What’s the perfect treat for staying cool during hot summer days? Ice cream, obvs. Glorious, glorious ice cream. And while ice cream is pretty darn good on its own, we just kicked it up a notch by putting an even more drool-worthy spin on this delicious treat: DIY, customizable ice cream sandwiches that are easy as 1, 2, 3. To continue our celebration of National Ice Cream Day, we’re whipping up three amazing ice cream sandwiches that only need six ingredients!
Chocolate Chip Cookie Dough Ice Cream Sandwiches
This is so meta. Cookie dough ice cream is sandwiched between two chocolate chip cookies. We’re patting ourselves on the back for this one.
Ingredients:
– 2 single portions cookie dough ice cream
– 1 bag of small chocolate chip cookies
There’s a trick for this. Make sure the diameter of your chocolate chip cookies matches the diameter of the ice cream cookie dough container.
Then, using a sharp knife, cut the bottom of the container off. Then, cut it again to the thickness that you want your ice cream layer to be. Sandwich it between the two chocolate chip cookies and then remove the outer edge of the carton and voila! You’ve got an ice cream sandwich!

Oreo Cookie Vanilla Ice Cream and Nilla Dulce de Leche Ice Cream Sandwiches
These. Will. Blow. Your. Mind. Classic cookies get revamped with ice cream! You’re welcome.
Ingredients:
– 1 package Oreo cookies
– 1 pint vanilla ice cream
– 1 package Nilla wafers
– 1 pint dulce de leche ice cream
Since the cookies aren’t the same size as the ice cream container, we’ll just use another trick. Let the ice cream defrost for about 5 minutes until malleable. Scoop it out into a tray and flatten until it’s the thickness you want your ice cream layers to be. Freeze for about 15-20 minutes, until it’s solid. Then, use a cookie cutter the same size as your Oreo to cut out ice cream layers. Drop the ice cream on top of an Oreo, then top off with another Oreo to make the sandwich.
Talk about double stuff ;)
Repeat the process with the Nilla wafers and dulce de leche ice cream.
