DARK CHOCOLATE ORANGE PISTACHIO TRUFFLES

PREP TIME: 10 minutes plus 30 minutes of freezing

COOKING TIME: none

TOTAL TIME: 40 minutes

YIELD: 16 truffles

  • 1/3 cup sugar- and dairy-free dark chocolate or chocolate chips
  • 1 cup almond flour (more as needed)
  • 3 tablespoons monk fruit sweetener (optional)
  • 2 tablespoons raw cacao powder
  • 2 tablespoons ground golden flaxseeds
  • Pinch of salt
  • Juice and zest of 1 large orange
  • 1/2 cup almond butter
  • 1/3 cup toasted unsalted pistachios, chopped
  • Line a small baking sheet with parchment paper and set aside.

To create a double boiler to melt the chocolate chips, take a large saucepan, place it over medium-high heat, and add 2 inches of water and bring to a boil. Then place a medium glass or ceramic mixing bowl on top of the saucepan, making sure it is not touching the water in the saucepan. Place the chocolate in the bowl and let it melt, stirring frequently with a spatula to evenly distribute the heat and help it melt faster. Once the chocolate is melted, remove from heat.

Combine almond flour, monk fruit, cacao powder, flaxseeds, salt, and orange zest in a mixing bowl. Add the almond butter and melted chocolate and stir until smooth. Adjust the consistency, if needed, with extra almond flour if too soft and runny or with a little orange juice if too dry and hard. You want it to feel like cookie batter, sticky enough to form into a ball.

Scooping the mixture with a teaspoon, form into small balls. Roll in chopped pistachios and place in the freezer for about 30 minutes to firm up before serving.

Store in an airtight container in the refrigerator for up to a week or in the freezer for up to a month.

GRILLED TEMPEH SATAY WRAPS

PREP TIME: 10 minutes

COOKING TIME: 15 minutes

TOTAL TIME: 25 minutes

YIELD: 3 servings

FOR THE SKEWERS

  • 2 tablespoons reduced-sodium tamari or soy sauce
  • EVOO spray
  • 2 teaspoons sriracha or other chili sauce of choice (or to taste), divided
  • 1/2 teaspoon each of ground turmeric and cumin
  • 1 8-ounce package tempeh, cut into 1-inch cubes
  • 2 medium yellow squash or zucchini, cut into 1-inch pieces
  • Sea salt and freshly ground black pepper, to taste
  • 3 wooden skewers, soaked in water

FOR THE SATAY SAUCE

  • 3 tablespoons unsalted peanut butter
  • 1/2 teaspoon finely grated fresh ginger
  • 1 garlic clove, minced
  • 1 teaspoon liquid aminos or tamari sauce
  • Juice of 1 large lime (or to taste)

FOR THE WRAPS

  • 6 large Swiss chard leaves, trimmed (or 3 100% whole-wheat wraps)
  • 1 small red onion, thinly sliced
  • 2 small cucumbers, cut into matchsticks
  • 2 cups mixed baby spring greens
  • 2 tablespoons each of chopped fresh mint and cilantro
  • Whisk tamari, EVOO, sriracha sauce, turmeric, and cumin in a small bowl.

Place tempeh and squash in a mixing bowl and toss with the tamari mixture, coating evenly. Season to taste with salt and pepper, and thread, alternating, onto the skewers. If time permits, let marinate for 10 to 15 minutes.

Heat a grill pan over medium heat, then reduce to medium-low. Add the skewers and grill, turning often, until golden and grill marks appear. You may need to spray the skewers with EVOO to keep them from sticking to the pan. Set aside.

Whisk all satay sauce ingredients in a small bowl until smooth, adding just enough water to get the desired consistency; adjust seasoning to taste and set aside.

Remove the grilled tempeh and squash from the skewers and divide among the Swiss chard leaves. Top with the onion, cucumbers, and baby greens and drizzle with the sauce. Scatter mint and cilantro over the filling and roll up tightly. Cut each wrap in half and serve.

SWEET POTATO BEAN BURGER

PREP TIME: 15 minutes

COOKING TIME: 30 minutes

TOTAL TIME: 45 minutes

YIELD: 4 servings

  • 2 medium sweet potatoes
  • 1 tablespoon ground flaxseeds
  • 3 tablespoons water
  • Zest and juice of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeds and pith removed, finely chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon chipotle adobo sauce (not the pepper)
  • 2/3 cup rolled oats
  • 1 cup canned no salt added black beans, rinsed and drained
  • 4 tablespoons chopped cilantro
  • Salt and freshly ground black pepper, to taste
  • Oat flour or cornmeal, to dust

OPTIONAL GARNISHES: Tomatoes, sliced; Avocado, sliced; Pickles, sliced

Pierce the sweet potatoes with a fork and microwave on high until tender (7 to 10 minutes), turning over halfway. Scoop out the flesh, mash roughly, and set aside to cool. Alternatively, steam or roast the sweet potatoes.

Mix flaxseeds with the water in a small bowl and let the mixture thicken, 4 to 5 minutes.

Place lime zest and juice, cumin, paprika, onion, jalapeño, garlic, chipotle sauce, and oats in a food processor and pulse until ingredients begin to come together. Add black beans and cilantro, season to taste, and pulse a few times to incorporate.

Transfer the mixture to a mixing bowl and shape into four patties with wet hands, as mixture will be sticky. Dust the patties with some oat flour and place in the freezer for 10 to 15 minutes.

Preheat the oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat. Arrange the chilled patties on the prepared baking sheet and bake for about 15 minutes, then flip over and continue baking for another 5 minutes.

Recipe Notes

  1. Serve on a sprouted whole-wheat bun or on a bed of greens with Cashew Ranch Dressing (page 207).
  2. For some crunch, add 2 to 3 tablespoons soaked sunflower seeds to the burger mixture.

CHOCOLATE HAZELNUT CRUST WITH BERRIES

NEURO 9 ITEMS: hazelnuts, pistachios, berries

PREP TIME: 30 minutes

COOKING TIME: 10 minutes

TOTAL TIME: 40 minutes

YIELD: 16 servings

  • 3 cups roasted unsalted hazelnuts
  • 8 large medjool dates, pitted (9 if they are small)
  • 3 tablespoons cacao powder or unsweetened cocoa powder
  • Pinch of sea salt

FOR THE COCO-HAZELNUT BUTTER

  • 3 cups roasted unsalted hazelnuts
  • 4 tablespoons cacao powder or unsweetened cocoa powder
  • 3 tablespoons monk fruit sweetener (more to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt

TOPPINGS: Raspberries, blueberries, strawberries, blackberries, pistachios (crushed), and mint leaves

Place raw hazelnuts in a food processor or high-speed blender. Pulse until they are processed into a meal. Place the meal in a dish and set aside.

Place the dates in the food processor and process until small bits form a ball. Stop the processor and add the cacao or cocoa, salt, and half of the hazelnut meal. Pulse until mixed together. Continue adding the hazelnut meal little by little until the dough gets more formed and sticks together.

Once you have a dough, line an 8-by-8-inch (for a thicker crust) or 11-by-7-inch (for a thinner crust) baking dish with parchment paper and press the mixture into the dish to make an even layer. Place in the refrigerator or freezer to harden into a crust.

FOR THE COCO-HAZELNUT BUTTER: Preheat the oven to 350°F and add hazelnuts to a baking sheet in a single layer. Roast for 8 to 10 minutes just to warm the natural oils and loosen the skins. If raw, roast for a total of 12 to 15 minutes. This will make it easier to blend into butter.

Remove hazelnuts from the oven and cool slightly. Then transfer to a large kitchen towel and use your hands to roll the nuts around and remove most of the skins. You want to get as much as possible off for a creamier butter.

Leaving excess skin behind, add hazelnuts to a high-speed blender. Blend on low until a butter is formed, about 8 to 10 minutes total, scraping down the sides as needed.

Once the hazelnut butter is creamy and smooth, add the cacao or cocoa powder, monk fruit sweetener, vanilla, and salt and blend well. Taste and adjust seasonings as needed, adding more vanilla if desired.

TO ARRANGE: Take the hazelnut crust out of the refrigerator or freezer and roughly spread 2 to 3 tablespoons of the coco-hazelnut butter over the crust (the goal is to make the fruit stick to the crust). Arrange the berries in any pattern you like. Drizzle 2 to 3 tablespoons of the butter on top of the fruit (you may need to warm it up slightly to make it drizzle at this point). Sprinkle crushed pistachios on top and place mint leaves around. Serve by slicing squares diagonally.

Fans of Fourth Wing are on pins and needles because Rebecca Yarros just announced she's finished writing the third book in the Empyrean series! It's us, we're fans — along with over half of BookTok.

We can't believe we're getting closer to reading more about Violet Sorrengail's journey, but we know you have a ton of burning questions about the release date for Book No. 3.

We may not have all the answers, but we've done a little digging to share as much as we can because who doesn't want to know what Rebecca Yarros has been up to?

I'm new to the Empyrean series. Are "Fourth Wing" and "Iron Flame" really worth reading?

I'm not going to lie to you. The editorial team, including myself, are extremely biased about Fourth Wingand Iron Flame. From my perspective, I think these are great books for anyone who had the pleasure of growing up during the great Harry Potter era and moved on to watchingGame of Thrones and House of Dragons.

Did she announce the name of book no. 3?

YES! Book No. 3 is titled Oynx Storm.

Knowing what we do about the manifestation of Violet's powers, I think this could hint she's going to play an even larger role in the series. According to a fan theory shared on TikTok(via Empyrean Riders), it's believed that Violet and Xaden Riorson are actually gods. Stay with me here.

Empyrean Riders noted that Violet's last name means heavenly and that she's able to control time thanks to her connection to the young dragon Andarna (I love her so much!). That sounds pretty god-like to me.

And when asked which two Taylor Swift songs describe Onyx Storm, Rebecca Yarros chose "Who's Afraid of Little Old Me?" from The Tortured Poets Department and "So It Goes..." from Reputation. "Who's Afraid of Little Old Me?" is one of Taylor's most powerful songs and definitely translates the idea that Violet's powers are going to be stronger than ever, while "So It Goes..." is equal parts suspense and seduction, and is TOTALLY about "all the pieces fall right into place" to get together with the right person.

There's so much more to unpack so I suggest grabbing a yummy snack while you fall down the rabbit hole. All I'm sure of is that Onyx Storm is going to leave our emotions in shambles just like Fourth Wing and Iron Flame did.

When did Rebecca Yarros announce she's done writing book no. 3 in the series?

She wrote, "(Pic from one of the very many locations in which this book was written)," towards the end of the caption before adding a few relevant hashtags to it.

When will Onxy Storm be available for purchase?

Rebecca Yarros exclusively told Good Morning America that fans can expect the book to hit shelves January 21, 2025! That gives us a little over six months to prepare our emotions for what's sure to be a storm of a book.

She said, "There will be politics, new adventures, old enemies and of course, dragons." There's no way she could forget the dragons because I'd willingly riot over them. They deserve to have their stories told forever.

As luck would have it, Cosmopolitan received an exciting first look at what's to come in Onyx Storm. The excerpt begins with Violet realizing the Venin have found their way into Basgiath War College and are wreaking havoc. Alongside Rhiannon, Sawyer, and Ridoc, she races to stop the Venin from releasing Jack Barlowe from his prison cell.

However, Violet's shocked when she discovered one of the "dark wielders" has a long silver braid that closely resembles her own. Before she can fully react, the woman disappears. According to Screen Rant, there are possible theories about why Violet saw her and what this means for her growing power.

Towards the end of the excerpt, Violet discovers the Venin want to capture her too. Also, Xaden makes his long-awaited appearance and it's clear their playful banter in the face of danger hasn't changed. That he hasn't fully changed into the Venin Violet's used to seeing.

I officially can't wait to read the rest of the book in January!

TODAY received an exclusive look at the cover for Onyx Storm and it doesn't disappoint! Unlike its predecessors, it appears Rebecca Yarros is hinting that darker events will take place.

Fans of the Empyrean series aren't the only ones who are excited to see what fate has in store for our favorite characters though. In a statement to TODAY, Rebecca revealed how elated she is to be working on the series again. "It's amazing to be back with these characters again. She also said, ""I can't wait for readers to see what Violet, Xaden, and the rest of the quadrant have in store for them in Onyx Storm!"

Our favorite dancing queens (Meryl Streep included) might be returning to the big screen for a third encore of Mamma Mia! and we’re already rewatching the first two movie musicals in preparation.

In an interview with Deadline in May of 2023, Mamma Mia! franchise creator and producer Judy Craymer said a third movie musical is in "earliest stages." She also shared that she has come up with a way to bring Meryl Streep back again.

"I don't want to over-egg it," she said of the unofficial news, "but I know there's a trilogy there…and I do think Meryl should come back, and if the script is right, she would, I think, because she really loved playing Donna."

"Of course I want to do it," Streep said during the 2024 Cannes Film Festival (via Deadline). Sounds promising to us!

Is Mamma Mia 3 happening?

Yes, Mamma Mia 3 is in its early planning stages! Christine Baranski just told The Hollywood Reporter that she's met with producer Judy Kramer, and that Kramer has plans for the third movie. "She gave me the narrative plotline of how it’s going to happen," Baranski says. "That’s all I can say! But, it’s not like, 'Oh, I wish it could happen!' Judy Kramer makes things happen. She made number two happen, and it was a phenomenal hit. I wouldn’t put it past Judy Kramer to get everybody back together."

A third installation was first mentioned way back in 2020, during a Collider interview with Mamma Mia! star Amanda Seyfried. Seyfried said she was on board — and at the time, she thought the rest of the star-studded cast would be too.

"Listen, every single person in that movie would say yes in a heartbeat because we want to hang out with each other," Seyfried told Collider at the time. "That's what we talked about last time, like did we ever think that we'd end up here again on an Island in Croatia?"

When will Mamma Mia 3 come out?

We don't have an official answer about when to expect this highly anticipated sequel. The project is in the "earliest stages," according to creator and producer, Judy Craymer. Cher also revealed to Entertainment Weekly that everyone is "talking about it," but she doesn't "know when they're going to do it."

While nothing's been made official, Amanda Seyfried just said something that made my heart skip a beat. She told ABC News she loves Sabrina Carpenter's music and dropped this admission: "If Sabrina Carpenter wants to play my daughter, I’ll make it happen."

But before she admitted that, the actress said something else that made me raise my eyebrows. "Everybody says it’s gonna happen, but I mean, I haven’t seen a script."

Cher is also eager to return to the beloved franchise and is rooting for Meryl to make an appearance again. "I keep saying, 'Meryl, you've got to come back,'" she said (via Entertainment Weekly). She also said she's told her, "'It'll be fun. You'll have a good time. You'll be able to sing.'"

I don't know what it'll take, but hope someone gets a script in Amanda Seyfried, Cher, and Meryl Streep's hands ASAP!

There's nothing ~normal~ about how much we love Normal People's Paul Mescal & Daisy Edgar-Jones. While it turns out we're not getting a Normal People season 2 (yet), the two actors are starring in some of 2024's biggest blockbusters (Twisters and Gladiator II, namely), and we've been soaking up their presences ever since.

Paul recently exhibited his ongoing friendship with Daisy at the Gladiator II premiere in Los Angeles. While he approached Brittany Broski on the red carpet for an interview, he recognized her from her recent 'Royal Court' interview with Daisy:

"You were with Daisy!" he chimed in excitingly. We just love this power duo!

Daisy Edgar-Jones also revealed that she's remained incredibly close to Paul Mescal after their time on Hulu's Normal People. "Paul is one of my lifetime best friends," she says. "He’s an incredibly grounded person and I am too, I think, so it’s nice to be able to have those touchstones and those people you can laugh about it with and be lighthearted with. We met when I was 20 and Paul was 22; I’m so excited to see where we’ll be at 32, 42, and what life will bring us."

But the coolest thing is that not only is Normal People special for Paul and Daisy, but they've also been able to see the effect of the show on its fans.

"The thing I love people saying the most is, 'It made me contact my ex,'" Daisy continues. "Especially when much older people say, 'I just wanted to reach out to the person I was with when I was 17 just to say you were a big part of my history and thanks for being part of who I am, the tapestry of my life.' And that I really love, because I’m a massive romantic."

Daisy recently revealed they bonded over their training for Twisters and Gladiator II.

"I did running lessons — isn’t that crazy?" she told Variety. "Actually, Paul [Mescal] and I were laughing about it, because he was training for 'Gladiator II' and I was training for 'Twisters,' and obviously he had to be huge and I was like, 'Don’t worry, I’m going to be right up there with you.'"
