Celebrate St. Patrick’s Day With a Guinness Dark and Stormy Cocktail

Planning on celebrating St. Patrick’s Day? This year you can ditch the green beer in favor of something altogether more refreshing — a Guinness dark and stormy cocktail! Guinness is still the best-selling alcoholic beverage in Ireland, and with its dark good looks and tangy/bitter taste, it deserves to be popular year-round. But did you know that the stout is not just great for drinking straight, but also to use as a mixer in cocktails and even added to your bakes and ice cream? If you don’t believe me, try making yourself this utterly bewitching cocktail. Sláinte!

Ingredients:

For the blueberry syrup

  • 3 1/2 ounces fresh blueberries
  • 2 ounces Demerara sugar
  • 3 ounces water

For one cocktail

  • Guinness Draught, chilled
  • ginger beer, chilled
  • 2 ounces blueberry syrup (or less, to your taste)
  • 2 ounces dark rum
  • juice of a medium lime
  • blueberries and lime slices to decorate

Instructions:

  1. Put the blueberries, sugar, and water in a saucepan. Bring to a simmer and then lightly crush the blueberries. Cook until the sugar is dissolved.
  2. Strain the blueberry syrup into a clean jar — it can be kept in the fridge for up to a week and used in cocktails or to drizzle over desserts or waffles.
  3. Squeeze the lime juice into a clean jar or large glass.
  4. Add two ounces of the blueberry syrup, or add less if you prefer a tangier cocktail.
  5. Add the rum and stir.
  6. Pour into a tall glass filled with ice. Marvel at the vibrant color…
  7. Add the Guinness, filling about halfway up.
  8. Top with the chilled ginger beer. Stir well and decorate with lime slices and blueberries threaded onto cocktail sticks.

The most obvious difference between Baileys coffee and Irish coffee is that Baileys coffee uses Baileys Irish Cream to make the recipe, whereas Irish coffee is made using whiskey and brown sugar. Both drinks use hot coffee as the base and are garnished with fresh whipped cream.

Because of this, Baileys coffee is a bit creamier and milkier than traditional Irish coffee.

The standard recipe for Irish coffee calls for 1.5 ounces of Irish whiskey, which equates to one shot. You can always customize the ratio, though, adding less or more whiskey as you please.

  • 1 cup hot coffee
  • 1-2 shots Irish whiskey (depending on how boozy you want it!)
  • 2 teaspoons brown sugar (you can also adjust this amount based on your preference for sweetness)
  • Freshly whipped cream
  • Cinnamon or cocoa powder, optional for garnish

  1. Brew a hot cup of coffee how you like it. Just make sure it's fresh for optimal flavor and authenticity!
  2. In a mug, add the brown sugar and hot coffee, stirring until dissolved. Make sure you leave a little bit of room at the top for the booze!
  3. Next, add the Irish whiskey to the mug. Stir.
  4. To make the whipped cream, vigorously whisk a small amount of heavy whipping cream in a separate mug or bowl. You could use store-bought whipped cream, but it just isn't the same as fresh whipped cream. This version is a lot thicker and tastes less processed in the end.
  5. Once whipped, spoon the whipped cream over the drink to create a solid layer over top of the mug.

These sweet treats will shine among the rest of your Christmastime tablescape, and they are super easy to make. Plus, they'll pair well with just about any Christmas dessert. Just combine your paleo-friendly ingredients to prep the dough, let it sit overnight, then bake for ten minutes! The best part about this recipe is of course, all of the fun holiday-time shapes you can cut. Consider this recipe your go-to for healthy cookies, though, since you can make them year-round in any shape you like. Let's get to decorating!

Ingredients for Paleo Christmas Cookies

For the cookies:

  • 1/2 cup grass-fed salted butter, softened
  • 6 tablespoons raw honey
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda

For the frosting:

  • 6 tablespoons coconut butter or coconut manna
  • 1/4 cup cacao butter
  • 1-2 tablespoons honey
  • Plant-based food coloring
  • Vegetable-dyed sprinkles, for topping*
* Look for vegetable and fruit-dyed food coloring and sprinkles in natural grocery stores or online, and avoid artificial colors to keep these cookies Paleo friendly!

How to Make Paleo Christmas Cookies

  1. Add the softened butter and honey to a large mixing bowl. Cream the mixture together using a handheld mixer until it is smooth. Add in the eggs, vanilla extract, and almond extract and whisk until they are well combined. Pour in the almond flour, coconut flour, and baking soda, and continue mixing until the batter has come together smoothly.
  2. Separate the dough into two, and place each one on top of a piece of plastic wrap. Roll each dough into a ball, then flatten to a thick disk, cover completely with the plastic wrap, and place in the refrigerator to firm up for at least 2 hours or overnight.
  3. Preheat the oven to 350 degrees F. Remove one of the dough discs from the refrigerator, unwrap the plastic and place the dough on top of a piece of parchment paper, then top it with another piece of parchment paper. Use a roller to flatten out the dough to about 1/4 to 1/2 of an inch thick. Work quickly with your favorite Christmas cookie cutters, and use a thin spatula to lift the cut cookies onto a baking sheet lined with parchment paper.
  4. Bake the cookies in the oven for 10 minutes. Let them cool for a few minutes, then place on a wire rack for further cooling. Gather the leftover scraps back into a ball in the plastic wrap or parchment paper and place it back in the refrigerator, while working with the other piece of dough. Do this in batches to keep the dough from getting too warm and so you don’t overcrowd the baking sheet.
  5. While the batches of cookies are baking, use a small saucepan to lightly melt the coconut butter and cacao butter together over low heat on the stovetop. Remove the pan from the heat when the ingredients have just melted together. Stir in the desired amount of honey, then set aside to cool and thicken up slightly. If you are using food coloring, add in the desired amount into the frosting mixture (1-2 teaspoons of green or red should do the trick). If you plan on only using white frosting, only use a small amount of honey, as it can make the frosting an off-white or light brown color.
  6. After the cookies have completely cooled, decorate them with the frosting and sprinkles as desired. If you don’t have any professional piping tools, an easy fix is to place the frosting in a plastic sandwich bag and remove all the air when sealing the top. Cut a tiny tip off one corner of the plastic bag, then gently squeeze and pipe over the cookies. Use one plastic bag or piping bag for each color of frosting. Top with corresponding sprinkles and enjoy!

Ingredients for Rainbow Donuts

  • Plain glazed donuts
  • Rainbow sprinkles
  • Donut icing
  • Shredded coconut

Directions for Rainbow Donuts

  1. Cut your donuts in half using a sharp, serrated knife.
  2. Set your icing in a shallow dish. Dip the tops of each donut half into the icing.
  3. Starting with your pink (or red) sprinkles, line the outside edge of the donut, creating the first "arc" of the rainbow.
  4. Continue adding sprinkles in rainbow order until the whole donut is covered.
  5. Add a little more icing to the top of the donut ends and place a pinch of shredded coconut on top for the "clouds"!

Try to choose donuts that have a very round shape, so the rainbows turn out with more of an arc.

Be careful not to leave your donuts sitting for too long after you’ve iced them. You’ll need the icing to still be wet/tacky when you add the sprinkles so they stay on securely. Plus, you want 'em to look flawless for all the Instagram pics! 

Avoid making your rows of sprinkles overly thick or else you won’t be able to fit in all of the colors of the rainbow. We need the full spectrum!
