Baked Eggs in Butternut Squash Rings
Yummy Thanksgiving Appetizers can be as cute as they are scrumptious — like these Baked Eggs in Butternut Squash Rings recipe form Lisa Steele, author of The Fresh Eggs Daily Cookbook. Here's how you make it:
Ingredients:
- 1 large butternut squash
- Extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 6 eggs
- 1/2 cup freshly grated Parmesan cheese
- Fresh sage for garnish
Directions:
- Preheat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Wash the squash and cut crosswise into six 3/4- to 1-inch slices. Scoop out the seeds and hollow out the middle of each slice to allow room for an egg.
- Arrange the squash on the baking sheet and brush each ring with olive oil inside and out, then season with salt and pepper. Bake on the center rack of the oven for 20 minutes, until the squash has softened. Remove the baking sheet from the oven and gently crack and slide 1 egg into the center of each squash ring. Season with salt and pepper, drizzle with olive oil, and return to the oven. Bake about 8 minutes, until the egg whites are set and the yolks are firm but not fully set.
- Use a spatula to slide the squash rings onto plates. Top with Parmesan, garnish with fresh sage, and drizzle with olive oil.

In all honestly, all I look forward to during the holidays (other than my fam) is the pie. There's pumpkin pie. Apple pie. Chocolate pie. Sweet potato pie. But more than any other dessert, pecan piejust gets me. I'm salivating as I'm thinking about it!

Ingredients For Easy Pecan Pie Bars

For the shortbread crust:
- ½ cup butter
- ¼ cup granulated sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 2 tablespoon cornstarch
For the pecan pie filling:
- 2 eggs
- ¾ cup brown sugar
- ½ cup light corn syrup
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 teaspoon cornstarch
- 1 & ½ cup pecans chopped
How To Make Easy Pecan Pie Bars

- Preheat the oven to 325 F, then line an 8x8 pan with parchment paper and set aside.
- In a large bowl, add in the flour, salt, cornstarch, and mix. Add in the cold butter and work it into the dough with your hand or a pastry cutter until cookie dough forms. Press it onto the prepared baking pan and bake for 20 minutes.
- In a separate large bowl, mix the eggs, brown sugar, light corn syrup, heavy cream, salt, vanilla extract, and cornstarch until combined. Stir in the pecan pieces.
- Once the crust is done baking, pour the pecan pie filling on top of the crust and bake for 30-35 minutes. The edges will brown a little, and the center will be barely jiggly.
- Remove from the oven, and let cool completely before transferring to chill in the fridge for at least 30 minutes. Slice the bars and serve.

Charlie Brown and Sally are preparing to spend Thanksgiving at their grandma's house. But when Charlie gets a call from Peppermint Patty, he learns that she's invited herself, Marcie, and Franklin over for dinner! Stuck between a rock and a hard place, Charlie decides to provide a low-key meal for his friends — which brings us to my favorite cooking montage of Snoopy making popcorn, jelly beans, and toast, and setting up a ping pong table like a dinner table.
Peppermint Patty is not happy with the dinner options, and is honestly pretty rude to Charlie, but Marcie reminds her the true spirit of the Thanksgiving season is about being together. It makes me a little weepy just writing this TBH!
I won't spoil the ending of the special just in case you somehow haven't seen it (?!?!) but I will say one of the final scenes features a station wagon with plenty of seating in the back, and as someone who grew up with mini vans and sedans, I still dream about riding in a car like this.

20. Decorate a plant pot with pops of color.
If your gift recipient has a green thumb, it’s not a bad idea to gift them a few plant-related things. Luckily, handmade gifts have a stake in this – just grab a terracotta pot (you can easily thrift one or find one for cheap at the dollar store) and some chalk pens, then decorate the exterior however you like.
To get some ideas flowing, you could include illustrated motifs of your relationship with this person, write their name out in bubble letters, or just doodle random designs. Matching their interior design aesthetic is definitely recommended.
