This Woman’s Entire Job Is to Create New Ben & Jerry’s Ice Cream Flavors

Women in the food industry are making the world way more delish. From launching a nationwide popcorn snack from her family garage with her kids to opening a successful pie shop, women leaders are paving the way for foodies to take their culinary desires to the next level. In this week’s entry in our How to Quit Your Day Job series, Natalia Butler, a Ben & Jerry’s Flavor Guru, gives us a peek inside the Ben & Jerry’s Flavor Lab and details how she takes her sweet ideas from start to finish.

Meet the Ben & Jerry’s Flavor Guru: Natalia Butler

Ben & Jerry’s Flavor Guru Natalia Butler is the mastermind behind some iconic tastes, including the Ben & Jerry’s Tonight Dough pint slice. The new mom almost didn’t apply for her dream job when she saw a Ben & Jerry’s job listing pop up, but now Butler’s passion for ice cream is her daily routine. Here, she shares how she turned her master’s degree in food science into a fantastic career.

Brit + Co: What’s your morning routine?

Natalia Butler: I wake up, drive 40 minutes to work, make myself a nice breakfast (I love mini egg/sausage quesadillas with hot sauce or sriracha), make myself a cold mason jar of hibiscus tea, and then get to my computer and start producing.

B+C: How did you land your job as a Flavor Guru at Ben & Jerry’s?

NB: I went to school for chemistry back in Puerto Rico, where I am originally from. I pursued my master’s in food science, technology, and nutrition from the University of Massachusetts Amherst, then worked as a cider maker for a cider company here in Vermont. Then for 22 months, I was an animal nutraceuticals product developer, since my master’s is part food biocomponents (which means how food can be useful as medicine). One day, I saw the job posting for Ben & Jerry’s. I originally had no intentions to move, as my career was growing, but I applied and said, “Hey, this is my dream job.” I said to myself, “I might not get it, but if I don’t play, I won’t win.” After a set of interviews, I got a call from the recruiter that, out of hundreds of applicants, I got it. I cried in the parking lot for about 30 minutes out of happiness. Taking the job at Ben & Jerry’s was the best decision I have ever made.

B+C: What is something that people don’t know about your work that you wish that they did?

NB: It is all fun and games until you realize how much work there is behind bringing an ice cream pint, mini cup, bulk, or pint slice to life. It takes so much effort! For starters, you are thinking into the future; then you have to think this is done by hand — how would this work on a big scale? Then you think, “Are these chunks and swirls going to cooperate?” Once you get over that part, then lots of paperwork comes next. There are systems in place where we have to track and input lots of data. If you make a mistake, it’s time to start from scratch.

B+C: What does your typical workday look like?

NB: It involves a little bit of everything, like playing with food (we are all foodies, so we are constantly cooking or making something in the kitchen), being in meetings, doing specification work and paperwork, proofing labels, and speaking to visitors. It all depends. We are always busy. [There’s] never a dull moment in my day-to-day.

B+C: Can you walk us through the process from flavor idea to final product?

NB: It starts by looking at a little bit of research and see what is trending or what would be trending. We get together with marketing and consumer insights, brainstorm, and then go to the kitchen — or start sourcing new ingredients if it involves that. Sometimes, we just go in the kitchen and play with what we have. The ice cream goes through a tasting with another Flavor Guru. If it passes, we present to marketing. If it passes marketing, then the next step is thinking how are we going to make it happen at a bigger factory scale, as the only thing that has happened so far is making small six-pint batches in the kitchen. After that, it goes into specifications and [through] a lot of paperwork, and then it makes it to the factory line and a shelf near you. It takes about 18 to 24 months to come up with a flavor from concept to final product.

B+C: What do you love about your job?

NB: The one thing I really love about my job is I get to show up as my very true self. I love that I have a very supportive and energetic team with lots of knowledge and that we get to exchange what we know. We all have our strengths, and we are all very happy to share them with each other. I love that I go to work to make ice cream. I love that I work with amazing people who are passionate about Ben & Jerry’s and what it represents. Ben & Jerry’s has a three-part mission that stands for social, economic, and product focus. It includes equity, linked prosperity, and that the product is made in the best way possible by helping farmers and sustainability. This on its own is very important — knowing you are doing good one pint and one cone at a time.

B+C: What’s been your favorite flavor to develop, and why?

NB: I work mostly with novelties, like our pint slices and mini cups, which are one serving. Now, how do you get to show Ben & Jerry’s in such a small amount of ice cream? Every flavor is always very challenging and exciting. I create mini cups for Japan, which are always fun. They are adventurous, but we also want them to have the Ben & Jerry’s experience that you get here in the US. One great product to develop for Japan has been Ginger Rum, which is a ginger rum base with lime candies. It’s very different from our caramels and chocolate found in the US. For pint slices, Tonight Dough was by far the hardest slice to be developed and to deliver the pint experience in a handheld form.

B+C: What advice would you share with women who are interested in pursuing a career like yours?

NB: I am all about empowering women to pursue a career in science — even more so in food manufacturing. This is a very male-oriented industry. We need more of us women here. It hasn’t been easy for me. I was in the beverage industry before, which is very male-oriented. I realized that after doing my masters I had nothing to prove to anyone. I understood my worth and trusted that my knowledge would take me where I am needed. Don’t get discouraged. Keep fighting for what you believe in. Once you understand how important what you bring to the table is, people will start to listen to you. Don’t lose your voice. Stand for what you believe is right.

The obvious answer is a cold red, white and blue milky, sugary slap in the face. In a good way. Keep reading for three ways to get your fix. We've got a classic cone, a layered milkshake and a childhood recipe for ice cream “soup" (you all know what that is).

— red and blue gel food coloring

Instructions:

1. Scoop ice cream into a bowl.

2. Add food coloring and mix well.

For all three treats, you will need red, white and blue ice cream. There are red and blue flavors on the market, but we couldn't find any, so we used dye. Feel free to buy or dye.

You gotta be quick with the licks to keep this from melting on your hand. We didn’t go with classic Neapolitan flavors (strawberry, vanilla, chocolate), but you could easily do so by dyeing the strawberry a deeper red and using white chocolate for the blue. Our version is solid coconut, but follow your heart!

Take note of the round container we used for this. It was a fail! We highly recommend you use a bread tin instead. To make your ice cream, scoop the more solid white ice cream into a strip down the middle of the tin. This will act as a barrier for the other two, which will be in a more soup-like form due to mixing in the food coloring. Add red to one side and blue to the other. Place it in the freezer for around two hours.

Here's where the fail happened. When we tried to scoop the ice cream, because it was in a round tin, the act of pulling the scoop towards me spun ALL of the ice cream around in a circle. Whoops! I managed to get some in the end, but it wasn't ideal.

It took us five stores to find dragon fruit and when we sliced it open, it was a vibrant magenta rather than the white we expected. Sweet surprise in our book and a perfect topping for a layered milkshake.

Lucy, my three-year-old schnauzer mix, has a major sweet tooth, or really any kind of tooth. She loves food and will literally bite the hand that feeds her for the tiniest nibble. After learning Marshall is Sazz's killer, Mabel, Charles, and Oliver are almost his next victims before Jan shoots him in the back from the empty apartment across the courtyard. But the season 4 finale isn't all drama! Oliver and Loretta finally tie the knot, and Oliver decides to stay in NYC while Loretta has to film in New Zealand. But in the final moments of the episode, we see that Lester is our next murder victim. HOW COULD YOU HULU?!

Yes, Selena Gomez, Steve Martin, and Martin Short are all close! While presenting the award for Best Supporting Actor in a Comedy Series, Selena Gomez and Martin Short had a moment onstage that totally reminded me of Oliver and Mabel. While making their way to the mic, Selena had to jog to keep up with Martin and Steve (she was wearing a stunning Ralph Lauren dress, after all). And when she expresses some nerves about tripping, Martin grabs her arm and says, "I got you baby." The sweetest!!

And Selena shows just as much love to her iconic costars. "I want to thank @stevemartinreally and Marty (who hates social media) for truly being the most kind, gentle, warm and powerful influences in my life," Selena Gomez says on Instagram. "You have shown me a level of class, intellect and humor that doesn’t seem to be easy to find anymore. You guys are truly best friends to me forever." I love this trio so much!

When is the next season of Only Murders in the Building coming out?

Only Murders in the Building season 4 is coming to Hulu Tuesday August 27, 2024. That means we're getting the Olympics, Bridgerton, The Bear, Emily in Paris, and House of the Dragon all in one summer. WOW.

Selena Gomez posted a screenshot on March 1 announcing that filming had begun! In honor of Day 1, Martin Short and Steve Martin sent her a bouquet of flowers with a note that reads, "We're so happy to be back with you, love, Steve and Marty." Okay cute!!

What is the Only Murders In The Building Season 4 filming like?

The official Only Murders in the Building Instagram account shared the first shot from set, and we couldn't be happier to see our favorite trio! "The besties are back," the post reads. "Season 4 🎥." And it looks like the costume color palette is still shades of green, blue, and red like in previous seasons, with Steve Martin's Charles wearing blue slacks and green shoes, and Martin Short's Oliver wearing rust-colored pants. Selena Gomez' Mabel is sticking to neutrals for now, but I'm sure we'll see plenty of color in her wardrobe in the weeks to come!

Selena Gomez also revealed to The Hollywood Reporter that shooting season 4 was a blast. "This is our most exciting season yet. That’s what I would definitely say with confidence, because it was far too fun," she says. "It’s going to be, to date, probably my favorite season."

But Only Murders in the Building season 4 also came with its own challenges. "We used to shoot everything in order, and that would help me a lot," she continues, "but because we had so many different things that were happening, and we wanted to make sure everybody was comfortable and we could adjust to people’s schedules, it jumped all over the place [this season]."

Who's going to be in the Only Murders in the Building season 4 cast?

Unfortunately, Mabel and Tobert won't reunite for Only Murders season 4 because actor Jesse Williams just confirmed with People he's not returning for the series with a very straightforward, "I'm not on that show anymore."

Selena Gomez, Martin Short, and Steve Martin will return to lead Only Murders in the Building season 4. We'll also see Meryl Streep return alongside newcomers Eugene Levy, Eva Longoria, Kumail Nanjiani, Desmin Borges, Siena Werber, Lilian Rebelo, and White Lotus star Molly Shannon. While we don't have any info on Eugene and Eva's role, we'll see Molly as a "high-powered Los Angeles business woman who finds herself drawn into the world of the investigation in New York,” via Variety.

As someone who was head over heels obsessed with Cheaper By The Dozen 2 as a kid, I can't wait to see Eugene Levy and Steve Martin onscreen again!

What is Only Murders in the Building season 4 about?

"I think the idea of what you create is a thing you put out to the world, and sometimes you can’t be prepared for the repercussions of what potentially the world does with your thing," showrunner John Hoffman tells The Hollywood Reporter. "So, the podcast and everything else that’s happened, and what it all means, and what it could have been meaning all along."

We've seen the way Mabel, Oliver, and Charles' podcast has catapulted them into danger and adventure in the last three seasons, and it sounds like Only Murders in the Building season 4 will focus even more on the repercussions of their podcast — and it's going to happen in Los Angeles.

"Well, I’m very excited to see Steve, Martin and Selena take a little break from the apartment building and come to Los Angeles," ABC boss Craig Erwich tells Deadline. "So in the same way that John Hoffman used the canvas of Broadway to tell [Only Murders season 3], the same unique Only Murders take will be applied to Los Angeles, which I’m really excited about."

Who dies at the end of season 3 of Only Murders in the Building?

At the very end of Only Murders season 3, we see Sazz (played by Jane Lynch) get shot while walking around Charles' apartment — and then try to write him a message with her own blood. Crazy! But even crazier is the fact she was dressed up like him, meaning the murderer was actually after Charles. But the great thing about Only Murders in the Building is that the victim becomes an even larger part of the story than they were before.

"The more personal you can make the victim to one of our trio, or the murderer to one of our trio, the better," showrunner John Hoffman tells THR. "It felt like a perfect opportunity to let Charles have this connection and explore more of that connection. It’s one of the great characters. We’ve loved writing Sazz so much, and that’s the beauty of the show is, you get a lot more time with the victims. They’re not gone when some ill fate happens to them."

Where is the Arconia in New York?

In real life, the Arconia is the The Belnord Apartments. The building takes up an entire city block, and the Italian Renaissance Revival style it was made in is absolutely beautiful. You can see the outside of the building in New York City's west 86th street, but since it's a real apartment building, you won't be able to go inside!

How did they get Sting to be in Only Murders in the Building?

Sting was a guest star in the first season of Only Murders in the Building thanks to his friendship with Steve Martin and casting director Bernard Telsey! That's also how Meryl Streep (who's also friends with Steve Martin and Martin Short) got to be a part of season 3.

Where did the inspiration for the costumes come from?

In our interview with costume designer Dana Covarrubias, she mentioned how much her and Selena Gomez' Mexican heritage influenced her outfits in season one, while the aesthetics of The Hardy Boys and Alfred Hitchcock's films influenced her looks in season two.

"I was trying to figure out something within that [murder mystery] world again, but our whole season is about Broadway and about theatre, and I think that just trumped everything else," she says. "It was very exciting to re-explore some of my favorite musicals...Almost all of Mabel's costumes this season are directly inspired by one or two musicals."

Yes, Only Murders in the Building season 4 is confirmed! The official Instagram announcement post features our favorite trio against a vivid green backdrop. Selena Gomez stuns in a bright red sweater dress with a cold shoulder silhouette, while Martin Short wears a blue suit and Steve Martin wears purple. This definitely feels like a nod to the Only Murders in the Building costumes — Selena's Mabel wears a lot of marigold and red, while Steve's Charles started off the show in blue and Martin's Oliver chose shades of purple.

After only two episodes of Only Murders in the Building season 4, Hulu renewed the series for season 5! I'm so excited that the show breaks a recent pattern of cancelling shows after the third or fourth season, giving us more time with our favorite characters, and I'm not the only one.

Selena Gomez says in an Instagram post, while the official Only Murders account made their own post, saying, "We had our lawyers call business affairs. We finally got our first details about Only Murders season 5 — and we're going in a direction I totally didn't expect. When Sofia visits Mabel and Charles in the season 4 ending, and asks them to find her missing husband, she's disappointed when they turn her down. And since Téa Leoni just joined the season 5 cast, it looks like she's not taking no for an answer.

“I think she’s the great tease at the end of the finale and a little bit of an intriguing bump forward,” co-creator John Hoffman says in an interview with Deadline. “She’s an extension of the little news report in Episode 9 that Mabel makes note of at the hospital. [Sofia] is the wife of the Dry Cleaning King of Brooklyn, and maybe a couple of dry cleaning outlets in Manhattan, as well, we may come to know...It’s a world opened up potentially that we haven’t talked about too much yet in New York, so she holds a lot of intrigue.”

New York's underground is definitely something we haven't really seen on Only Murders yet so I know we're in for one very interesting season.

Will there be an Only Murders in the Building season 5?

Yes, Only Murders in the Building has been renewed for season 5! On September 4, Variety confirmed the next installment will have 10 episodes, just like the seasons before it. The latest season premiered on Hulu August 27, and will last until October 29 (just in time to try out an Only Murders Halloween costume!)

Just like the season 3 ending set up season 4, we'll have to wait for the October finale to figure out what kind of mayhem Mabel, Oliver, and Charles will get into next season. "We hope you like it!" Selena Gomez says in the Only Murders in the Building account's announcement, while Martin Short adds, "How exciting is that?"

"We're so exciting to be coming back," Steve Martin says. We're excited too!!
