Paleo Expert Melissa Joulwan Shares Her Tips for Cooking Clean in 2017

Paleo expert Melissa Joulwan doesn’t kid around when it comes to weeknight cooking. Her take on the whole thing is that it should be as quick and easy as possible. In fact, she says that quick and easy recipes are absolutely vital for helping people adhere to a healthy lifestyle (and keep their New Year’s food resolutions). Melissa’s book of Paleo-based recipes, Well Fed Weeknights, is all about saving time in the kitchen — and coming away with healthy, Paleo-based meals that help you stay healthy throughout the week. We sat down with her to hear about her favorite time-saving methods and her tips for eating as healthy as possible in 2017.

B+C: Tell us about your background. What led you to the Paleo lifestyle?

I was a very inactive kid, and I stayed that way all the way through college. My family loves to eat too… even at breakfast, we’d be talking about what we were going to have for dinner. That instilled in me a love of food and cooking, but there were some downsides to that as well. For instance, I never really learned how to feed myself for optimal health.

By the time I graduated from college, I realized that I wanted to change. I didn’t want to live like that anymore. I started trying to eat healthily, which — at that time — was really a very high-carb, low-fat approach. That worked for a while and I lost a bunch of weight, and also became more active. That was when I started to realize that I actually really loved to exercise. No one in my family was very active, so for me, this was a revelation.

However, some bad things started to happen after that. My weight started to creep back up, even though I was still exercising and eating well. This happened a couple of times, and it wasn’t until 2009 that I found the Paleo diet and learned that eating a high-carb, low-fat diet puts you into a blood sugar cycle. Through Paleo, I stabilized my blood sugar, I lost some more weight and my workouts started becoming very energized. It was around this time that I started my blog. That grew and picked up readership, and I eventually published my first cookbook, Well Fed, in 2011.

There were setbacks too. In 2009, I had to have my thyroid removed. It happened right as I was really getting into the swing of things with Paleo. So at that point, eating Paleo really became about optimal health and keeping inflammation down in my body.

B+C: What are some hacks you can share for people who are hoping to eat better this year?

My number one recommendation is always to do a month-long Paleo cleanup, whether it’s the Whole30 or the 21-Day Sugar Detox. However, I realize that many people find that prospect very daunting. If a full month doesn’t seem doable for you, there are some simple things people can do that will move things in that direction without having to overhaul completely.

The first big tip I have is to start eating protein at breakfast. So many people start their day with muffins or cereal, which is basically a rush of sugar and carbs. The body needs proteins and fats to really get the hormonal system working. You can have chicken or turkey sausage, chili with eggs, or really anything that can help you get some protein.

The second big tip is to start replacing grains with veggies. That’s not to say you’ll never eat pasta or bread again, but just try to start making that substitution. Replace noodles with zucchini noodles and rice with cauliflower rice. To keep some healthy carbohydrates in your diet, add in plantains or sweet potatoes.

And finally, just make a resolution to cook at home more. The reason restaurant food tastes so good is because there are a lot of added ingredients, like sugar, salt, soy and MSG. If there’s one night a week you really want to hit your favorite restaurant, go for it. But then eat the rest of your meals at home and try to pack lunches for work days.

B+C: What are some of your favorite ways to save time in the kitchen?

One of the things that’s hardest about eating healthy is that, whether it’s Paleo or any other kind of eating style, you’re probably going to have to cook more. In my book, Well Fed Weeknights, I talk quite a bit about doing a weekly cookup in which you pre-cook a bunch of your meals for the week. That way, you can basically go into your fridge throughout the week and find your own homemade “packaged” food.

Doing a cookup is pretty easy too. In my book, I share instructions for how you can make homemade mayo, hard-boiled eggs, roast chicken, zucchini noodles and cauliflower rice in just one hour. And if you have all of those things in your refrigerator, when it’s time to actually put together a meal, you have all of your building blocks.

With this new cookbook, I wanted to figure out how I could give people these really flavorful, exciting recipes that can be made in 45 minutes or less. So a lot of these recipes are quick-cooking proteins. Stews, chilis and pulled pork are awesome, but you have to make them ahead of time, and on weeknights you often won’t have time for that.

So, quick-cooking proteins like chicken breasts, ground meats, shrimp and other foods that you can poach are key. You can also splurge on basics like rotisserie chicken at the supermarket for a quick, healthy option.

To make these dishes more interesting, you can make a quick homemade sauce with herbs and lemon juice that literally takes two minutes. Add some of these sauces to your quick-cooking proteins and you’re done. One of my favorite hacks is to make homemade mayo — it’s such a great addition to any dish and it takes only seconds to make.

B+C: What are some of your other favorite recipes at the moment?

Right now, I’m having a love affair with plantains. They’re really great for people who work out because they’re a great source of dense carbohydrates and they have a lot of potassium and fiber. One of my favorite dishes to make is picadillo with plantains, which is essentially ground meat with seasonings, raisins, olives and plantains. It takes about half an hour to make and it’s loaded with flavor.

Ethnic foods are always great. They contain so many spices and flavors, so they’re never boring, but they’re usually really healthy.

I’m also super into food truck-inspired food right now. In the new book, I have 12 recipes for street fries that you can make. If you’re eating very low-carb, you can take the meat, sauces and garnishes and put them on cauliflower rice or a bed of spinach. There’s also a recipe for chicken shawarma, which is amazing. It’s basically chicken, cucumbers and cabbage with a tahini dressing.

So basically, these things are built around basic, real food ingredients — proteins, vegetables and a few starchy carbs — but they’re absolutely delicious and ready in like 30 minutes. That’s really the key: Cook with real food, sub out grains for starchy carbs and set yourself up for success by cooking as simply as possible. Trust me: After you get in the swing of things with a Paleo lifestyle, you’ll probably never want to go back.

A Complete Unknown finally rolls into theaters on Christmas Day (you know..like a rolling stone?) but the cast is already generating serious buzz. Timothée Chalamet snagged a Golden Globe nomination for his portrayal of Bob Dylan, while Monica Barbaro just won the Astra Film Awards' Breakthrough Performer Award. But when I sat down with the actress, I couldn't help but go all the way back to the first day of filming the December movie.

Here's what A Complete Unknown's Monica Barbaro had to say about meeting Timothée Chalamet and learning guitar for the role of Joan Baez.

Monica revealed in a Rolling Stone interview that she met Timothée Chalamet a week before filming — and that he was already more-or-less in character. "The first time we met was a music rehearsal," she tells Brit + Co exclusively. "So we just really launched right into it, which was nice because I admired his work so much from afar and any level of intimidation that I may have had, I could just sort of funnel into music prep, which was great."

"It was a beautiful experience of getting to hear our voices harmonize as these characters and hear the accompaniment of our guitars," she continues. "And we were able to kind of like anchor ourselves in the music and have sort of a meeting of minds that was maybe a little more similar to Joan and Bob because they met in the music scene as already very proficient musicians. So that was a beautiful magical day. And then we like launched right into filming."

Monica Barbaro (who you'll recognize from Top Gun2) stars as musician Joan Baez, and even though Monica had to learn how to play guitar for the role, you'd never guess just by watching the film. She carries herself with such confidence and ease that I'd have believed she'd been playing her whole life. And the fact her voice sounds like a Disney princess is just the cherry on top.

"I'm not a singer, I didn't play guitar," she says. "So there was sort of this introductory level thing going on where I just had to figure out how to form my hands and in some way, I thought about how she might have done that at like 14, I think, when she first picked up guitar. But that was just like an overhaul of everything — I mean, all my time just poured into that training."

She was doing her own research, but also worked with vocal coach Eric Vetro, who's also worked with Ariana Grande, Sabrina Carpenter, and Shawn Mendes. "He encouraged me to consider what the lyrics of songs meant to her," Monica says. "Because the best musicians are storytellers and that's one of the best things about he renditions of these folk songs is you feel the story of the song."

And because of that, focusing on the lyrics "was also a part of the character development. So there were sort of siloed things like voice, guitar research, and then her speaking voice," she says. "And then all of those things started to just kind of like meld, you know. You have to play and sing at the same time and tell a story and do it from the perspective of Joan. And so so they just sort of over time kind of like bridged."

But no matter how much prep Monica, Timothée, and Elle Fanning (who stars as Sylvie Russo) did for the film, they still had to film in the middle of New York City, which came with its own set of 2024-specific challenges. "It was interesting to be filming and have people sneaking videos and posting them on the internet," she says, admitting that she "really just tried to turn all of that off to the best of my ability."

The film highlights the tension between celebrity and fame, considering we meet Bob Dylan right before he becomes, well, Bob Dylan. "It's a privilege to have to have so much attention and excitement on a project and I appreciate the intent, but you kind of just sort of turn it off a little bit and disengage," Monica says, "especially when you're talking about just a very different kind of fame in the sixties."

TikTok sensations Barlow & Bear are no stranger to the spotlight. Besides the fact their Unofficial Bridgerton Musical won a Grammy (and basically broke the internet), popstar Abigail Barlow has millions of streams of her own, while Emily Bear performed in places like the White House and Carnegie Hall before turning 10.

So, it’s safe to say these two know what they’re doing. But one thing they never saw coming? Composing a Disney movie — or becoming the first female duo to do so. But that’s exactly what happened when they booked Moana 2.

How Barlow And Bear's Bond Influences Their Art

“We have such a sacred sisterhood!” Abigail tells me over email. “We met and found musical soulmates in one another. It’s more than just special. It’s a once in a lifetime connection that laid an incredibly strong foundation for creation.”

“Most of my life I’ve been the only girl in the room writing with much older people,” Emily adds. “Honestly because Abigail and I are like sisters, it creates such a safe place to be vulnerable together and create without restraint. When writing for Moana 2, we leaned on that emotional connection to explore the complexities of the story and how much we see ourselves in Moana!”

And the empowering message of the film, which follows Moana’s journey through Oceania, actually influenced their art. “Every day that I worked on Moana, I was empowered to continuously choose who I wanted to be,” Abigail says. “A leader, a listener, and a learner. In being tasked to write for this movie, I was being asked to go past my comfort zones. I think by being completely open hearted to this experience, it allowed me clarity when crafting the lyric and melody with Emily.”

Moana 2 is a story about finding strength through vulnerability, and that message became a huge theme in the music,” Emily says. “All our characters’ journeys reminded us to embrace our imperfections and trust the process of growth — no matter how painful it may seem in the moment. Moana is THAT girl. No one defines her but herself and writing for such an inspiring heroine FOR SURE inspired us right back.”

Why Abigail Barlow And Emily Bear Loved Working On 'Moana 2'

But considering the fact these two women are huge Disney fans (Abigail tells me her favorite Disney movies are The Little Mermaid and Frozen, while Emily loves Hercules and Mulan), one of the most inspiring details about their involvement is the fact that Abigail Barlow and Emily Bear’s Moana 2 score marks the first time a female duo has composed a Disney movie — and it’s a moment they don’t take for granted.

“I hope this shows [young girls] that their voices matter,” Emily says. “Growing up, I barely saw people who looked like me in roles like this, so being here now feels surreal. I want girls and women to know that their stories are powerful and deserve to be told. I really hope that Abigail and I can continue to open doors for more female creatives in film and music.”

And Abigail agrees. “I hope our story encourages young girls and women to forge their own path, and to never let anyone tell them they can’t do something.”

But this unbelievable experience didn’t come without its challenges. “Imposter syndrome is so real and a part of life for every single creative, and anyone who tells you otherwise is lying,” Emily says.

“I’m just trying to enjoy the ride, trust the fall, and be so grateful for the opportunity to be a role model for any little girl who might have a song in her heart,” Abigail says. “It’s an absolute honor and privilege to show her that anything — even magic — is possible.”

And according to Emily, the challenge of imposter syndrome actually propels her forward. “I do feel like that little voice of self-doubt pushes me to do the best work I possibly can do…I zoom out and focus on the bigger picture: the little girls watching this movie and realizing they, too, can dream as big as they want.”

How Lin Manuel-Miranda Empowered Barlow And Bear

One friendly face that provided a soft place to land was actually the original movie’s composer, Lin Manuel-Miranda! To no one’s surprise, theIn The Heights and Hamilton writer had some wonderful advice for Barlow and Bear.

“He was such a wonderful resource especially at the inception of the project when we were just setting sail,” Emily jokes. “He urged us to lean into our heroes for inspiration!”

“He gave me a stack of books I needed to buy,” Abigail adds. “Finishing the Hat by Stephen Sondheim, LYRICS by Oscar Hammerstein, Lyrics on Several Occasions by Ira Gershwin to name a few. He empowered me to study the craft of musical theatre storytelling in a way I never had before.”

And thanks to Barlow and Bear, a whole new generation of young women will dream about musical theatre storytelling now too!
