How to Make a Four-Course Brunch Using Only Your Microwave

After being amazed and inspired by all the gourmet recipes you can make using just your microwave, we decided to take on the challenge and make a whole meal with our trusty old nuker. What better than a full-on brunch with eggs in a nest, french toast, bacon hash, cinnamon apple oatmeal, and hot coffee chocolate? Amaze your friends by whipping up a four-course meal for two, faster than you can say poppity ping.

1. Eggs in a Nest: Start off with a deliciously classic appetizer.

Ingredients:

– 2 slices of bread

– 2 eggs

– cookie cutter

Using your cookie cutter, make a whole in the middle of the bread. Crack an egg into the hole. Microwave for a minute at medium power, then in 30 second intervals until the egg is cooked to your liking. Repeat with the other slice of bread and egg.

A cute way to start off your brunch!

2. Cinnamon Apple and Banana Oatmeal: Adding some warm cinnamon apple and banana takes oatmeal to a whole new level.

Ingredients:

– 2 packs instant oatmeal, any flavor

– 1 honeycrisp apple

– 1 tbsp butter

– 1 medium banana

– cinnamon for garnishing

Cut up your apple into small pieces. Put it in a microwave safe bowl, and add butter and sprinkle cinnamon. Microwave for 1 minute. Remove from the microwave and mix so that the butter and cinnamon are dispersed. Microwave for another 30 seconds. Set apples aside and cut the banana into small slices. Prepare your instant oatmeal according to the directions, then mix in apples, and top with banana.

Adding fresh fruit (especially with a bit of melted butter ) to your oatmeal never fails to please.

3. Bacon Breakfast Hash: A simple hash that’s packed full of flavor.

Ingredients:

– 1 large russet potato

– 2 slices bacon

– 4 eggs

– 1 green onion

– salt and pepper to taste

– optional: rosemary or thyme

Cut up your potatoes into small cubes and separate into two, microwave safe plates. Drizzle olive oil over the potatoes, then add salt, pepper, and any herbs over the potatoes. Cover tightly with saran wrap leaving one corner open, and microwave for 8 minutes. Meanwhile, beat the 4 eggs. Cut up the bacon into small pieces and add to the egg. Dice up the green onion. When the potatoes are done, pour half of the egg mixture over the potatoes and microwave at medium power for 1 minute. Microwave at medium power in 30 second intervals until the eggs are cooked. Top with green onions. Repeat with the other plate of potatoes.

Even using the microwave, the potatoes get a crispy little tan. Delicious!

4. French Toast: Using the microwave to make french toast is so much easier, and requires minimal cleaning.

Ingredients:

– 2 slices of bread (we used challah)

– 1 egg

– ¼ cup milk

– 1 tsp vanilla extract

– cinnamon for garnish

Mix the milk, egg, and vanilla extract together. In a small microwave safe ramekin or bowl, tear one of the slices of bread into pieces and fill the ramekin. Drizzle the egg mix over the bread. Repeat with the other slice of bread. Microwave in the oven for 2 minutes, or until it’s no longer runny. Sprinkle with cinnamon.

We love this fun spin on french toast that’s inspired by bread pudding.

5. Caffe Cocoa Mocha:Coffee meets chocolate in an equally delicious and energy filled beverage.

Ingredients:

– 2 packets hot chocolate mix (we used TCHO hot chocolate mix)

– 1 packet instant coffee (we used Starbucks Via, mocha flavor)

– 2 cups milk

Pour instant chocolate mix and half of the coffee mix into a microwave safe mug, and repeat. In a separate microwave safe bowl or mug, microwave the milk for 2 minutes. Pour about half the milk into both cups and stir vigorously with a spoon until the powder dissolves. Distribute the rest of the milk between the two cups and enjoy.

We love how well the bitter coffee pairs with the rich hot chocolate.

Like tiny lil' Snickers bars, these are another easily snackable Trader Joe's candy due to their small size. Each micro chocolate features a layer of creamy nougat covered in caramel and peanuts that provides a super satisfying texture. I fear I've demolished a bag within 24 hours a couple times now...

Every bite of this Trader Joe's candy is different, which always makes eating dessert (or a snack... or a midnight snack...) enjoyable! This boxed medley of jelly beans actually contains 18 different flavors for you to distinguish just by tasting 'em. Plus, you can create and hone in on your very own flavor combos by popping two or three in your mouth at a time – yum!

This is one of my absolute favorite TJ's candy picks to add to my cart and share with a pal or two because we can deliberate about the exact flavor notes together! We love a bonding moment.

This M&M's dupe from Trader Joe's is just as good as the original. Each bite is what you'd expect: creamy chocolate bits covered in a crunchy colored coating – but the main difference with these is that the color in the candy shells is actually derived from natural dyes, sourced from things like spirulina, annatto, red radish, turmeric, beetroot, and red cabbage! My fave part about this Trader Joe's candy is it comes in a resealable bag that makes storing and transporting 'em entirely seamless.

While some Trader Joe's fans will truly ride or die for the OG Scandinavian Swimmers, I ague that the sour version is way better. The sourness of it all really enhances the snacking experience – plus, you still get to enjoy all the same flavors of the "swimmers," like red berry, huckleberry, strawberry, and orange. I love sneaking this bag into the movie theater to bypass expensive prices – I refuse to snack on any other candy (other than the aforementioned iconic PB cups) these days.

Who's producing and writing the script for Clueless 2? 

Writers Josh Schwartz, Stephanie Savage and Jordan Weiss are hard at work on the Clueless script. Alicia Silverstone is also an executive producer alongside Amy Heckerling, writer and director of the OG film, and producer Robert Lawrence (via Variety).

Knowing the names who made the iconic film what it is makes me feel relieved the series will be the one fans of the cult classic deserve!

What is the Star Wars Starfighter movie?

Star Wars: Starfighter is a brand new Star Wars movie that's set apart from any of the trilogies we've seen so far (although it looks like it's part of a brand new trilogy!). The movie is a "standalone adventure taking place approximately five years after the events of 2019's Star Wars: Episode IX – The Rise of Skywalker."

But even though the final movie ended on a peaceful note, Ryan Gosling's character is sure to be in for some kind of crazy adventure. "This is the perfect place to start this journey for us, because it's such an incredible reminder of why we're going to make this movie and who we're going to make this movie for," Ryan said at the Star Wars Celebration (via Entertainment Weekly). "[The] script is just so good. It has such a great story with great and original characters."

"This is a standalone. It's not a prequel, not a sequel. It's a new adventure," Shawn added. "It's set in a period of time that we haven’t seen explored yet."
