Craft a ’90s TV-Dinner Throwback With These Meatless Monday Recipes

I’m not sure if you’ve heard, but the ’90s are back. From sleek chokers and goth black lipstick to the return of Nintendo NES, our fave decade has dominated current trends. To continue this throwback vibe, we’ve crafted two meatless recipes to help put a healthier twist and a serious upgrade on the time-honored TV-dinner tradition. It’s the perfect complement for binge watching the latest ’90s reboots (OMG! Heathers and Charmed, nonetheless!). So to take this week’s meatless Monday to the next level, we’re filling our tray with chickpea animal nuggets and root fries. Scroll on and see how it’s done.

Ingredients:

For the chickpea animal nuggets

  • 2 cups garbanzo bean flour
  • 4 cups boiling water
  • 2 garlic cloves, minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • 3 Tablespoons olive oil
  • frying oil (canola)

Instructions:

  1. Mix the flour with the garlic, salt, garlic powder and smoked paprika. Add the boiling water to your mixture and whisk together to avoid lumps. You may want to mix this on the stovetop on medium heat to make sure the mixture properly thickens.
  2. Add the olive oil and whisk for a couple of minutes. Next, pour the mixture into a pan lined with parchment paper. Let cool and refrigerate for at least two hours.
  3. Once the mixture has settled and solidified, use your cookie cutters to make fun animal shapes. You can make different shapes with the excess mixture as well. Cut it into strips to make fritters, or make a small ball for a proper nugget.
  4. Heat the frying oil to 350 degrees on medium-high heat and cook the animal nuggets. Be sure to turn them over and cook until they’re a golden brown. To keep these even lighter, you can bake them. Set the oven to 400 degrees Fahrenheit and bake for 40 minutes, flipping the nuggets 2-3 times.
  5. Let cool on a rack or paper towel-lined pan.
  6. Serve and enjoy!

Ingredients:

For the baked root fries

  • 1 yam
  • 1 parsnip
  • 1 purple sweet potato
  • 1 Tablespoon olive oil
  • ½ cup panko bread crumbs
  • 1 teaspoon salt
  • ½ teaspoon garlic powder

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit. Cut up your veggies into sticks.
  2. Mix together with the oil, bread crumbs, salt and garlic powder.
  3. Bake for 30-40 minutes, stirring one to two times. Keep an eye on the fries, as cooking time depends on the thickness of the fries.
  4. Remove from the oven, cool and enjoy!

Now that the nuggets and fries are done, it’s time to construct your meal!

Find a fun tray to house your chickpea animal nuggets and fries. But don’t forget about the side of veggies, condiments and dessert (even though they were totally gross, there was always a dessert). Ahhh… looks like it’s time to queue up that Netflix playlist.

  • 2 lbs beef Tenderloin center cut canon (ask your butcher)
  • 1-2 T Avocado Oil for searing
  • 8oz shallots, minced

  • 6 T butter

  • 1 T minced Parsley
  • Salt and Pepper TT
  • Pastry Dough x 2:
  • Bread Flour 1 1/2 cups plus 1 T
  • Butter 3/4 cup (6oz) cubed
  • Salt 1/2 t
  • Ice cold water 1/4 cup

Directions:

  • Slice off a 2 lb center cut canon from a beef tenderloin or ask your butcher.
  • Pat dry, season heavily with salt and pepper. sear on all sides using a fat with a high smoke point (Avocado oil)
  • Tip: Precooking your beef is the secret to preventing a soggy bottom crust and most of the moisture is removed prior. This will also ensure that your tenderloin is cooked perfect every time.
  • Roast in a 150 oven to an internal temp of 115. Chill
  • TIP: I like to measure my canon lengthwise side to side then the circumference by using butchers twine. This will help me determine the size I need to make my prosciutto bed and pastry sheet.
  • Make your mushroom duxelles. Saute half a pound of minced shallots in 6 T butter then add 1 lb finely chopped mushrooms and thyme, saute, deglaze with sherry wine as necessary, cook until pan is dry, add minced parsley, season and set aside.
  • Add flour and butter to a counter top mixer and using a paddle, combine on lowest speed until the butter is turned into crumbs and all the flour is Incorporated. Pour in your ice water and mix until combined. Place dough onto the counter and form into a ball then flatten/ wrap with plastic wrap and chill.

Well, according to one DeuxMoi source, it appears that the couple tied the knot over the holidays.

According to the rumor, it appears Rob and Suki entered 2025 as a married couple. "Robert Pattinson and Suki Waterhouse got married at NYE at the Caribbean resort I work at!!!" the source told DeuxMoi (via Daily Mail). "They were so cute and sweet, their baby was there in a gorgeous little bridesmaids dress."

"Their family was there as well," and the couple proved they're still some of our favorite celebs because they were "so nice" to everyone, according to the source! I didn't doubt it for a moment ;).

Although rumors from InTouch Weekly claim the couple were already married as of June 2024, so we'll have to wait to see if Rob and Suki decide to share with us!

When it comes to their family, Suki Waterhouse recently shared that Robert Pattinson is "the [best] dad I could have hoped for...It’s an actual love story."

"[Having a baby] makes you feel very old and very young," Rob said during Paris Fashion Week. "She's so cute...You know, I'm amazed by how quickly their personality comes. So even at three months, I'm like, 'Oh…I can kinda see who she is already.'"

Minimal effort — that's our favorite phrase. Do a bit of arranging, brushing, and drizzling, then let the oven take care of the rest of the work for a dinner that's sure to end up on your regular recipe rotation. We use chopped potatoes, carrots, and red onion in this honey mustard chicken recipe, but you could easily replace 'em with baby new potatoes, baby carrots, and shallots (or scallions) to skip the knife work!

Ingredients for Sheet Pan Honey Mustard Chicken

  • 3 large red-skinned potatoes, chopped into bite-size chunks
  • 2 large carrots, peeled and chopped into bite-size chunks
  • 1 large red onion, peeled and sliced into chunky wedges
  • 4 chicken breasts
  • 3 tablespoons honey
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons brown sugar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 medium head of broccoli, broken into florets
  • 20 asparagus spears
  • Small bunch of parsley, finely chopped

1. Preheat the oven to 400 degrees Fahrenheit.

2. Arrange the potatoes, carrots, onion, and chicken breasts on a large sheet pan.

3. Mix together the honey, mustard, and brown sugar. Brush this mixture on the chicken breasts. Drizzle two tablespoons of the oil over the chicken and vegetables, then sprinkle on the salt and pepper. Bake in the oven for 25 minutes.

4. Take the sheet pan out of the oven. Use a spatula to turn the vegetables over, then add the broccoli and asparagus. Drizzle on the remaining oil and sprinkle on another pinch of salt and pepper. Place back in the oven to cook for a further 5-10 minutes until the chicken is cooked through and the vegetables are tender.
