- 2 oz Koloa Kauai Spice Rum
- ½ oz demerara syrup (1:1, turbinado sugar : water)
- 3 dashes orange bitters

Instructions
- Mix demerara syrup and orange bitters in Old Fashioned glass.
- Add a dash of plain water.
- Fill the glass with ice cubes and add Koloa Kauai Spice Rum.
Ginger Beer Margaritas

Ingredients
- 2 Parts Aviation Gin
- 1 Part Simple Syrup
- 1 Part Fresh Lemon Juice
- Cucumber Slices & Basil
- 3 Parts (1/2 bottle) Betty Buzz Meyer Lemon Club Soda
Instructions
- In the bottom of a mixing glass, muddle cucumber slices, lemon juice and simple syrup.
- Add gin, along with ice, and shake.
- Strain over fresh ice into a Collins glass, then top with Betty Buzz Meyer Lemon Club Soda.
- Garnish with cucumber and basil.
The Hemingway Daiquiri

- 2 oz Koloa Kauai Coffee Rum
- 1 ½ oz Campari
- ½ oz orgeat
- Garnish: kumquat zest and hanging whole fruit
Instructions
- Stir Koloa Kauai Coffee Rum, Campari and orgeat with ice.
- Strain into glass with crushed ice.
- Zest a ripened kumquat over the cocktail.
Peppered Bacon Bloody Mary

- 1 ½ oz Koloa Kauai Spice Rum
- ¾ oz orange liqueur
- ¾ oz lime juice
- ½ oz orgeat (Giffards)
- 1 oz Koloa Kauai Dark Rum
- Lilikoi Calamansi Foam
- Garnish: pineapple and lime wheel
Instructions
- Shake Koloa Kauai Spice Rum, orange liqueur, lime juice and orgeat with ice.
- Strain into glass with fresh ice and top with Koloa Kauai Dark Rum (leave space for foam).
- Pipe foam over top creating a mountain peak.
Lilikoi Calamansi Foam
Ingredients
- 1 oz lilikoi syrup
- ¼ oz calamansi juice
- ½ oz honey
- ½ oz simple syrup
- 1 oz carton egg whites
Instructions
- Mix ingredients well, blend in mixer until fluffy. Transfer to a piping bag.
Serrano-Spiced Paloma

- 3 ea. Grilled lime slice(s)
- 3 mL Monin Oak Barrel Concentrated Flavor
- 1 1/2 oz. reposado tequila
- 1/2 oz. orange liqueur
- 2 oz. fresh agave sour mix
Instructions
- Chill serving glass.
- Place ingredients into bottom of mixing glass and muddle.
- Fill mixing glass 2/3 full of ice and pour remaining ingredients in order listed.
- Cap, shake and strain into chilled serving glass.
- Add garnish and serve.
Gin Rickey

- ¾ cup frozen pineapple chunks
- ¾ cup vanilla ice cream
- ¾ cup pineapple juice (adjust as needed)
- 2 tablespoons cold cream cheese
- 1 pinch salt
- 1 bottle orange cream soda
- 1.5 oz Koloa Kauai White Rum
- Garnish: Pineapple fan and chunks
Instructions
- Blend ice cream, pineapple chunks, salt and cream cheese together.
- Slowly add the pineapple juice until creamy and smooth.
- Transfer to a piping bag.
- Fill glass halfway with ice and Koloa Kauai White Rum.
- Add orange cream soda leaving room for Dole Whip.
- Pipe Dole Whip to the top and add more orange soda as needed.
