression of a story," she says. "Just the presence of a master like Paul Schrader on a set of any size, is as distinct as, I don’t know, a warm wind. It’s like the wind that hits you when you get off a plane in the tropics. There’s only one thing of its ilk, and he’s kind of a master like that. You could really be anywhere; you can’t miss it."

That sounds like my kind of movie.

Director Paul Schrader revealed he fell in love with Jacob's performance the moment he saw him — which was before he took the world by storm in Priscilla. “I saw his performance on Zoom and, if this was 40 years ago, this is the guy I would have cast for American Gigolo,” he told The Hollywood Reporter.
