8 Fantastic, Fiber-Packed Ways to Cook With Ground Flaxseed

What

We’re big fans of keeping a bag of flaxseed meal in our pantries to blend into smoothies and boost our AM bowls of oatmeal. But it seems like no matter how many spoonfuls of the stuff we use on the regular, it’s almost impossible to go through our supply before its expiration date. Happily, there are many ways to use up this nutty flour and plenty of reasons to make a point of it. From baked goods to pancakes — and even some treats for our four-legged friends — the good eats below are sure to pack the flavor and protein and keep you full for hours.

Why

Flax seeds are not only high in omega-3s, but they also pack a healthy amount of both soluble and insoluble fiber for just pennies. (That’s a whole lotta wins, right?) Touting a reputation for lowering your risk of heart disease, cancer, stroke and diabetes, these teeny seeds sure pack quite a healthy punch.

There’s just one catch: Flax seeds really need to be milled in order for our bodies to take advantage of all they have to offer. Grinding them up yourself as needed is certainly your best bet (kind of like how it works with freshly ground coffee beans), but having a bag of the factory-ground stuff all ready to go is even more convenient. If you go the latter route, take care when choosing which bag to bring home from the store. Some brands remove the outer hull, which happens to deliver the bulk of the nutritional benefits, so you’ll want to find a reputable source (Bob’s Red Mill is one) that’ll give you the most bang for your buck.

To keep your flax seeds — whether whole or ground — fresher longer, be sure to store them in a cool, dry place. The freezer is a great choice in order to prevent the naturally occurring oils in the seeds from going rancid. If you’re into experimenting with recipes, you can even play around with swapping out a mix of flaxseed meal and water for eggs — a terrific vegan baking trick that everyone can enjoy. Bonus Recipe: Buffalo Chicken Wrap ​from Half Baked Harvest!

As a bonus, we're throwing in one of our favorite easy and healthy wrap recipes that pushed all the right buttons on flavor. You'll combine shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, fold them up in wraps, then pan-fry until warm and crispy!

These easy wraps, made by Half Baked Harvest, come together in mere minutes. They're crunchy on the outside, cheesy on the inside. Serve with the deliciously creamy jalapeño lime ranch and additional buffalo sauce! These healthy wraps are great for both lunch and dinner, but equally fun for a game night, too!

First things first: start with the buffalo chicken. Shred up a couple of chicken breasts and toss them with homemade buffalo sauce, Greek yogurt (for creaminess), and fresh herbs. Most buffalo chicken fillings are made with cream cheese, but you can swap in yogurt for a healthier choice.

Ingredients:

  • 1 cup cooked shredded chicken
  • 1/4 cup plain greek yogurt
  • 1/3 cup buffalo sauce
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 4 large (burrito size) whole wheat or gluten-free tortillas
  • 2 cups shredded romaine lettuce
  • 1-2 jalapeños or poblano peppers, chopped
  • 3 green onions, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • Olive oil, for cooking

Ingredients for jalapeño ranch:

  • 1 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños chopped + 2 tablespoons brine
  • Juice from 1 lime
  • 1 teaspoon kosher salt

To assemble:

Make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry. So you've got...

  • One-quarter of buffalo chicken
  • Another quarter wrap of greens n' things
  • A quarter full of ranch
  • And finally a quarter full of cheese
  • Fold it all up into one triangle

Instructions:

  1. In a bowl, combine the chicken, yogurt, buffalo sauce, chives, parsley, and dill.
  2. To make the ranch. Combine all ingredients in a bowl.
  3. To assemble, cut down from the center of the tortilla to the edge. Spread the chicken in the bottom left corner, then add a handful of the lettuce, jalapeño/poblano pepper, and green onions on the top left corner. Spread the ranch on the top right corner, and the cheese on the bottom right corner. Fold the buffalo chicken over the lettuce. Then, working clock-wise, folding that quarter over the ranch. And finally, fold that quarter over the cheese.
  4. Heat a drizzle of olive oil in a skillet, add 1 wrap and cook 2-3 minutes per side until crisp and golden brown. Serve warm with extra buffalo sauce, ranch, and lettuce.

We already know that Netflix's Sirens is all about "socialites, scandal, and power struggles" (Gossip Girl, anyone?), but the streamer finally just announced when we can watch the new show, and it's even sooner than we hoped. In addition to confirming its early summer release date, we also have a first look at stars Meghann Fahy, Julianne Moore, and Kevin Bacon — and it makes me want to watch the show even more than I already did. (And considering the show is produced by Margot Robbie, I already really wanted to watch it). Here's your first look at Netflix's new dark comedy.

'Sirens' is an "explosive" look at power.

In Sirens, Devon (Meghann Fahy) is worried about her sister Simone (Milly Alcock). Or, more specifically, Simone's way-too-close relationship with her boss, socialite Michaela Kell (Julianne Moore). When Devon decides enough is enough, she shows up to set Simone straight, unaware the "explosive" Labor Day weekend at Michaela's "lavish beach estate" will change everything.

"Sirens is an incisive, sexy, and darkly funny exploration of women, power, and class," the show's official logline says. And you know what? That makes for some great TV. The show is executive produced by LuckyChap's Dani Gorin, Tom Ackerley, and Margot Robbie, as well as Colin McKenna.

And the 'Sirens' cast makes it a standout series.

In the Sirens first look, we see Meghann Fahy as Devon, armed with what looks like a fruit basket and a scowl. Here's the full Sirens cast list:

And Julianne Moore's Michaela is all grace and poise, especially at home in her lavish estate. “This story has a lot of teeth,” series creator Molly Smith Metzler says in an interview with Tudum. “There are real moments of drama, and it’s going to make people uncomfortable. Operatic is a word I like to use to describe it. It’s a true dark comedy — and it’s got a Greek mythology vibe.”

“Julianne’s just the dream for this role because she does feel ethereal,” she continues. “She’s from another kingdom. She is not a normie.”
