This silky, smooth and extra creamy Spicy Pesto Pasta Alla Vodka is the perfect cozy winter recipe. Fresh pasta tossed in a spicy tomato pesto vodka sauce that's creamy and so delicious! The secret to this one-pot pasta? Basil pesto and plenty of cheese on top. The pesto adds a vibrant layer of flavor and richness to this silky and smooth pasta. Serve this 30-minute dinner up any night of the week. It's delicious and looks pretty on any table…not to mention that everyone LOVES a GOOD creamy vodka pasta. This dish will be your new go-to.

So what does the vodka actually do?

The vodka adds a sharp bite that helps to balance out the sweetness of the tomatoes. When used in small amounts, the vodka will boost and intensify the aroma of the sauce. The key is to slowly simmer vodka into the sauce. This will release its flavors and cook out the alcohol.

If you prefer to not cook with alcohol, swap the vodka for chicken broth, vegetable broth, or even just water. That will be totally fine and your sauce will still be great.

All the spicy details…

This pasta is simple. I didn't go over the top with it but instead wanted to really focus on the traditional flavors of a great vodka pasta…garlic, tomatoes, and cream. The key is to slowly cook the garlic in oil. I learned this trick when I first started cooking from a friend of our family's, Mrs. Mooney, as I called her, and actually still call her to this day.

Mrs. Mooney taught me to slowly caramelize garlic in olive oil to really infuse flavor into a recipe, especially within an Italian-style red sauce. So, don't skip this step! Once the garlic is extra fragrant and turns golden, I like to stir in the tomato paste and chili flakes. Then cook those for a bit to really help intensify the flavors in the sauce.

Once that's cooked for a bit, stir in lots of cream. Then let the sauce simmer while you boil the pasta.

For the pasta, I just used short cut rigatoni (to be honest, it's really the best kind of short cut pasta I can find in my area). But use any short cut pasta you love or have on hand.

You'll want to first boil off the pasta, then just before draining reserve some of the pasta cooking water. This step is so important, so be sure to not dump the water before reserving a cup. The pasta water is used to finish the creamy vodka sauce.

Now add in some of the pasta cooking water and simmer the sauce until it has reduced down a bit and thickened. At this point, your kitchen is going to smell amazing. There should be hints of garlic and butter throughout…it's the best of Italian scents.

Once the pasta is cooked, toss it with the sauce and that pasta water. Add some butter and toss until the sauce is very creamy. Stir in the parmesan and basil. Immediately the heat from the pasta intensifies the smell of the basil…leaving you with nothing but excitement for dinner.

And trust me, you should be excited. Every bowl of pasta is creamy, just oh so slightly spicy, with a subtle pesto touch, and just the right amount of butter and cheese.

It's is so very good. Roll your eyes back, go for that second bowl, and finish the pasta all in one sitting, GOOD. Dramatic, but true.

The leftovers are just as delicious! You can prepare the dish in advance, keep it fully assembled in the fridge, and then bake before serving. I love dishes like this for holiday entertaining…they make life so easy!

You can even prepare the sauce way ahead of time, then just add the pasta before you're ready to serve. This would make a great dinner party meal with a side salad and some bread. Usually, I keep it simple with my 5 Ingredient Beer Bread or Salted Butter Parker House Rolls. It's one of those pasta dishes that's easily loved by all.

INGREDIENTS

  • 1/4 cup extra virgin olive oil
  • 1 shallot, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • 1-2 teaspoons crushed red pepper flakes
  • 1/2 cup tomato paste
  • 1/4 cup vodka
  • 3/4 cup basil pesto, homemade or store-bought
  • kosher salt and black pepper
  • 1 cup heavy cream or canned coconut milk
  • 1 pound short cut pasta
  • 3 tablespoons salted butter
  • 1/3 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil roughly chopped

INSTRUCTIONS

  1. Heat a large skillet over medium-low heat. When the oil shimmers, add the shallot, garlic, and oregano. Cook until the shallots begin to caramelize, about 5 minutes. Reduce the heat to low, add the tomato paste and red pepper flakes, cook 4-5 minutes, until thickened. Stir in the vodka, cook another 2 minutes. Stir in the pesto and cream. Season with salt and pepper. Keep warm over low heat.
  2. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Just before draining, remove 1 1/2 cups of the pasta cooking water. Drain.
  3. To the vodka sauce, add the pasta, 1/2 cup pasta cooking water, and the butter, tossing until the butter has melted. Add the parmesan and basil. If needed, thin the sauce with additional pasta cooking water.
  4. Divide the pasta among plates and top with basil and cheese. Enjoy!

Recipe Notes

To Replace the Vodka: use an equal amount of chicken or vegetable broth.

To Make Ahead: prepare the alla vodka sauce through step 1. The sauce can be made 4 days ahead of time and chilled in the fridge. To serve, warm on the stove, follow the directions through step 2.

To Freeze: the alla vodka sauce can be made, then frozen in a freezer-safe container for up to 3 months. Thaw, then use as directed.

"There's no place like Rome," Lily says with a wink. And, to be frank, we have to agree. I didn't think Emily in Parisseason 4 (or its fashion) could get any better after that Part 1 ending, but taking our favorite Parisians to Rome turned out to be a fantastic move — and not just because it introduced us to Marcello.

"He’s met the guy; he realizes the circumstances under which they met, and I think he just didn’t understand how fast things had moved between them."

But as much as we love to see Emily and Gabriel together, Lily Collins is excited to explore a Emily and Marcello. “Marcello is a whole other adventure that we want for Emily because we ultimately want Emily to be able to have a better work/life balance,” she tells TUDUM. “We want to have Emily be able to smile without condition. We want to see her beyond her vacay mode. And he comes at that perfect time.”

  • 4 ounces vermicelli rice noodles, cook according to pkg directions
  • 1/2 pkg Perdue® Fresh Cuts Chicken Breast Strips
  • 1 jar of peanut sauce

  • 1/2 head of green cabbage, sliced
  • 1 carrot, julienned
  • 2 small cucumbers, thinly sliced
  • 1/2 mango, cubed
  • 1 pkg mung beans
  • 1 avocado, sliced
  • 1 spring onion, sliced
  • 1/3 roasted peanuts, roughly chopped
  • Optional herbs: cilantro, mint, thai basil
  • 1 lime, cut in wedges
  • Hot sauce

1. In a medium bowl, combine 3/4 cup peanut sauce (thin with a little water if too thick) and chicken breast strips to marinate for at least 30 minutes.

2. On a grill pan or sauté pan, heat oil over medium heat until shimmering. With tongs, remove the chicken from the marinade and place directly onto pan in one layer. If the pan isn’t large enough, make in batches. Season with salt and pepper.
3. Cook for 3-4 minutes per side, not moving or flipping until well browned. Chicken is ready when an insta-read thermometer reads chicken at 165℉.

4. Transfer grilled chicken to plate to rest while you assemble the bowls.

5. To assemble bowls, equally divide the rice noodles into four bowls, top with cabbage, carrot, cucumbers, mango, mung beans and avocado.

6. Add sliced chicken with any reserved juices, and top with spring onions, peanuts and herbs.

7. Drizzle with peanut sauce (thin with a little water if too thick). Serve with lime wedges and favorite hot sauce.

2. In a medium bowl, combine 3/4 cup Italian dressing and diced chicken breast to marinate for at least 30 minutes. Skewer 4-5 pieces of chicken onto each skewer.

3. On a grill pan or sauté pan, heat oil over medium heat until shimmering. Place skewers directly onto pan in one layer, in multiple batches. Season with salt and pepper.

4. Cook for 3-4 minutes per side, not moving or flipping until well browned. Chicken is ready when an insta-read thermometer reads chicken at 165℉.

6. To assemble salad, layer each plate with lettuces, pea shoots, snow peas, radishes, carrot, asparagus and top with micro greens, freshly cracked pepper and goat cheese. Drizzle your favorite Italian or citrus dressing and enjoy!

1. Preheat oven to 350ºF. In a medium bowl, combine taco seasoning, olive oil and chicken and toss to coat. On a greased (or parchment-lined) sheet pan, arrange chicken and veggies into one layer. Season liberally with salt and fresh pepper.

2. Bake for 15 minutes. Halfway through, flip the chicken. Chicken is ready when an insta-read thermometer reads chicken at 165ºF. Set aside while preparing the tacos.

3. To assemble the tacos, layer tortillas with cabbage, chicken, roasted vegetables, red onions, avocado and cotija and top with crema and cilantro.

MAJOR The Last of Us season 2 spoilers ahead!

If you thought The Last of Us season 2 couldn't get more dramatic than its premiere, then you'd be wrong. Season 2 primes us for some emotional drama by showing just how much Ellie (Bella Ramsey) and Joel (Pedro Pascal) are at odds, and throwing Abby (Kaitlyn Dever), who's seeking revenge on Joel for her own father's murder, into the mix shatters everything.

The Last of Us season 2, episode 2, "Through The Valley" is already being heralded by social media users as one of the best episodes in TV history. But it's definitely memorable for one specific reason: the episode killed off Joel, played by Pedro Pascal.

Let's talk about what the heck just happened with Joel Miller (Pedro Pascal) in The Last of Us season 2.

Does Joel die in episode 2?

Joel Miller (played by Pedro Pascal in the hit HBO show) dies in The Last of Us season 2, episode 2. "People are going to be upset. That's sometimes how good drama goes," executive producer Craig Mazin tellsUSA Today. "This was something that was always meant to happen. So much of the first season was, in a weird way, leading to this moment. And it's upsetting."

The horrifying moment comes after a blizzard — and some infected — put Abby, Joel, and Dina (Isabela Merced) on a collision course. After they rescue her from the aforementioned infected, Abby brings the two Jackson residents back to the lodge in the mountains where her group is hiding. Meanwhile Jackson, dealing with its own infected attack, burns in the distance.

Joel's anxious to return to town, but he's got bigger problems: Abby recognizes him as the man who killed her father (and wiped out the Firefly hospital) and, after putting Dina to sleep, Abby takes out five years' worth of anger and devastation on him with a golf club. Yeah. I can't believe it either.

But even more horrifying is when Ellie finds the lodge and bursts into the room. When she begs Joel to get up, there's a moment when you can see a beaten Joel start to lift himself up from the ground before Abby uses the now-broken golf club to kill him. I hope Ellie holds onto this moment and knows Joel was willing and able to do whatever it took to keep her safe!! I will scream about them forever!!

As Abby's group leaves, Ellie swears she'll kill them, and "you can't help but believe it is absolutely true," Craig says. There's a truly devastating shot of Ellie lying over Joel's body in the empty room that parallels her nursing him back to health at the end of season 1, episode 7 and I don't know if I'll ever get over it.

Why was Joel killed off?

In addition to being literal retribution for the death of Abby's father, Joel's death is a catalyst for Ellie's journey throughout the rest of the season as she grapples with revenge, grief, and anger. "Loss is kind of how this story functions, so this was largely preordained," Craig continues.

And yes, Pedro was aware of this devastating scene when he signed up for the life-changing role. "When I talked to Pedro the first time, I said, 'This is how this will go,'" Craig says. "I wanted him to know that we're not going to do this for seven seasons with you in that spot. We're going to do a season, and if it goes well and there's a second season, this will happen."

What happens to Ellie after Joel dies?

The trailer for the rest of The Last of Us season 2 shows that Ellie and Dina aren't giving up until they enact their own revenge on Abby and her group. The two women are headed for Seattle and they're up against infected, the militia, and everything else this post-apocalyptic world has to throw at them.

But even though Joel's gone for good, Pedro isn't. We're in for plenty of flashbacks that fill in those five years between seasons 1 and 2!
