Millionaire’s shortbread is a real classic — it’s hard to go wrong with layers of buttery shortbread, gooey caramel, and creamy milk chocolate. But if you’re looking for an elegant dessert for your wedding or fancy party, you might want to serve up something a little more refined than a big slab of shortbread. These mini millionaire’s shortbread tarts are perfect — they’re just as delicious as your old favorite, but a bit more delicate. Make tiny versions like I did for a glamorous canapé, or slightly larger versions to serve for dessert. I like to add a pinch of sea salt on top to take them to the next level!
Ingredients:
Makes 18 mini tarts
- 18 mini sweet pastry cases
- 2/3 cup dulce de leche
- 4 1/2 ounces milk chocolate
- 1/4 cup cream
- 2 ounces white chocolate
- a few pinches sea salt
Instructions:
1. Add a dollop of dulce de leche to each mini pastry case — fill each case about halfway.
2. Add the milk chocolate and cream to a small saucepan. Cook over a fairly low heat for a few minutes, stirring regularly, until the chocolate has melted and the mixture is smooth and glossy.
3. Fill each pastry case to the top with the chocolate mixture, and place in the fridge to set.
4. When the mini millionaire’s shortbread tarts have set, melt the white chocolate, and drizzle over the top. Finish each tart with a small pinch of sea salt.

As you can see, these mini millionaire’s shortbread tarts are super easy to make, but no-one would know from looking at them — they’re elegant and refined, not to mention they taste amazing! As you bite through the chocolate topping, the gooey dulce de leche inside oozes out — it’s irresistible.
