The Only Grain-Free French Toast You’ll Ever Want to Eat

The hardest part of switching to a grain-free diet is saying goodbye to comfort food staples like French toast. Luckily, Danielle Walker of the blog Against All Grain has you covered. Walker’s been developing allergy-friendly recipes (including grain-free, dairy-free, and paleo) since 2007. Her latest cookbook, Eat What You Love: Everyday Comfort Food You Crave ($25) walks you through simple ways to make all the foods you love in spite of any dietary restrictions.

Walker’s book is broken into sections like breakfast, snacks, lunches, easy dinners, and make-ahead-meals. Each recipe is labeled according to which allergies it helps cater to. For example, cauliflower hummus is egg-free, nut-free, nightshade-free, and friendly to the Specific Carbohydrate Diet.

But back to the toast at hand: Walker’s EatWhat You Love has a new recipe for grain-free French toast that is as luxurious and hearty as it is good for you. You can try the recipe below with Walker’s classic grain-free sandwich bread, or you can use her grain-free banana bread recipe (available in the book) for an extra dose of sweetness.

Banana-Chocolate-Hazelnut French Toast

(Serves 4 to 6)

Ingredients:

  • 2 eggs
  • 1⁄4 cup full-fat coconut milk
  • 1⁄4 cup almond milk
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground nutmeg
  • 1⁄2 teaspoon pure vanilla extract
  • 2 tablespoons ghee
  • 8 slices banana bread (recipe in Eat What You Love), each 1⁄4 inch thick
  • 1⁄2 cup chocolate hazelnut spread, at room temperature
  • 1 banana, cut into 1⁄4-inch slices

Directions:

  1. In a shallow bowl or pie plate, whisk together the eggs, coconut milk, almond milk, cinnamon, nutmeg, and vanilla until combined.
  2. Heat a large skillet over medium heat. Add 1 teaspoon of the ghee and spread it around the skillet as it melts.
  3. Working in batches, dip each side of a banana bread slice into the egg mixture and move it around gently until well coated.
  4. Place the coated bread pieces into the skillet and cook until golden brown, about 2 minutes per side. Repeat until all of the bread slices are cooked, adding ghee to the pan, a teaspoon at a time, as needed.
  5. Transfer the French toast to plates and slather each piece with the chocolate hazelnut spread.
  6. Top with a few slices of banana and serve.

It's no secret that Florence Pugh and Andrew Garfield have crazy chemistry. When the duo presented at the 2023 Oscars, the internet went into a frenzy demanding they star in a rom-com together — and little did any of us know they already had one in the works! I was shocked to find out that Florence Pugh and Andrew Garfield didn't know each other before that famous Oscar presentation — their connection comes across so strongly, I'd believe they'd known each other for a decade!

"No amount of studying chemistry can prepare you for whether it'll work or not," Florence says in a clip shared exclusively with Brit + Co. "It's all down to two energies meeting and wanting to be there for one another."

"If any of us have been in love, you know there's this spiritual element," Andrew adds. "We have a mutual care, a mutual respect, and a mutual inspiration for each other."

That care and understanding between the two actors means their performance was able to become even greater than it already was. "The more and more we work together, the more and more able we were to go to further places, to feel more vulnerable," Florence continues. "I just knew that I would be completely seen and held by this man."

This isn't the first time Florence Pugh and Andrew Garfield have given us insight into how they fostered their connection. At a New York screening for the movie, Flo (as the internet affectionately refers to her), explained that both actors wanted "be great for each other every single day."

"We wanted to protect each other, hold each other, act with each other, live with each other in these moments," she says. "And we were so excited and so ready to come to work every single day so we could do it again and then by the end of the movie, we created a life together...It really did feel [like] magic in the moment, and it was because...we felt safe enough to do that for each other."
