3 Mouthwatering Appetizers for Your Next Party

So you’re planning a party, eh? Well, we’ve got your appetizer list covered with three scrumptious recipes from Dawn Perry, who has partnered with LAY’S® Wavy. Start the evening with a charcuterie plate and hickory cheese crackers, then move on to passed apps. We’ve got chicken strips with ranch dip and divine coconut crusted shrimp. Throw on some soul music in the background and make some mixed drinks, and you’ve got this party nailed.

Hickory Chicken Strips With Ranch Yogurt Dip

Ever thought about using chips as breading? Start thinking about it, because you’ll never go back.


Serves 4

Chicken

– ½ cup flour

– 2 large eggs, beaten

– kosher salt, freshly ground black pepper

– 6 ounces LAY’S® Wavy Hickory BBQ Flavored Potato Chips, crushed (about 2 cups)

– 1 pound chicken tenders

– 4 Tablespoons vegetable oil

Ranch Yogurt Dip

– 3/4 cup Greek yogurt

– 1 Tablespoon fresh lemon juice

– 1 scallion, white part only, finely chopped

– 1 ½ teaspoons chopped fresh parsley

– 1 ½ teaspoons finely chopped fresh chives

– 1 teaspoon olive oil

– 1 garlic clove, finely grated

– kosher salt, freshly ground black pepper

Instructions:

Chicken

1. Place flour and eggs in two separate shallow baking dishes; season both with salt and pepper.

2. Place chips in a third separate shallow baking dish.

3. Working a couple at a time, dredge chicken tenders in flour, shaking off excess.

4. Dip in beaten egg, then into crushed chips, pressing to help the chips adhere. Transfer breaded chicken pieces to a parchment-lined sheet tray.

5. Heat two Tablespoons oil in a large heavy skillet over medium heat.

6. Working in batches, cook chicken until golden brown and cooked through, about four minutes per side, adding remaining oil between batches. Transfer tenders to a paper towel-lined plate and season with salt.

Roasted Garlic & Sea Salt Coconut-Garlic Shrimp


Serves 4

– 2 ounces LAY’S® Wavy Roasted Garlic and Sea Salt Chips, crushed (about 2/3 cup)

– 1/2 cup unsweetened shredded coconut

– zest of 1 lime, plus juice for serving

– ¼ teaspoon kosher salt

– 2 large eggs, beaten

– 16 large shrimp, peeled, deveined, tails left on

– ¼–1/2 cup vegetable oil for frying

– sweet chili sauce, for serving

Instructions:

1. Combine crushed chips, coconut, lime zest and salt in a shallow baking dish.

2. Place eggs in a separate shallow baking dish.

3. Working a few at a time, dip shrimp in egg wash, letting excess drip off. Then dip into chip mixture, pressing to help coating adhere.

4. Transfer breaded shrimp to a parchment-lined baking sheet and repeat with remaining shrimp.

5. Pour enough vegetable oil in a large skillet to reach a depth of 1/4 inch and place over medium-high heat.

6. Working in batches, add shrimp to hot oil and cook until golden brown and cooked through, 1–2 minutes per side.

7. Transfer to a paper towel-lined plate to drain; season with salt and squeeze lime juice over top.

8. Serve shrimp with sweet chili sauce for dipping.

Slice and Bake Hickory Cheese Crackers


Makes about 48

– 4 ounces sharp cheddar cheese, grated

– ¾ cup all-purpose flour

– ¼ teaspoon kosher salt

– ¼ teaspoon freshly ground pepper

– 3 ounces LAY’S® Wavy Hickory BBQ Flavored Potato Chips, crushed (about 1 cup)

– 4 Tablespoons (1/2 stick) unsalted butter, at room temperature, cut into pieces

– 4 Tablespoons ice water

Instructions:

1. Combine cheddar cheese, flour, salt, pepper and 2/3 cup crushed chips in food processor and pulse to combine.

2. Add butter and pulse until mixture is crumbly.

3. Add water, one tablespoon at a time, until dough comes together into a malleable ball (but you don’t want it to be wet or sticky).

4. Gather the dough together and form into a log.

5. Roll log in remaining 1/3 cup chip crumbs, pressing to help crumbs adhere.

6. Wrap the log in parchment or wax paper and twist the ends to seal. Refrigerate until firm, at least two hours and up to two days.

7. Preheat oven to 350 degrees Fahrenheit. Slice log into ¼-inch thick rounds and place one inch apart on two parchment-lined baking sheets. Bake until golden and firm, 12-15 minutes. Let cool completely on baking sheet. Store in an airtight container up to two days.

What is an unexpected business challenge that you faced and how did you overcome it?

I wouldn't call myself a FAFSA (Free Application for Student Aid) expert, but I ended up having to know a lot more about it than I ever anticipated. FAFSA is what administers Pell Grants, which is what a lot of colleges base their financial aid on. I knew about the application changes, and some were excellent, but they made a series of critical errors and a lot of parents were scrambling. It was not my intent to have this as my area of focus; it just became a necessity.

What's a recent small win for your business?

Recent small wins are my collaborations. I formed partnerships with one organization that focuses on students with special needs. I hosted a webinar with the executive director of that organization. I formed a partnership with members from an insurance company on planning and paying for college. That was my first corporate sponsorship. And I've got a series of events coming out because others actually reached out to me. One of them I met through another networking platform, but I got to that platform from one of the sessions that I did with Verizon Small Business Digital Ready Program.

How did you start to collaborate with external partners?

Just changing my strategies and my approach, and just being more secure and more emphatic in making connections. It ends up being this continual cycle.

Is there a woman in business that you admire or that you look up to?

I have two. Leontyne Anglin, who runs a nonprofit called Beyond Expectations. She works with a small pool of students, but she just gives them enormous exposure and opportunity. She's brilliant with collaborating with individuals and businesses and really bringing the students what they need. And then the other on a bigger scale is Cate Luzio, founder and CEO of Luminary, who taught her Business Plan Bootcamp through the Verizon Small Business Digital Ready Program. She is just a dynamo. She is just so supportive of women entrepreneurs. She's awesome.

How did the Verizon Small Business Digital Ready Program help propel your business forward?

All of the collaborations and partnerships with the exception of one all came from joining the Verizon Small Business Digital Ready Program. I’ve taken all of the free classes and the one on projections and pricing, something every entrepreneur struggles with, was very helpful. There have been so many of them. Sometimes you're completely ignorant in a category so you take the class and it's like, okay, that's good to have. But then sometimes you sign up for it and it's like, oh, yeah, I did know 90 percent of that, but this other 10 percent is going to be very, very helpful.

What's an unexpected business challenge that you've had to face and how did you overcome it?

The hardest thing for me was my sister passed away and I ended up taking custody of my nieces. I ended up being a single mom of four kids. This is the thing that transitioned my whole entire life. I stopped doing web design and started my podcast Mom Owned and Operated. I wanted to reconnect with other moms and figure out how they were able to run their businesses and raise a family and take care of themselves because I wasn't able to do all three at the same time. Through that journey, I realized that I really needed to connect with other people and how important it was for my business. It helped me to create that community that I was yearning for that I didn't realize that I needed.

What's a recent small win for your business?

For me, the win was just pivoting back to something that I actually wanted to do. Also, I’ve started to say no to things that I no longer want to do.

Who is a woman in business that you look up to and why?

I have always admired and looked up to Amy Porterfield [author of Two Weeks Notice]. I listened to her all the time when I was starting out. I think that she's amazing and I love her stuff. She just seems like a very genuine person.

Is there a resource that has made an impact on you as an entrepreneur?

I listen to a lot of audio books. One of my favorites that has been huge for me is You Are A Badass by Jen Sincero. I was told when I first started my business, by a friend who was a business coach, that I have a mindset problem. Ten years ago, I had no idea even what “mindset” was. Sincero’s book helped me to see what she meant by “mindset” and helped me adjust that mindset and fix some of the things that I didn't realize were broken.

How has the Verizon Small Business Digital Ready Program helped propel your business forward?

There are a lot of things that I have loved about it. There are local networking and training opportunities, and that has been great, and the online training is very valuable. It's a great resource. I find that marketing needs a three-tiered approach, meaning you need to network it locally, socially, and then also have a very comprehensive online approach to your marketing. One of the Verizon Small Business trainings that I took was all about taking advantage of your local resources. I found that to be extremely valuable because often people think they need to just focus on social media. I don't think that people focus enough on their local community.

Our favorite dancing queens (Meryl Streep included) might be returning to the big screen for a third encore of Mamma Mia! and we’re already rewatching the first two movie musicals in preparation.

In an interview with Deadline in May of 2023, Mamma Mia! franchise creator and producer Judy Craymer said a third movie musical is in "earliest stages." She also shared that she has come up with a way to bring Meryl Streep back again.

"I don't want to over-egg it," she said of the unofficial news, "but I know there's a trilogy there…and I do think Meryl should come back, and if the script is right, she would, I think, because she really loved playing Donna."

"Of course I want to do it," Streep said during the 2024 Cannes Film Festival (via Deadline). Sounds promising to us!

Is Mamma Mia 3 happening?

Yes, Mamma Mia 3 is in its early planning stages! Christine Baranski just told The Hollywood Reporter that she's met with producer Judy Kramer, and that Kramer has plans for the third movie. "She gave me the narrative plotline of how it’s going to happen," Baranski says. "That’s all I can say! But, it’s not like, 'Oh, I wish it could happen!' Judy Kramer makes things happen. She made number two happen, and it was a phenomenal hit. I wouldn’t put it past Judy Kramer to get everybody back together."

A third installation was first mentioned way back in 2020, during a Collider interview with Mamma Mia! star Amanda Seyfried. Seyfried said she was on board — and at the time, she thought the rest of the star-studded cast would be too.

"Listen, every single person in that movie would say yes in a heartbeat because we want to hang out with each other," Seyfried told Collider at the time. "That's what we talked about last time, like did we ever think that we'd end up here again on an Island in Croatia?"

When will Mamma Mia 3 come out?

We don't have an official answer about when to expect this highly anticipated sequel. The project is in the "earliest stages," according to creator and producer, Judy Craymer. Cher also revealed to Entertainment Weekly that everyone is "talking about it," but she doesn't "know when they're going to do it."

Has casting information been shared about Mamma Mia 3?

While nothing's been made official, Amanda Seyfried just said something that made my heart skip a beat. She told ABC News she loves Sabrina Carpenter's music and dropped this admission: "If Sabrina Carpenter wants to play my daughter, I’ll make it happen."

But before she admitted that, the actress said something else that made me raise my eyebrows. "Everybody says it’s gonna happen, but I mean, I haven’t seen a script."

Cher is also eager to return to the beloved franchise and is rooting for Meryl to make an appearance again. "I keep saying, 'Meryl, you've got to come back,'" she said (via Entertainment Weekly). She also said she's told her, "'It'll be fun. You'll have a good time. You'll be able to sing.'"

I don't know what it'll take, but hope someone gets a script in Amanda Seyfried, Cher, and Meryl Streep's hands ASAP!

What is the first Mamma Mia about?

There's nothing ~normal~ about how much we love Normal People's Paul Mescal & Daisy Edgar-Jones. While it turns out we're not getting a Normal People season 2 (yet), the two actors are starring in some of 2024's biggest blockbusters (Twisters and Gladiator II, namely), and we've been soaking up their presences ever since.

Paul recently exhibited his ongoing friendship with Daisy at the Gladiator II premiere in Los Angeles. While he approached Brittany Broski on the red carpet for an interview, he recognized her from her recent 'Royal Court' interview with Daisy:

"You were with Daisy!" he chimed in excitingly. We just love this power duo!

Daisy Edgar-Jones also revealed that she's remained incredibly close to Paul Mescal after their time on Hulu's Normal People. "Paul is one of my lifetime best friends," she says. "He’s an incredibly grounded person and I am too, I think, so it’s nice to be able to have those touchstones and those people you can laugh about it with and be lighthearted with. We met when I was 20 and Paul was 22; I’m so excited to see where we’ll be at 32, 42, and what life will bring us."

But the coolest thing is that not only is Normal People special for Paul and Daisy, but they've also been able to see the effect of the show on its fans.

"The thing I love people saying the most is, 'It made me contact my ex,'" Daisy continues. "Especially when much older people say, 'I just wanted to reach out to the person I was with when I was 17 just to say you were a big part of my history and thanks for being part of who I am, the tapestry of my life.' And that I really love, because I’m a massive romantic."

Daisy recently revealed they bonded over their training for Twisters and Gladiator II.

"I did running lessons — isn’t that crazy?" she told Variety. "Actually, Paul [Mescal] and I were laughing about it, because he was training for 'Gladiator II' and I was training for 'Twisters,' and obviously he had to be huge and I was like, 'Don’t worry, I’m going to be right up there with you.'"
