Pies + DIYs: Memorial Day Weekend Edition

Welcome to another episode of Pies + DIYs! I'm sure you can guess what this series is all about — doing DIYs while eating pie :) You can tune in every Wednesday to pick what DIY project I (Kelly) will make LIVE! I only have three tools and six materials to work with to create the DIY of your choice. Hope to see you all there!

In this episode, we updated an old accessory, making it into something new for Memorial Day. I turned basic white sneakers into flag kicks by using a mix of different types of fabric paint and painter's tape. To create the red striped sneaker, I made stripes using painter's tape and then sprayed the whole shoe with red fabric spray paint — which I LOVE. Once the shoe dried, I peeled off the tape to reveal the red stripes. For the star sneaker, I used blue fabric paint and blue puff paint to hand paint and then outline the stars to make them really stand out.

For this year’s Thanksgiving pie, why go the traditional route? We say create your own memories, starting with this black bottom walnut pie from Jaynelle St. Jean, chef and owner of in Oakland, California. Her bakery is known for offering fun twists on classic pies like a chocolate cream confection with a buttery pretzel crust, a grapefruit custard with graham cracker crust, and her most eye-catching treat: the black bottom walnut pie.

The pie starts with a flaky butter crust that’s topped with a layer of chocolate. Inside that decadence is a walnut filling with molasses and vanilla. Her modern take on the classic nut pie has become a Thanksgiving staple for Bay Area locals, so much so that the shop has a line down the street on Thanksgiving morning. In previous years, her pies sold out for home delivery via William Sonoma.

This Thanksgiving, St. Jean has given us her famous recipe to share with you. Veer off the beaten path and bring this unique pie to this year’s Friendsgiving.

BLACK BOTTOM WALNUT PIE Recipe

(Makes 1 pie; 9 servings)

Ingredients:

Crust:

  • 1 1/4 cup flour
  • 1/4 teaspoon salt
  • 8 tablespoons cold salted butter, cubed
  • 1/4 cup ice water

Black Bottom Crust:

  • 1 cup flour
  • 3 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold butter
  • 3 tablespoon sugar
  • 2 egg yolks

Filling:

  • 1 cup corn syrup
  • 2 eggs, beaten
  • 1/4 cup brown sugar
  • 2 tablespoon flour
  • 2 tablespoons melted butter
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Toppings:

  • 1 cup whole walnuts
  • freshly whipped cream, for serving

Directions:

1. Preheat oven to 350°F.

2. Make the butter crust. Combine the flour and salt in the bowl of a food processor, add butter, and pulse until coarse.

3. Add ice water and combine until a dough forms.

4. Form into a ball, cover with parchment paper or plastic wrap, and refrigerate for roughly 20 minutes.

5. Make the chocolate crust. Combine flour, cocoa powder, and salt in a bowl, and set aside.

6. In a separate bowl with an electric mixer, beat butter, sugar, and egg yolks until combined.

7. Add in flour mixture, and mix until a dough forms.

8. Form into a disk, cover with parchment paper or plastic wrap, and set aside.

9. Prep the crust. Lightly dust a flat surface with flour. Remove butter crust from fridge, and roll out with a rolling pin until crust is about 1/8-inch thick and fits your pie pan.

10. Carefully fold the crust in half and half again to transfer it into the pie pan without breaking. Unfold it inside of the pan, then cut the edges so they hang off the pie pan (about an inch).

11. Tuck the crust edges under itself. Then position one hand on the inside of the crust’s edge and the other on the outside. Push the dough between the index finger and thumb of your outside hand and index finger of your inside hand (see picture). You’ll form a U shape with the crust. Continue the same pattern with the remaining crust to form a decorative, crimped edge.

12. Place it in the freezer for 30 minutes or until firm.

13. Make the filling. While crust firms up, combine all filling ingredients in a large mixing bowl, and whisk until combined. Set aside.

14. Assemble the pie. Once the crust is firm, remove from freezer.

15. Gently press the chocolate crust on top of the buttery crust base until it evenly covers the entire bottom.

16. Place the walnuts on top of the chocolate crust.

17. Pour into the prepared pie, on top of the walnuts.

18. Place your pie pan on a baking sheet and bake for 30-40 minutes or until set around the edges and the center is puffy and jiggly.

19. Allow pie to cool completely before serving with freshly whipped cream.

It's gonna taste so great as a dip for crackers or as a spread on a Mediterranean pita wrap.

3. Organic Concord Grape Jelly

This squeezable grape jelly ($3.49) is nothing short of nostalgic. Trader Joe's says it's "super smooth, joyously juicy, and potently purple," which immediately has us sold on making PB&Js every day now.

4. Spicy Chicken Nuggets

Oh, yeah. Bring on the spice with these spicy nuggs ($3.99) that make the perfect easy meal no matter the time of day! Made from all-natural chicken breast and rib meat, breaded with wheat, rice and corn flours, then covered in hot sauce and lightly fried, TJ's has their texture down to a tee. You can easily cook 'em in the air fryer, oven, or microwave before chowing down!

5. Crispy Potato & Poblano Pepper Tacos

These halved and fried frozen tacos ($4.99) will totally crush your Taco Bell cravings, since they come together super quickly and contain flavors with mind-blowing authenticity! Each taco is filled with a blend of seasoned mashed potatoes and some "ever-so- slightly spicy" poblano peppers that'll work so well with any dipping sauce, from TJ's salsa to their creamy Jalapeño Sauce.

Just in time for Valentine's Day, Trader Joe's is debuting a new flavor ($3.99) of their classic Hold The Cone! frozen dessert: strawberry! Trader Joe's shoppers have said this new Caesar Salad Dip ($3.69) makes a perfect girl dinner addition– which, if you get it, you get it! The tub starts with a "creamy" base that's then loaded up with Caesar-seasoned sour cream, mayo, anchovy paste, Parmesan, and finely shredded Romaine for the crunch. It's best enjoyed with crackers or veggie sticks to dip, but you could also smatter fried chicken or seared steak in it for some ahh-mazing flavor!

This week, my coworker Erin joined me on Pies + DIYs to make an emoji Christmas garland. We upcycled old gold circle ornaments into emojis by adding paper details. Use scissors to cut out your emoji’s eyes and mouth and then attach to the ornament with hot glue. Once you have between five and eight emojis, start stringing them onto a long ribbon. We alternated emoji ornament, non-emoji ornament, and so on. Follow along above or you can check out more holiday garland ideas right here.

Dua Lipa and Callum Turner spent New Years Eve together, and based on the giant ring Dua's wearing on THAT finger, it looks like they could be spending the rest of their lives together too! Engagement rumors were flying by the end of the year, and thanks to Dua Lipa's latest Instagram posts, the internet is more convinced than ever that these two will be headed down the aisle soon.

In a post celebrating the holidays, Dua Lipa posted a roundup of photos — led by a shot of her wearing a sherpa jacket and reindeer antlers. It appears to be a diamond on a chunky gold band, and if you ask me, the ring's modern, glam look is the perfect vibe for the "Houdini" singer.

"THE RING," one user commented, while another user said, "ENGAGED VIBESSSSSSSSSS," under another end-of-year post.

And when Dua Lipa finally posted photos from her epic New Year's Eve celebration on January 3, a third user commented, "We all still waiting to see the 💍." TLDR; the singer's fans really want to know if she's engaged! But if there's one thing I know for sure, it's that this couple won't tell us unless they want to. And I'm here for it!

And Dua Lipa and Callum Turner are totally "mad about each other."

Dua Lipa and Callum Turner keep their relationship pretty private (aside from some very cute walks), but according to one Page Six source, they've been "mad about each other" from the start. And it's clear because these two can't keep their hands off each other!

"Dua and Callum are so in love and know this is forever," a source told The Sun in December 2024. “They are engaged and couldn’t be happier. Dua has had one of the best years of her career professionally and this is the cherry on the cake."

"Callum is such a solid support for Dua and they make a wonderful couple," the source continues. "Their family and friends are so happy. It’s been an amazing Christmas for them.”
