These 3 Poke Bowl Bento Boxes Just Made Lunchtime the Best Time

Have you heard? Poke bowls are so hot right now! Unless you’ve been living under a rock, I’m pretty sure this comes as no surprise, as these healthy, fresh, bountiful bowls are everywhere from Instagram feeds to Pinterest boards. In fact, our friends from Pinterest saw a 415 percent increase of poke bowl pins compared to last year. OMG! They’ve even curated a board with some of their favorites. We wanted to take the poke bowl to the next level, so we’ve combined this trend with the bento box rage to create three colorful lunches that will give your coworkers serious FOMO.

How to Make Soy Ahi Poke

Ingredients:

  • 1 pound fresh ahi (sashimi grade), cut into bite-sized cubes
  • 4 Tablespoons soy sauce
  • ¼ cup green onions, chopped
  • 3 teaspoons sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 medium clove of garlic, minced
  • 1 lime
  • 1 teaspoon brown sugar

Instructions:

  1. In a small bowl, make your marinade. Add soy sauce, sesame oil, juice from half a lime, ginger and garlic.
  2. Cut the green onions and add them to the bowl. Finish with a sprinkle of sesame seeds. Whisk together.
  3. Dice the tuna into small bite-sized pieces and add to the marinade. Mix so all parts are coated.
  4. Cover and chill in the refrigerator for an hour. After the tuna marinates, you’re ready to go!

Bento Box 1: Soy Ahi Poke Salad

This one is the most colorful and fun to prepare. It also packs the most healthy punch, so feel free to indulge away!

Ingredients:

  • ½–1 cup soy ahi poke
  • 3 cups mixed greens
  • 1/3 cup cherry tomatoes
  • 1 avocado, halved, pitted and cubed
  • 1 cucumber, thinly sliced on a mandoline
  • 2 carrots, thinly sliced
  • 2 radishes, thinly sliced on a mandoline
  • 1 cup microgreens
  • pinch of sesame seeds, for garnish
  • 1 green onion, diced for garnish

Instructions:

  1. Prepare your vegetables. Slice carrots, cucumbers and radishes into thin slices using a mandolin. Pit and cube the avocado. Cut your tomatoes. Dice the green onions.
  2. Arrange tuna, cucumber, tomatoes, radishes, carrots and avocado in a pattern over your greens. Then top with microgreens and sesame seeds.

Prepare your vegetables. I like to cut five notches into my carrots so they look like little flowers when sliced on the mandolin.

Carefully use the mandolin to thinly slice the cucumbers and radish. Also, dice your green onion and avocado.

Have at it! Design your bento box in a style so fresh that you’ll be counting down the minutes ’til lunchtime.

Bento Box 2: Poke and Rice

For a heartier lunch option, go for the traditional rice and poke combo. We’ve added some avocado and seaweed salad for more flair and flavor.

Ingredients:

  • ½–1 cup soy ahi poke
  • 1 avocado, pitted and cubed
  • 1 green onion, diced
  • ½ cup cooked rice
  • ⅓ cup seaweed salad or “wakame” salad
  • pinch of sesame seeds, for garnish

Instructions:

  1. Prepare your ingredients. Dice the green onion. Pit and cube the avocado.
  2. Arrange your poke bento box in a colorful creation.

Bento Box 3: Poke and Quinoa Lettuce Cups

I love this recipe because you skip the rice and replace it with some tasty and healthy quinoa. Plus, the lettuce cups are so fun to make. It’s like making little green tacos!

Ingredients:

  • ½–1 cup soy ahi poke
  • 1/2 avocado, pitted and cubed
  • 1/2 cucumber, sliced
  • 1 head butter lettuce, rinsed and leaves separated
  • ½ cup cooked and cooled quinoa
  • sesame seeds, for garnish

Instructions:

  1. Prepare your vegetables. Dice the green onion. Pit and cube the avocado.
  2. Separate and clean butter lettuce leaves.
  3. Craft your bento box to your heart’s desire.

Arrange your bento box so you can make your own cups on the fly. I like to keep the ingredients separate to prevent the lettuce from getting soggy.

You'd think someone with acne-prone skin wouldn't buy viral beauty finds without doing thorough research, but I'm not above trying to recreate all the latest makeup trends at home. All this did was remind me that everything isn't for everyone — and that's okay! Well...it's not okay I fee like I wasted money, but at least I know what to stay away from. And now I'm here to help you figure out what to avoid as well!

Even though this products didn't work for me, that doesn't mean you can't or shouldn't use them. These are just my least faves of the year — take 'em or leave 'em!

Here are all the overrated beauty finds I wish I wouldn't have bought

1. MILK Hydro Grip Primer

I should've known better than to buy this again, but I wanted to see if my skin would react better to it. The first time I tried to use this, I broke out along my jaws in tiny, red bumps. They were itchy and eventually turned into dark spots that took me over a year to get rid of.

Instead of letting that be the red flag that kept me away from this beauty find, I decided to use it in place of my trusted e.l.f. Cosmetics Power Grip Primer I've been relying on. Two things happened:

  1. It created a beautiful base for my makeup.
  2. I didn't break out, but my faced still felt itchy.

I even switched my makeup brushes and checked to make sure other makeup products weren't expired. The culprit continued to be this primer so it's made it to my overrated list.

2. KORA Organics Kakadu Plum Vitamin C Serum

I was initially sent this to test, but I decided to buy it myself to see if I truly like it. While it was easy to add to my skincare routine lineup, I realized I actually didn't need to spend $70+ for an effective Vitamin C serum. The only difference between this serum and the one I truly love are their colors and textures.

This one has a slightly yellowish-orange tint to it while being a little thicker compared to the Timeless Skin Care Vitamin C serum I use. The latter is thinner and 100% transparent, plus the odor is slightly stronger. However, both of them aid in smoother skin, smaller pores, and a healthy glow.

I honestly wouldn't buy this one again just because I can get the same benefits for a lesser price.

3.NYX Cosmetics Fat Oil Lip Drip

This is a controversial take, but I honestly didn't love the NYX Fat Oil Lip Drip. Although I love the color payoff, it was too sticky for my liking. I saw reviews that mentioned this, but I've purchased lip glosses other people didn't love that worked for me in the past. However, the reviews are telling the truth: the stickiness takes away from what could've been a great formula.

I'll just stick to my Tower 28 Lip Softie Hydrating Lip Treatment in Ube Vanilla!

4. L'Oréal Voluminous Panorama Washable Mascara

I know people love this beauty find because it is great. I just didn't think the hype was enough to convince me to buy it again because my essence Lash Princess False Lash Effect Mascara gets the job done for $5. I will say I love the washable feature of L'Oréal's version, but it's still not enough to make me willingly spend over $10 for it.

As great of a product as this is, it's overrated to me because of the price tag.

5. Haus Labs Triclone Skin Tech Medium Coverage Foundation

Sigh...it's so hard for me to admit this, but this Haus Labs foundation has become my most overrated beauty find of 2024. It's not that it doesn't work for a few hours, but my skin prefers tinted moisturizers more than anything. I talked about it briefly on TikTok, but skin tints feel like you're not wearing anything on your face.

I'm always really oily after wearing this foundation for a few hours, but I can get extended wear out of the Danessa Myricks Yummy Skin Tint I've been wearing. I like to think it's because it has vegan collagen, ceramides, and cactus extract in it whereas this foundation has ingredients like fermented arnica in it.

Both do a great job of calming inflammation, but something about this foundation makes my skin think it's incredibly dry.

As always, Pinterest Trends is one step ahead of even the most stylish among us. They're bringing the most aesthetic micro trends to real life, no matter how niche. A team of styling and beauty experts is helping festival-goers lean into the looks we've all been pinning, from light and airy coquette and fairycore to dark feminine aesthetics like Lana Del Rey-core. It's safe to say that everyone looked so fab that I had to get in on it all!

I arrived at Coachella in a light floral set (one of my go-to warm weather outfits) and decided on the spot that I wanted to tap further into the fairycore and coquette aesthetic. The Pinterest team didn't skip a beat in helping me achieve my perfect festival look.

We started with a light blue eye shadow to tap into the sugar plum vibes. As a maximalist who loves a little extra sparkle, I naturally opted into the inclusion of micro pearls to frame my eyes.

Like every Pinterest girlie as of late, I'm still stuck on the Y2K and bow trends. There was a huge selection of bows in every size and color to choose from, but I settled on alternating baby pink and periwinkle. We added butterfly clips to my braids and topped off the look with more pearls in my hair.

This is a design trend that totally surprised me, but I'm so happy to see it in the mix. Elements like leather furniture, rustic accessories, equestrian art, even wood walls, shown in this office designed by A1000XBetter, are making an impact in 2025 and beyond. But Shea notes that you can take this trend literally or just be inspired by the look. You can also mix it with other styles to personalize it for you. Add romantic pillows or ruffled tablecloths like McGee & Co. x Loeffler Randall Gardenia Ruffle Border Tablecloth – things you love that make it yours vs. based solely on one trend.

Saturated Colors

Embracing a single pattern and drenching an entire room in it — from walls to pillows, headboards, and curtains — is a surprise trend for 2025. This maximalist approach, which has been quietly gaining traction, draws inspiration from Arts and Crafts designers like William Morris and has been in and out of vogue since the Victorian era.
