Chef Gordon Ramsay’s Method for Cooking Chicken Is Truly the Effing Best

Sheet-pan chicken and chicken soups may be where you feel most comfortable cooking poultry, but chef Gordon Ramsay thinks the most delicious way you can prep chicken is by pan-searing it and then finishing it in the oven. He tackles the subject extensively in his MasterClass: Gordon Ramsay Teaches Cooking I ($90), and we had to try it out ourselves to see if it was worth the extra effort. Spoiler: It totally is.

Chicken breasts are pan-seared with garlic and thyme before getting bathed in butter and tossed in the oven to finish cooking. The leftover fond, AKA the browned bits stuck to the bottom of the pan, act as the base ingredient for a pan sauce, or au jus that gets drizzled over the finished meat.

If you want to go the extra mile, Ramsay shares an interesting technique for roasting root vegetables on a bed of herbs, which you can serve with the chicken and its luscious sauce for a complete dinner. If root veg isn’t your thing, simply skip that section and make the chicken. We promise that buttery, garlicky, herby sauce will taste good drizzled on whatever side dishes you choose to make, whether mashed or roasted potatoes, rice, and/or steamed vegetables.

Chicken Suprême With Root Vegetables

(Serves 2)

Cooking Time: 65 minutes

Recipe Notes: If you can’t find baby vegetables, simply peel and dice the root vegetables from the grocery store. We prefer to use ghee, or clarified butter, instead of grapeseed oil. Ghee has a high smoke point like grapeseed oil yet imparts an addictive, toasty flavor. We used apple juice instead of brandy and reduced chicken stock over veal demi-glace, although Williams-Sonoma sells a jarred version of it. Though chef Ramsay grates black truffle on top of his chicken, which we can imagine is ridiculously tasty, we passed on that in favor of cooking a more practical, budget-friendly meal.

Ingredients:

  • 2 boneless, skin-on chicken breasts
  • sea salt
  • freshly ground black pepper

For the Root Vegetables:

  • 12 baby carrots
  • 8 baby turnips
  • 4 baby golden beets
  • 4 baby red beets
  • 1 small bunch rosemary
  • 1/2 small bunch thyme
  • 1 bunch parsley
  • sea salt

For the Chicken:

  • 1 tablespoon grapeseed oil or ghee
  • 4 garlic cloves, crushed once with the flat side of a chef’s knife
  • remaining half bunch thyme
  • 1 stick butter, divided
  • 2 shallots, thinly sliced
  • 1/4 cup brandy (substitute with a
    splash of apple juice)
  • 3/4 cup veal demi-glace or reduced chicken stock
  • Perigord black truffle, shaved to garnish (optional)

Directions:

1. Preheat oven to 425°F.

2. Remove chicken from the refrigerator and allow it to come to room temperature. Season well with salt and pepper.

3. Make the root vegetables. Wash all vegetables thoroughly and dry. Form a bed of rosemary, thyme and parsley in a roasting pan. Season with salt.

4. Lay the vegetables on top.

5. Seal tightly with aluminum foil, shiny side up (dull side in to insulate heat). Place roasting pan over medium heat on the stove top. Let the vegetables heat up, about 1 minute, until you hear crackling, then transfer pan to oven. Cook the vegetables until they are knife-tender, 30 to 40 minutes depending on size.

6. Make the chicken. Meanwhile, move on to your chicken. Place a large skillet over high heat and add grapeseed oil (or ghee). Once oil is heated, add chicken breasts, skin-side down, into the pan. Chicken should sizzle immediately upon contact with the pan. If it does not, wait until the pan has heated more. Add garlic and thyme. Don’t move the chicken until skin releases and browns on the edges, about 4 minutes. Tilt the chicken to the edge of the pan, searing the sides, about 10 seconds per side.

7. Flip the chicken and add 3-4 tablespoons butter. As the butter melts, carefully and continuously spoon it over the chicken, basting the skin until golden, about 3 minutes. Flip the chicken back to skin-side down.

8. Transfer the pan to the oven for about 10 minutes, until golden brown and juices run clear.

9. Remove from oven and transfer the chicken to a plate to rest.

10. Drain the excess fat from the pan to a small bowl using a colander. Reserve garlic and thyme.

11. Place the skillet back over medium heat on the stove top. Add shallots and 2 tablespoons butter. Transfer garlic cloves and thyme back into pan. Stirring frequently, continue to cook until shallots caramelize, about 4 minutes. Lower the heat and carefully pour brandy or splash of apple juice into the pan. If using brandy, be cautious of the flambé caused by the alcohol burning off. Keep your thumb over the opening of the bottle to control the pour. Scrape the bottom of the pan clean.

12. Add demi-glace, stir, and season with salt and pepper. Let the sauce cook a few minutes.

13. Pass through a strainer into a small sauce pot. Push the shallots and garlic into the strainer, using the back of your spoon to scrape off the puréed veg lingering on the other side of the strainer. This will help thicken the sauce. Place back over heat and cook until reduced, about 5 minutes.

14. Halve the cooked vegetables (if using baby veg) and arrange on plates. Separate the chicken tender from each breast and add to the center of the plate. Slice the breasts, then transfer all chicken pieces to plates.

15. Drizzle sauce around chicken. Grate truffle over the plates, if using.

Minimal effort — that's our favorite phrase. Do a bit of arranging, brushing, and drizzling, then let the oven take care of the rest of the work for a dinner that's sure to end up on your regular recipe rotation. We use chopped potatoes, carrots, and red onion in this honey mustard chicken recipe, but you could easily replace 'em with baby new potatoes, baby carrots, and shallots (or scallions) to skip the knife work!

Ingredients for Sheet Pan Honey Mustard Chicken

  • 3 large red-skinned potatoes, chopped into bite-size chunks
  • 2 large carrots, peeled and chopped into bite-size chunks
  • 1 large red onion, peeled and sliced into chunky wedges
  • 4 chicken breasts
  • 3 tablespoons honey
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons brown sugar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 medium head of broccoli, broken into florets
  • 20 asparagus spears
  • Small bunch of parsley, finely chopped

Directions for Sheet Pan Honey Mustard Chicken

1. Preheat the oven to 400 degrees Fahrenheit.

2. Arrange the potatoes, carrots, onion, and chicken breasts on a large sheet pan.

3. Mix together the honey, mustard, and brown sugar. Brush this mixture on the chicken breasts. Drizzle two tablespoons of the oil over the chicken and vegetables, then sprinkle on the salt and pepper. Bake in the oven for 25 minutes.

4. Take the sheet pan out of the oven. Use a spatula to turn the vegetables over, then add the broccoli and asparagus. Drizzle on the remaining oil and sprinkle on another pinch of salt and pepper. Place back in the oven to cook for a further 5-10 minutes until the chicken is cooked through and the vegetables are tender.

As much as I love celebrity couples, I love celebrity sibling relationships even more. And Elle and Dakota Fanning are two sisters I've grown up watching since I first saw Dreamer in 2005. Considering Elle Fanning is only five months older than me, and I have a sister of my own, this is one relationship that feels particularly familiar. And while Elle has also watched Dakota Fanning act since we were kids, Dakota just revealed seeing Elle onscreen is just as special for her.

Here's why Dakota & Elle Fanning get emotional seeing each other onscreen.

Elle remembers "sobbing" during one particularly emotional Dakota Fanning movie.

“When Elle’s in anything, it makes me feel it deeper,” Dakota Fanning said at TheWrap’s Power Women Summit on December 3. “She never can fully disappear into a character totally for me as her sister. She obviously does an amazing job, but I’m always gonna see my little sister a little bit.”

And Elle is just as touched by Dakota's roles, and remembers "uncontrollably sobbing" after seeing Now Is Good, a movie where Dakota's character was dying of cancer. “Because it was my sister, I had a real traumatic reaction after that premiere and the screening,” Elle says. “Obviously the acting, but it was something felt on a deeper level.”

“I’m doing this job, I’m an actor because my sister started before me and I watched her,” Elle continues. “I wanted to do exactly what my big sister wanted to do.”

And their movies have also made an impact on everyone who watches them.

When Brit + Co caught up with Dakota Fanning at the world premiere of The Watchers, I had to ask about one of her most iconic movies: Uptown Girls. "I love it," she says of TikTok memes and edits giving the movie new life. "It's nostalgic for people who are kind of around my age, who grew up watching that movie, I think it's like a comfort movie for people. And so I love that people are still revisiting it and loving it. And maybe now that everyone's older [they're] understanding different things about it."

Dakota starred opposite Brittany Murphy, who also had roles in movies like Clueless, 8 Mile, and Girl, Interrupted. Brittany passed away in 2009 when Dakota was 15. "I loved Brittany so much and I still miss her," she says. "So anytime that she has, you know, a moment where people think about her is also nice."

If there’s one recipe you 100 percent need to crank out some seriously festive Christmas dessert ideas, it’s the classic, basic sugar cookie. Some of the most intricately ordained, masterpiece cookies (like pink Christmas decorations, jolly reindeer, and llamas) begin with a simple foundation. Let’s start with this recipe we love for a vanilla-bean-speckled version that’s sure to hold its own under all that royal icing.

Ingredients

  • 1 cup butter (room temperature + cubed)
  • 3/4 cup sugar
  • 2 teaspoons vanilla bean paste
  • 1 egg
  • 3 cups flour

Directions

Using an electric mixer, beat butter and sugar until light and fluffy, then add vanilla bean and egg. Mix until just incorporated. Stop mixer and scrape down the sides of the bowl with a spatula.

Gradually add flour (you may not need the full three cups), and mix until dough forms and pulls away from the bowl. Divide dough into two even discs and wrap in cling wrap, then refrigerate for at least two hours or overnight.

When ready to roll dough, pre-heat oven to 350°F and line baking trays with parchment paper or silicone baking mats.

Using a rolling pin, roll cookie dough between two pieces of parchment paper to 1/4-inch in thickness, and use cookie cutters to cut out cookie shapes.

Transfer cookies to a baking tray using a lightly floured spatula. Refrigerate for 10-15 minutes before baking.

Bake for approximately 15 minutes, or when edges begin to brown. The time will be dependent on size and thickness of cookies.

Allow to cool on tray until warm to touch, then transfer onto a wire cooling rackbefore decorating.
