3-Ingredient Chicken Pineapple Skewers To Make Game Day Prep Even Easier

The Big Game is coming up! Do you know what you’re going to serve? Well if not, we suggest you make our super easy Three-Ingredient Pineapple and Chicken Skewers! Low cal and healthy as well, these skewers are sure to please your guests. Want to add a little more flair? We’ve also included Lettuce Wrap and coconut peanut sauce recipes that are sure to be a winning combo!

Ingredients

  • 2 cups teriyaki sauce
  • 2 lbs. chicken breasts or tenders
  • 1 can Del Monte Pineapple Chunks (15.5oz can)
  • Optional: sesame seeds for garnish

Lettuce Wraps:

  • butter or bibb lettuce
  • sliced red bell peppers
  • cilantro
  • crushed peanuts
  • coconut peanut sauce (recipe below)

Coconut Peanut Sauce:

  • 1/2 can light coconut milk
  • 1/3 cup creamy peanut butter
  • 2 tablespoons brown sugar
  • 1 teaspoon chili sauce
  • 1 teaspoon soy sauce

Directions

Now let's dig in!

  • Gather your skewer ingredients and preheat your oven to 350 degrees F.
  • Begin by slicing your chicken lengthwise and crosswise into 2-inch chunks.
  • Transfer your chicken to a bowl and add the teriyaki sauce. Let marinate for about 30 minutes.
  • Meanwhile, drain your pineapple chunks and place in a bowl.
  • Time to skewer the chicken and pineapple chunks! We alternated meat and pineapple but you can create your own combo.
  • Lightly grease a pan with rimmed sides and place the skewers inside. Bake for about 20 minutes or until chicken is no longer pink inside. You may need more or less time depending on the size of your chicken chunks.

Voila! You're done. We sprinkled our skewers with some sesame seeds for a little something extra but it's totally optional! Another fun extra is the Coconut Peanut Sauce. Just mix all of the ingredients together and you're done.

Now, like we said, these skewers are perfect all on their own but if you want to make them into a complete meal, these healthy and delicious lettuce wraps are a great option. Start by adding sliced red bell peppers and the cooked chicken and pineapple from the skewers to a lettuce leaf. Then top with Coconut Peanut Sauce, cilantro, and chopped peanuts.

I wouldn't call myself a FAFSA (Free Application for Student Aid) expert, but I ended up having to know a lot more about it than I ever anticipated. FAFSA is what administers Pell Grants, which is what a lot of colleges base their financial aid on. I knew about the application changes, and some were excellent, but they made a series of critical errors and a lot of parents were scrambling. It was not my intent to have this as my area of focus; it just became a necessity.

What's a recent small win for your business?

Recent small wins are my collaborations. I formed partnerships with one organization that focuses on students with special needs. I hosted a webinar with the executive director of that organization. I formed a partnership with members from an insurance company on planning and paying for college. That was my first corporate sponsorship. And I've got a series of events coming out because others actually reached out to me. One of them I met through another networking platform, but I got to that platform from one of the sessions that I did with Verizon Small Business Digital Ready Program.

How did you start to collaborate with external partners?

Just changing my strategies and my approach, and just being more secure and more emphatic in making connections. It ends up being this continual cycle.

Is there a woman in business that you admire or that you look up to?

I have two. Leontyne Anglin, who runs a nonprofit called Beyond Expectations. She works with a small pool of students, but she just gives them enormous exposure and opportunity. She's brilliant with collaborating with individuals and businesses and really bringing the students what they need. And then the other on a bigger scale is Cate Luzio, founder and CEO of Luminary, who taught her Business Plan Bootcamp through the Verizon Small Business Digital Ready Program. She is just a dynamo. She is just so supportive of women entrepreneurs. She's awesome.

How did the Verizon Small Business Digital Ready Program help propel your business forward?

All of the collaborations and partnerships with the exception of one all came from joining the Verizon Small Business Digital Ready Program. I’ve taken all of the free classes and the one on projections and pricing, something every entrepreneur struggles with, was very helpful. There have been so many of them. Sometimes you're completely ignorant in a category so you take the class and it's like, okay, that's good to have. But then sometimes you sign up for it and it's like, oh, yeah, I did know 90 percent of that, but this other 10 percent is going to be very, very helpful.

As a theater kid and movie fanatic, I simply cannot stop singing the Wicked soundtrack, checking out all the new Mattel dolls, and re-watching the Wicked trailer. Any fan of the musical knows that Wicked features moments from The Wizard of Oz, and during part 1, you can see Dorothy walking to the Emerald City with the scarecrow, cowardly lion, and tin man. But one theory suggests we'll actually get to know Dorothy for one very good reason: a new Wizard of Oz movie is coming.

"Considering we’re having so much Wicked excitement how would you feel about the thought of Universal actually making a Wizard of Oz remake retelling with the themes of Wicked we already know," one Reddit user asks. "Sorta like now is having sympathy towards the wicked witch now, and maybe going in extremely similar way to the original Wizard of Oz but clearly taking a new turn to it with our new pov of the characters."

Plus, director Jon M. Chu teased that we'll see even more of her than we have before! “In movie 1, it was important to let Dorothy be how you want her to be. I didn't want to step on your images of whatever version of Dorothy you wanted her to be,” he tells ScreenRant. “But the presence is important because that plays a significant role in what will happen and how they intersect...But you'll have to see movie 2 to know how far we go with her.”

Wicked: Part 2 will hit theaters November 21, 2025. While the movie was originally slated for November 26, 2025, Universal Pictures decided to bump up the release date. The first Wicked movie also faced a schedule change, moving from November 27 to November 22, 2024, the same day as Gladiator II! And I can confirm they make for the perfect double feature.

Act II of the musical is all about Oz's response to Elphaba becoming the "Wicked Witch of the West." Glinda becomes beloved public figure "Glinda the Good," but realizes just how much her dreams have cost her as Elphaba is gone and Fiyero, now Glinda's fiancé, is determined to find Elphaba no matter the cost.

Wicked: Part Two will feature songs like "As Long As You're Mine," "No Good Deed," and "For Good" (as well as some new ones) — and Cynthia Erivo, Ariana Grande, and Jonathan Bailey are going to absolutely slay.

Jon M. Chu told Entertainment Weekly that part 2 is all about "consequences," and how lonely it can be after you make an important choice like we see Elphie make in part 1. "Choices are difficult to make, but when you do make those choices, sometimes the result isn't what you expect it to be," he says. "There's a lot of soul searching in movie 2. They're asking, 'Is this the right decision that you made?'"

And even though Act II of the musical is pretty dark, Jon promises movie 2 will feature some of the same lightheartedness we saw in movie 1. "There is lots of lightness in the movie," he continues. "There's a lot of fun parts. We've not forgotten about that, but there's a matureness and a nuance to it that we earn from the first movie. The second movie really gets to play with [that maturity]."

Why is the Wicked movie taking so long?

The Wicked movie has had a long road to get to its release! News of the movie adaptation originally broke in 2016, with an intended release date of 2019. But the COVID-19 pandemic, and a few behind-the-scenes details, pushed the movie to 2024 instead.

"As we prepared this production over the last year, it became increasingly clear that it would be impossible to wrestle the story of WICKED into a single film without doing some real damage to it," director Jon M. Chu tweeted in April of 2022, announcing the story would arrive in two installments.

"With more space, we can tell the story of WICKED as it was meant to be told while bringing even more depth and surprise to the journeys of these beloved characters."

Did they finish filming Wicked Part 2?

The good news is that, even though we have to wait a year to see Wicked: Part Two, filming is already done! On January 26, Cynthia Erivo shared a breathtaking photo of her silhouette as Elphaba flying on a broom. "I’ve been trying to think of what I’d say when this day finally came, and I’m failing miserably, because honestly there aren’t enough words to fully express what this experience has meant to me," she says on Instagram.

"The universe will take things away to make space for the grand gifts it has waiting for us," she continues. "THIS moment, this film, these people, this cast, this crew, this director, my Glinda, were the Grandest gift I could ever have asked for, and I am eternally grateful for the chance to bring you This Elphie. I hope when you meet her, you’ll love her as much and as fiercely as I do. And with that I say, that’s a wrap for me, Elphie out!! 💚💚💚"

Ariana Grande shared a similar image of her own silhouette on January 25, saying, "like a handprint on my heart," which is a lyric from "For Good." I love these women so much!

I wanted to reconnect with other moms and figure out how they were able to run their businesses and raise a family and take care of themselves because I wasn't able to do all three at the same time. Through that journey, I realized that I really needed to connect with other people and how important it was for my business. It helped me to create that community that I was yearning for that I didn't realize that I needed.

What's a recent small win for your business?

For me, the win was just pivoting back to something that I actually wanted to do. Also, I’ve started to say no to things that I no longer want to do.

Who is a woman in business that you look up to and why?

I have always admired and looked up to Amy Porterfield [author of Two Weeks Notice]. I listened to her all the time when I was starting out. I think that she's amazing and I love her stuff. She just seems like a very genuine person.

Is there a resource that has made an impact on you as an entrepreneur?

I listen to a lot of audio books. One of my favorites that has been huge for me is You Are A Badass by Jen Sincero. I was told when I first started my business, by a friend who was a business coach, that I have a mindset problem. Ten years ago, I had no idea even what “mindset” was. Sincero’s book helped me to see what she meant by “mindset” and helped me adjust that mindset and fix some of the things that I didn't realize were broken.

How has the Verizon Small Business Digital Ready Program helped propel your business forward?

There are a lot of things that I have loved about it. There are local networking and training opportunities, and that has been great, and the online training is very valuable. It's a great resource. I find that marketing needs a three-tiered approach, meaning you need to network it locally, socially, and then also have a very comprehensive online approach to your marketing. One of the Verizon Small Business trainings that I took was all about taking advantage of your local resources. I found that to be extremely valuable because often people think they need to just focus on social media. I don't think that people focus enough on their local community.
