You’ve Never Seen Avocado Toast Like This Before

When our copy of Kintsugi Wellness: The Japanese Art of Nourishing Mind, Body, and Spirit($30) by Candice Kumai arrived in the mail, we read it cover to cover in one sitting. After all, it did make our list of the most exciting cookbooks to come out in 2018. Out April 17, it goes way beyond food, unlike Kumai’s other titles. This one focuses more on Japanese philosophies and how they relate to mental health and overall wellness. Oh, and an incredibly delicious take on avocado toast that blew our taste buds away.

At the core is the concept of kintsugi, the prized Japanese art of repairing broken pottery with lacquer and dusting it with gold. Kumai uses it as a metaphor for our lives, “We’re so busy being hard on ourselves that it’s easy to lose sight of the fact that we are also deserving of the self-care it takes to maintain our health and happiness. Golden repair [kintsugi] celebrates our imperfections. It teaches us that we are more beautiful for our flaws, our battle scars, and our lessons learned.”

One of Kumai’s pillars of self-care includes eating wholesomely. She says, “Cooking and eating nourishing foods are the foundations of my kintsugi-inspired self-care.” You’ll find descriptions of Japanese pantry staples, step-by-steps for making staples like soba noodles and sushi rolls, plus some unique Californian-ized Japanese foods in the book.

We asked Kumai to share some must-have Japanese items, and she responded with more than a few. “Throughout the book, gomashio [sesame seed salt] and tōgarashi [ground chili peppers] are used to finish everything,” she says. “I think people should stop being so afraid of hijiki [seaweed]. It’s really easy to cook with. Adzuki beans as well. They are packed with antioxidants. Matcha is another staple that is so pleasurable to make in the morning with a bamboo whisk. People should get to know the other teas like sencha, hochicha, and genmaicha… Shitake mushrooms, as you know, are absolutely delicious.”

Kumai also recommended getting familiar with miso, so we pulled two beloved recipes (avocado toast and kale caesar) that call for the ingredient. Say what? We know; though it sounds unusual, we promise the results are oh-so tasty, easy-to-assemble, and totally healthy. “I made the miso avocado toast on a retreat not too long ago and people went crazy for it. Like, followed me around,” she says. “It’s almost this perfect combination of sweet, savory, and umami with fat. I like it with Ezekiel Sprouted Bread or Uni’s gluten-free bread. There’s something oddly magical about it. It’s the easiest recipes in the book, and yet it’s one of the favorites.”

(Serves 2)

Ingredients:

  • coconut oil or olive oil cooking spray, for the skillet
  • 2 slices of your favorite bread
  • 4 teaspoons organic red or white miso paste
  • 1 ripe avocado, pitted, peeled, and thinly sliced
  • pinch of tōgarashi
  • pinch of gomashio

Instructions:

1. Toast the bread: Coat a medium skillet with cooking spray and place over medium heat. Add the bread slices to the skillet and toast on both sides, 1 to 2 minutes per side.

2. Slather a small amount of miso paste on one side of each slice of bread. Lightly spray the pan with extra cooking spray to prevent sticking. Return the toast to the pan, miso-side down, for just a minute or two, until lightly golden.

3. Remove the toast from the skillet and transfer to a clean work surface, miso-side up. Top with avocado slices and mash with a fork, if desired. Sprinkle with tōgarashi and/or gomashio, and serve immediately.

(Serves 2 as a main or 4 as small side salads)

Ingredients:

Miso Caesar Dressing:

  • 1⁄4 cup tahini paste
  • 1⁄4 cup organic red or white miso paste
  • 1⁄4 cup rice vinegar
  • 1 teaspoon honey or pure maple syrup

Salad:

  • 1 large bunch lacinato or curly kale, stemmed, leaves finely chopped and massaged well (using clean hands, massage kale for 5 minutes to slightly wilt)
  • kernels shaved from 1 ear raw white corn (about 1⁄2 cup kernels)
  • 1⁄2 daikon radish, peeled, halved, and thinly sliced into half- moons (about 2 cups)
  • 2 avocados, pitted, peeled, and cut into 3⁄4-inch cubes
  • 2 Tablespoons gomashio or hemp seeds
  • furikake or nori seaweed (optional)

Instructions:

1. In a medium bowl, whisk together all the ingredients for the dressing until well combined. Add the finely chopped lacinato kale, raw white corn, and daikon radish and toss well to combine with the dressing.

2. To serve, plate up your salad into serving bowls and top with cubed avocado, toasted sesame seeds or hemp seeds, and furikake or nori, if desired.

These sweet treats will shine among the rest of your Christmastime tablescape, and they are super easy to make. Plus, they'll pair well with just about any Christmas dessert. Just combine your paleo-friendly ingredients to prep the dough, let it sit overnight, then bake for ten minutes! The best part about this recipe is of course, all of the fun holiday-time shapes you can cut. Consider this recipe your go-to for healthy cookies, though, since you can make them year-round in any shape you like. Let's get to decorating!

Ingredients for Paleo Christmas Cookies

For the cookies:

  • 1/2 cup grass-fed salted butter, softened
  • 6 tablespoons raw honey
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda

For the frosting:

  • 6 tablespoons coconut butter or coconut manna
  • 1/4 cup cacao butter
  • 1-2 tablespoons honey
  • Plant-based food coloring
  • Vegetable-dyed sprinkles, for topping*
* Look for vegetable and fruit-dyed food coloring and sprinkles in natural grocery stores or online, and avoid artificial colors to keep these cookies Paleo friendly!

How to Make Paleo Christmas Cookies

  1. Add the softened butter and honey to a large mixing bowl. Cream the mixture together using a handheld mixer until it is smooth. Add in the eggs, vanilla extract, and almond extract and whisk until they are well combined. Pour in the almond flour, coconut flour, and baking soda, and continue mixing until the batter has come together smoothly.
  2. Separate the dough into two, and place each one on top of a piece of plastic wrap. Roll each dough into a ball, then flatten to a thick disk, cover completely with the plastic wrap, and place in the refrigerator to firm up for at least 2 hours or overnight.
  3. Preheat the oven to 350 degrees F. Remove one of the dough discs from the refrigerator, unwrap the plastic and place the dough on top of a piece of parchment paper, then top it with another piece of parchment paper. Use a roller to flatten out the dough to about 1/4 to 1/2 of an inch thick. Work quickly with your favorite Christmas cookie cutters, and use a thin spatula to lift the cut cookies onto a baking sheet lined with parchment paper.
  4. Bake the cookies in the oven for 10 minutes. Let them cool for a few minutes, then place on a wire rack for further cooling. Gather the leftover scraps back into a ball in the plastic wrap or parchment paper and place it back in the refrigerator, while working with the other piece of dough. Do this in batches to keep the dough from getting too warm and so you don’t overcrowd the baking sheet.
  5. While the batches of cookies are baking, use a small saucepan to lightly melt the coconut butter and cacao butter together over low heat on the stovetop. Remove the pan from the heat when the ingredients have just melted together. Stir in the desired amount of honey, then set aside to cool and thicken up slightly. If you are using food coloring, add in the desired amount into the frosting mixture (1-2 teaspoons of green or red should do the trick). If you plan on only using white frosting, only use a small amount of honey, as it can make the frosting an off-white or light brown color.
  6. After the cookies have completely cooled, decorate them with the frosting and sprinkles as desired. If you don’t have any professional piping tools, an easy fix is to place the frosting in a plastic sandwich bag and remove all the air when sealing the top. Cut a tiny tip off one corner of the plastic bag, then gently squeeze and pipe over the cookies. Use one plastic bag or piping bag for each color of frosting. Top with corresponding sprinkles and enjoy!

Western Cowboy

This is a design trend that totally surprised me, but I'm so happy to see it in the mix. Elements like leather furniture, rustic accessories, equestrian art, even wood walls, shown in this office designed by A1000XBetter, are making an impact in 2025 and beyond. But Shea notes that you can take this trend literally or just be inspired by the look. You can also mix it with other styles to personalize it for you. Add romantic pillows or ruffled tablecloths like McGee & Co. x Loeffler Randall Gardenia Ruffle Border Tablecloth – things you love that make it yours vs. based solely on one trend.

Saturated Colors

Shea predicts that rich hues like deep browns, oxblood red, and earthy greens will continue to dominate home decor colors going into 2025. House of Rolison's bathroom brown is an excellent example of this beautiful trend.

Pattern Drenching

Embracing a single pattern and drenching an entire room in it — from walls to pillows, headboards, and curtains — is a surprise trend for 2025. This maximalist approach, which has been quietly gaining traction, draws inspiration from Arts and Crafts designers like William Morris and has been in and out of vogue since the Victorian era.

This is a trend you can easily DIY to add an extra layer of charm to your decor. Think playful details like fringe accents —beautifully shown in McGee & Co.'s Philippa Settee — along with tassels, pleats, ruffles, and rope. It’s all about embracing texture and whimsy, so have fun with it!

Seaside Inspiration

Minimal effort — that's our favorite phrase. Do a bit of arranging, brushing, and drizzling, then let the oven take care of the rest of the work for a dinner that's sure to end up on your regular recipe rotation. We use chopped potatoes, carrots, and red onion in this honey mustard chicken recipe, but you could easily replace 'em with baby new potatoes, baby carrots, and shallots (or scallions) to skip the knife work!

Ingredients for Sheet Pan Honey Mustard Chicken

  • 3 large red-skinned potatoes, chopped into bite-size chunks
  • 2 large carrots, peeled and chopped into bite-size chunks
  • 1 large red onion, peeled and sliced into chunky wedges
  • 4 chicken breasts
  • 3 tablespoons honey
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons brown sugar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 medium head of broccoli, broken into florets
  • 20 asparagus spears
  • Small bunch of parsley, finely chopped

Directions for Sheet Pan Honey Mustard Chicken

1. Preheat the oven to 400 degrees Fahrenheit.

2. Arrange the potatoes, carrots, onion, and chicken breasts on a large sheet pan.

3. Mix together the honey, mustard, and brown sugar. Brush this mixture on the chicken breasts. Drizzle two tablespoons of the oil over the chicken and vegetables, then sprinkle on the salt and pepper. Bake in the oven for 25 minutes.

4. Take the sheet pan out of the oven. Use a spatula to turn the vegetables over, then add the broccoli and asparagus. Drizzle on the remaining oil and sprinkle on another pinch of salt and pepper. Place back in the oven to cook for a further 5-10 minutes until the chicken is cooked through and the vegetables are tender.

Dunkin’s winter menu for 2025 is lookin’ pretty sweet. Seriously – 3 out of 5 new drinks on the menu are inspired by cake. Since there’s little I love more than a good, decadent dessert (other than coffee, of course), I’m especially excited about this new lineup!

The Dunkin’ winter menu also has one sweet snack and an iced espresso drink that are both hauntingly similar to what Starbucks has to offer. Is the competition heating up, or is it just me?

The new Valentine's Munchkins will reportedly be made from glazed chocolate donut holes coated in Valentine's-esque sprinkles. I'm craving them already!
