The Hack for Cooking a Complete Meal in Your Instant Pot


Ingredients

  • ghee or olive oil spray
  • 2 small sweet potatoes, peeled and large diced
  • salt, to taste
  • 1/4 cup water
  • 2 frozen salmon fillets
  • spice mix of your choice, to taste
  • 1 orange, thinly sliced (preferably with a mandoline)
  • 2 small heads of broccoli, cut into large pieces
  • freshly ground black pepper, optional

Directions

Spray the inside of the Instant Pot bowl insert with ghee or olive oil.

Add potatoes to the bottom, spraying the top with oil, then sprinkling generously with salt. Pour in 1/4 cup of water on top.

Place the Instant Pot trivet on top of the potatoes, then lay out 1/2 of the orange slices on the bottom of the trivet. Add the fish on top of the oranges, skin-side down. Be sure the fish are positioned so they are lying flat on the trivet and not on top of one another.

Sprinkle a generous amount of seasoning on the tops of the fish fillets (if you don’t want to use a seasoning, salt is fine). If seasoning is not salted, be sure to add a generous amount of salt on top too. Then, lay the remaining orange slices on top of the fish, in a decorative fanned out way.

Place the small aluminum bowl on top of the fish. Be sure it’s small enough so that it fits within the Instant Pot bowl insert. Add the broccoli, spray with ghee, and sprinkle with salt.

Close and lock the Instant Pot Lid. Pressure cook for 3 minutes on high. When cooking is complete, immediately quick release the steam and open the lid.

Carefully use tongs or heat-proof kitchen mitts to remove the aluminum bowl from the Instant Pot. Divide broccoli between two plates. Use a spatula to transfer the fish fillets to each plate. Carefully remove the trivet. Use a spoon to scoop up the sweet potatoes and divide them between the plates. Season with additional ghee or olive oil and salt and pepper if desired.

Lately, I’ve been paying closer attention to my grocery receipts. It’s not just the price of eggs — everything feels more expensive, and it's made me think more intentionally about how to make my food last longer. I’ve always hated wasting food. Not only is it tough on the planet, it’s tough on my budget, too. Americans toss out about 38 percent of our food — that’s the equivalent of 145 billion meals ending up in landfills (yikes!). Sure, a big chunk of that comes from restaurants, but even at home, being mindful of waste feels like a win for both the environment and my wallet.

So, instead of putting my groceries away haphazardly, I want to make sure I'm storing everything exactly how — and where — it should go. Luckily, I've learned there are some foods that actually last longer outside of the fridge. And they might surprise you!

1. Cucumbers

I have never left cucumbers outside the fridge, but it turns out that this can cause them to become too watery. Instead, find an airtight containerand store them in your pantry or countertop. Then toss them in this colorful Greek Salad!

Stashing bell peppers in the fridge can actually make them lose their crunch (who knew?). For peak crispness, keep them at room temperature and enjoy within one to two days. If you're not planning to eat them that quickly, pop them in the fridge to help prevent them from going soft too soon.

Store your basil as you would a fresh bouquet of flowers, in a jar with water. Cold temps can cause basil leaves to turn black, so it’s better off out of the fridge.

4. Butter (And Peanut Butter!)

According to the USDA, butter is best used within a day or two at room temperature to preserve its flavor. When I lived in San Francisco, I could leave it out on the counter year-round without worrying about it melting. Now that I’m in a hotter climate, I keep it out most of the year — just not during the peak of summer. Peanut butter also does well at room temperature, staying smooth and spreadable for up to three months (after which you'll need to refrigerate it).

5. Tomatoes

I grew tomatoes in my garden for the first time last year, and nothing beats the taste of one plucked straight from the vine. To keep that juicy , sun-ripened flavor going, store your tomatoes at room temperature on the counter — not in the fridge. Cold temps can dull their flavor and texture. Try making a simple Tomato Confit recipe to drizzle over bread or pasta, yum!

6. Avocados

A friend and I were debating whether avocados belong in the fridge — turns out, they don’t. At least, not until they’re ripe. I eat one almost every day, so I go through them fast, but once they ripen, I pop them in the fridge to slow down the over-ripening. If you’re craving Avocado Toast, stash them in a paper bag to speed things up, or just let them ripen naturally in an open container on the counter.

7. Fresh Bread

If you want to get the most flavor (and life) out of your fresh bread, skip the fridge. Refrigeration actually speeds up staling. Instead, store it in a bread box or basket — somewhere that blocks light but still lets it breathe. Planning to eat it the same day? Leaving it uncovered at room temperature works just fine. Otherwise, a paper bag or the freezer are your best options.

I like to keep my potatoes and onions tucked away in the pantry where it’s cool and dark. Storing them in a paper bag at room temperature helps preserve their texture and flavor. The fridge might seem like a good idea, but it can actually do more harm than good — the moisture makes potatoes overly sweet and kind of gritty, and the humidity can cause them to mold more quickly.

Onions, shallots, and garlic can become moldy when exposed to the high humidity of the refrigerator. Store them in a relatively cool, dry place in your pantry or a cabinet that’s not exposed to light. What is the movie Sinners about?

When twin brothers Smoke and Stack return home for a new beginning, they're initially met with welcome arms. But as daylight turns to dusk and gives way to nightfall, unspeakable horrors expose themselves to the townspeople. Evil in the form of vampires consume everything in their path and it changes the brothers in ways they could've never prepared for.

It's set in the 1930s South which means we'll get dialect, fashion, music, and more themes from that time period.

Hailee Steinfeld will be starring as Mary, the love interest of Stack. Since not much is known about her outside of that, we're assuming their romance is forbidden. What we do know is Hailee's a fan of her character and the overall themes of Sinners.

According to PEOPLE, the actress shared more of her thoughts in her newsletter Beau Society March 28. She wrote, "...This role is far removed from what I've done, but that's part of what drew me to it! I feel like I'm stepping into my own more and more as I get older, and this role mirrors that."

She also shared that it didn't take much for her to be a part of Sinners. "The minute I heard Ryan Coogler, I was in. Then I read his script and was like, 'Holy s---, this feels like a massive undertaking.' The story is so complex and layered," calling herself "fortunate and honored to even be remotely considered." So, how does Hailee Steinfeld feel about Sinners as a whole?

She says it's "thrilling and sexy and daring and dangerous — with bold representations." Calling this type of movie a "first" for her, she continued sharing her excitement about it on the TODAY Show while chatting with Jenna Bush Hager and John Legend. She said, "This role, I feel just challenged me in ways that I was ready for."

She also Ryan for being "the most incredible writer and director," which continues to speak to his amazing sight!

Meghann Fahy is ready for another vacation. While promoting her new movie Drop, out April 11, the Sirens actress (who starred in The White Lotus season 2), said she'd love to return for an all-star season.

"I, of course, would love to. In a heartbeat," Meghann says in an interview with EW. "That's the easiest yes in the world."

Who did Meghan Fahy play in White Lotus?

Meghann Fahy starred in season 2 of The White Lotus as Daphne Sullivan, who was married to the unfaithful Cameron (Theo James) and was much more than meets the eye. But even if Daphne didn't return for a potential all-star White Lotus, Meghann would tune in.

"I know that that would be something I would love to watch, too, if they didn't want to see Daphne again," she adds. "Because I love the show so much and there's so many amazing characters."

And would Brandon Sklenar (who also stars in Drop) ever play a future character? "I'd probably end up dead," he says. "I don't know who I'd play. Yeah, I'd do it. I love that show. But I want to see [Fahy do] an all-stars thing."

In our Drop interview, I also couldn't pass up the opportunity to ask if we'd see Brandon in a rom-com. The actor has played romantic roles in both 1923 and It Ends With Us, but nothing beats a good old fashioned rom-com!

"It's possible. I'm not saying no, but it's possible," he teases. "I'd love to do a comedy at some point. Everything I have in the future is very far from, and very far from romance, but I'd say it's possible. Yeah, never say never."

As far as his dream comedy goes, Brandon tells Brit + Co, "I love Peter Sellers and I love like Chevy Chase movies. I'm like I'm a very physical guy and I'd love to be able to do something just absurd like grounded but completely absurd."

Well, until we see Brandon in a rom-com I'll just have to rewatch Drop because believe it or not, it's totally giving scary rom-com.
