Make This Holiday Leftovers Breakfast Recipe Should Look like the Morning After

Can we just sit back a moment and admire this timeless combination of ham, potatoes and eggs? Perfect as this breakfast is, with crispy shredded ham, crunchy fried potatoes, dippy eggs and a few fresh tomatoes in there to make it healthy (okay, a tiny bit healthier), this dish will pretty much take any leftovers you’ve got on hand during the holidays. Got peas? Add them! Or sausage? Definitely (why didn’t we think of that before going into the kitchen?!). We’re even willing to bet that a smothering of leftover gravy would work after Thanksgiving. Just throw it all in the pan and enjoy a breakfast that you’ll probably want to serve for dinner too!

Ingredients:

Serves 3

— ¾ cup cooked ham (we used ham hock), shredded

— 1 onion, peeled and diced

— 1 pound leftover cooked potatoes, chopped into bite-size chunks

— 3 large eggs

— 1 Tablespoon butter

— 3 Tablespoons vegetable oil

— ¼ teaspoon salt

— ¼ teaspoon pepper

— 1 ½ teaspoons chopped fresh parsley

— 8 cherry tomatoes, cut in half

Instructions:
1. Preheat oven to 400 degrees Fahrenheit.

2. Heat one tablespoon of oil and butter in an oven-proof skillet. Add the onions and cook for five minutes until softened. Remove from pan and place in a bowl.

3. Add the remaining oil to the pan and heat on a high heat. Add the potatoes and cook for 6-8 minutes until lightly browned. Stir through the onions, half the shredded ham and the salt and pepper.

4. Make three wells for the eggs. Crack the eggs into the wells and transfer to the oven. Bake for 5-10 minutes until the whites of the eggs have almost set, then sprinkle the rest of the ham on top of the potatoes. Bake for a further two minutes until the ham is warmed through and the eggs are cooked.

5. Sprinkle on parsley, chopped tomatoes and black pepper.

The cast and crew of Severance are finally returned to the office after months of waiting for production to resume, and we finally have a first look from the new season! Apple TV+ just posted a teaser image from season 2 of cast member Adam Scott holding a bunch of blue balloons. We don't quite know the significance of this picture to the plot, but we do know we are pumped to see it!

Executive producer, Ben Stiller, spread the news about the Apple TV+ series’ return back in January 2024 with a quote tweet simply commenting, "back to work.”

The cast and crew began filming season 2 on October 3, 2022, with production shutting down on May 8, 2023. Since SAG-AFTRA has struck a deal with AMPTP studios, it’s “back to work” on the Severance set per executive producer, Ben Stiller.

Is Severance creepy?

Severance follows the horrors that come with working in an office, so yes, it’s creepy. Just kidding (sort of)!

The surreal tone of Severance definitely makes it creepy. There’s an ongoing feeling that someone – or something – is constantly keeping watch and wants to gain control. This tone, paired with the series’ clean, manicured (yet cold) visuals, chalks it up to be fairly disturbing.

The characters in the show become increasingly aware of this cryptic, surveillant presence, and the building tension definitely adds to the show’s creepiness. It’s also pretty existential, which is the creepiest feeling of them all.

Was Severance canceled?

Severance was not canceled. (Thank goodness!) The production was put on pause due last May to 2023’s writers strikes, but it’s up and running now. We are enthused about the show’s return!

In all honestly, all I look forward to during the holidays (other than my fam) is the pie. There's pumpkin pie. Apple pie. Chocolate pie. Sweet potato pie. But more than any other dessert, pecan piejust gets me. I'm salivating as I'm thinking about it!

Anywho... making an entire pecan pie can become a whole ordeal very quickly. That's where these delicious pecan pie bars from Chahinez with Lifestyle of a Foodiestep in. They're simple to make, plus provide the ideal eating experience – pecan pie bars easily qualify under finger foods, and they are downright addictive.

Ingredients For Easy Pecan Pie Bars

For the shortbread crust:

  • ½ cup butter
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoon cornstarch

For the pecan pie filling:

  • 2 eggs
  • ¾ cup brown sugar
  • ½ cup light corn syrup
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon cornstarch
  • 1 & ½ cup pecans chopped

How To Make Easy Pecan Pie Bars

  1. Preheat the oven to 325 F, then line an 8x8 pan with parchment paper and set aside.
  2. In a large bowl, add in the flour, salt, cornstarch, and mix. Add in the cold butter and work it into the dough with your hand or a pastry cutter until cookie dough forms. Press it onto the prepared baking pan and bake for 20 minutes.
  3. In a separate large bowl, mix the eggs, brown sugar, light corn syrup, heavy cream, salt, vanilla extract, and cornstarch until combined. Stir in the pecan pieces.
  4. Once the crust is done baking, pour the pecan pie filling on top of the crust and bake for 30-35 minutes. The edges will brown a little, and the center will be barely jiggly.
  5. Remove from the oven, and let cool completely before transferring to chill in the fridge for at least 30 minutes. Slice the bars and serve.
