Fire Up the BBQ RN to Make Grilled Corn Nachos

Food52‘s newest cookbook release, Any Night Grilling ($25) by Paula Disbrowe, demystifies the grill and gets the grates ready for more than steak and burgers. Look out, future pit master you, because you will want to grill all the things after reading this book.

The more than 60 recipes provide all the reasons to invite friends over for a grilling party. There are cowgirl strip steaks, beer-can chicken, and Gulf Coast shrimp tacos slathered in hot sauce. But our go-to might just be the grilled corn nachos. Keep reading to find out the recipe, including Disbrowe’s tips on how to perfectly roast corn on the barbecue.

Grilled Corn Nachos

(Serves 4)

Saying yes to nachos for dinner feels like rule breaking in the best way (jalapeños count as a vegetable, right?). This decision usually translates to a small party, with grilled satsuma margaritas for grown-ups and Mexican Cokes for kids. This recipe’s fresh and hearty combination of grilled sweet corn tossed with fresh lime juice and cilantro, black beans, and the sharp flavor of aged Cotija cheese is more satisfying than the standard chips-and-cheese variety. And by the time you’ve prepped the vegetables, you’re ready to place the baking sheet directly on the grate to cook in a closed grill until the cheese has melted—no oven required! Serve with your favorite red or green salsa.

Note on Grilling Corn:The truth is, ears of sweet corn can be grilled in any way that allows the fire to either steam or directly char the kernels until they become tender and juicy. Ultimately, the most important issues are freshness (from the second that fresh corn is picked, its sugars begin converting to chewier starches, so the sooner you eat it, the better) and the intensity of the heat you’re dealing with. If you have a low fire and glowing embers, you can roast the corn in its husk — no need for soaking or removing silk — directly on the coals, turning the cob as needed for even cooking until the exterior is blackened and the kernels are steamy and tender. Removing the blackened husk creates a flurry of ash that might not be ideal for your dining room, but the distinctive, tamale-like flavor that it imparts is worth the mess. On most nights, and certainly for this book, I’m interested in the fastest and easiest approach, so I simply place the shucked, clean cobs over direct heat and use my tongs to rotate them until the kernels are evenly charred, creating a sweet, nutty flavor.

Ingredients:

  • 4 ears of corn, shucked
  • 1 bunch scallions
  • 1 cup small cherry tomatoes, optional
  • 3 tablespoons freshly chopped cilantro
  • 1 tablespoon fresh lime juice, plus more as desired
  • kosher salt
  • 1 (11-ounce) bag regular or blue corn tortilla chips
  • 1 (15 1⁄2-ounce) can black beans, drained and rinsed
  • 3 cups shredded Monterey Jack cheese
  • 1 cup shredded Cotija
  • Mexican crema or sour cream, for drizzling
  • sliced pickled jalapeños, optional

Directions:

1. Prepare a charcoal grill for one-zone cooking and build a medium fire, or heat a gas grill to medium-high. Carefully wipe the preheated grates with a lightly oiled paper towel. Using a grill brush, scrape the grill grates clean, then carefully wipe with a lightly oiled towel again. Allow a grill basket to heat for 10 minutes before cooking.

2. Grill the corn and scallions until charred on all sides, 2 to 3 minutes for scallions, 4 to 5 minutes for corn, and then transfer them to a plate to cool slightly. Place the tomatoes in a grill basket and grill (shaking the basket for even charring) until they begin to blister, about 4 minutes.

3. Thinly slice the scallions and trim the corn kernels from the cob (the OXO Corn Stripper that Amanda Hesser gave me years ago makes quick work of this task). Add them to a bowl with the cilantro, lime juice, and a sprinkle of salt. Stir with a spatula to combine.

4. Cover a baking sheet with aluminum foil and arrange the tortilla chips in an even layer. Top with the corn mixture, black beans, cherry tomatoes, and cheeses. Place the baking sheet on the grill, close the grill, and cook until the cheese melts, about 4 minutes. Drizzle the nachos with crema and top with pickled peppers.

Ingredients (serves 1):

  • 1 ounce cognac
  • 3/4 ounce lemon juice
  • 3/4 ounce strawberry purée
  • 1 dash rose water
  • Ice
  • 1 1/2 ounces Ruffino Sparkling Rosé
  • Fresh strawberries, to garnish

Instructions:

  1. Shake all ingredients together except for the rosé.
  2. Strain into a lowball glass with ice and top off with sparkling rosé.
  3. Garnish with a strawberry.

Lavender Lemonade Rosé Cocktails

Rosé Mimosa from Kim Crawford Wines

Ingredients (serves 4):

For the syrup:

  • 1/4 cup sugar
  • 1/4 cup water

For the cocktail:

  • 1 bottle Kim Crawford Rosé
  • 1/2 bottle prosecco
  • 8 rosemary sprigs, to garnish

Instructions:

  1. In a small saucepan bring the sugar and water to a boil, simmer for 5 minutes until dissolved.
  2. Cool and mix in the rosé, then freeze in a loaf pan, breaking up occasionally until frozen solid.
  3. Process in batches in a food processor until smooth, then freeze again until firm.
  4. Scoop into coupe glasses and top off with Prosecco.
  5. Garnish with rosemary and serve.

We're loving that longer days means we get more fun in the sun. Our favorite outdoor activity right now? Hiking. And there are plenty of trails to explore in the USA. You can rent an RV and make your way through the 50 states — think about all the different environments and nature you'll see!

Drive to a national park and ditch your wheels for a walk, or pack enough camping food and resources for the long haul and head into the woods for days or even weeks. We've rounded up a range of trails that will be kind to your feet (that is, hikes you can complete in a day) and totally worth it (thanks to the breathtaking vistas you'll encounter along the way). No matter where you are in the States, you'll certainly find one of these incredible hiking trails a true inspiration for the rest of your summer.

Overlook Trail and McWay Falls (Big Sur, California)

If you’ve been to Big Sur, you know there really are no bad trails to hike. It’s one of the most picturesque spots on the planet, and by hiking this area, you’ll get to take in plenty of outstanding vistas for little effort. Under a mile long, Overlook is a great hike to go on while enjoying views of the cliffs as well as the 80-foot McWay Falls.

Middle Emerald Pools Trail (Zion National Park, Utah)

At just over two miles, Middle Emerald Pools is a remarkably refreshing hike to take during Utah's sunniest days. Along with the unpaved climb to a sandstone ledge, you'll connect to the other Emerald Pools trails and the Kayenta trail on your way to the pool and waterfall.

Cascade Mountain Trail (Adirondacks, New York)

Northeasterners, you may want to drop want you're doing and make a beeline to the Adirondacks for some time in nature by way of the Cascade Mountain Trail. A little over five miles there and back, this scenic trail is fairly popular in the summer months with a few steep areas and plenty of wildflowers. It's an excellent hike to do solo, your social bubble, or even alongside your family.

Roanoke Trail (Nags Head Woods, North Carolina)

Located within the Nags Head Woods Ecological Preserve, this 1.5-mile roundtrip hike will take you through dune forests, salt marsh, and live oaks until you reach the coast. Gorgeous flowers and an array of vibrant birdlife occupy the area. There are several other trails in the areaas well if you feel this one isn’t challenging enough.

Lassen Peak Trail (Lassen Volcanic National Park, California)

Who wouldn’t want the chance to hike around a volcano? It’s only five miles out and back, so it’s definitely doable even for a less experienced hiker. NorCal summer weather stays fairly cool with highs just in the 70s, so a hike up this active volcano won’t leave you too hot. Plus it’s clearly an out-of-this-world experience.

Watkins Glen Gorge Trail (Watkins Glen State Park, New York)

This hike is just a bit over a mile each way, so it’s ideal for those who don’t exactly hike on the regular. It’s also best left for a hot day since it offers plenty of shade for cooling off. The trailhead starts at a cave then takes you past 19 different waterfalls, a feature few other trails could boast.

Reed Lakes Trail (Kenai Fjords National Park, Alaska)

Looking for an all-day, challenging hike with a huge payoff for your fitness *and* Instagram feed? Look no further than the Reed Lakes Trail, an nine-mile roundtrip hike where you'll gain thousands of feet in elevation through meadows, boulder fields, and up into the mountain. You'll finish with some jaw-dropping panoramic views.

In our opinions, these are some of the best hikes in the US, and even if they can be done in a day, that doesn't mean your explorations have to stop there — there's usually a town nearby with some local cuisine. So figure out which of these hiking trails you'd like to conquer and go for it!

This edible crescent-roll cornucopia is our way of making a normal cheese boardmore festive — and definitely more fun — during the holiday season. Our go-to this time of year is a massive cheese plate that can stand alone and be the main attraction, or the starter for a larger meal. Press on for the surprisingly easy steps to braid a breaded cornucopia.

Materials + Tools:

  • 1 roll of tin foil
  • 2 packages of crescent rolls
  • 1 egg (for egg wash before cornucopia goes into the oven), optional

Instructions:

Start by sculpting tin foil into the shape of a cornucopia (it looks like a cone with an upturned tail). Pro tip: Lightly pack tin foil so it's easier to remove later from your baked cornucopia. Crescent rolls should be buttery enough that this shouldn't be difficult.

Pop open the crescent rolls and cut the triangles into strips. Pinch together the ends of strips to make strips longer.

Braid crescent roll strips. You can make these as fancy as you want. Not a braiding pro? Skip this step and leave those strips alone.

Wrap tin foil cornucopia with braids/strips. Make sure you cover all the tin foil. Leave a little wiggle room at the opening of the cornucopia, so that when you’re done baking you can pull some of that tin foil out.

Use any extra dough to cover the bottom of your cornucopia. Pinch the sides and anchor those braids/strips in.

Brush on egg wash before placing your cornucopia in the oven. Bake at 350 degrees Fahrenheit for 20 minutes. Take out of oven and cover spots of cornucopia that are already golden brown with extra tin foil. Bake for another 20 minutes at 250 degrees Fahrenheit.

Let it cool down until it’s easy to handle. Remove tin foil.

Place cornucopia in corner of your cheese plate. Arrange cheese on your serving tray.

Add crackers — we like to have two or three options.

Don’t forget to fill up your cornucopia. It's called "the horn of plenty" for a reason. Fill with fresh fruit like grapes, apples, and pears.

Add nuts like walnuts and pistachios to fill in any empty spaces. Garnish with fresh herbs like rosemary and sage to finish it off.
