This Lebanese Rice Pudding Recipe Is The Perfect Dessert For A Hot Summer Day

This Lebanese rice pudding or riz bi haleeb is a delicious, floral version of rice pudding. This traditional recipe was handed down to me by mom, and it truly is the best I have ever had!

In Arabic, riz bi haleeb translates to rice in milk. Pretty self-explanatory, right? Lebanese rice pudding starts with cooking rice in milk, then flavoring it with mastic, rose water, and orange blossom water. The result is truly dreamy. My mom's recipe calls for heavy cream, which makes the rice pudding extra creamy and rich. She also does not use any cornstarch as most recipes do, but instead relies on the natural starches in the rice to thicken it perfectly. I don't make riz bi haleeb any other way now!

What I love about Lebanese rice pudding is how versatile it is. It's not too sweet and makes for a delicious breakfast or snack. But it's sweet enough to be a light dessert!

Lebanese Rice Pudding Ingredients

  • ½ cup medium grain rice
  • ¼ cup water
  • 4 cups whole milk
  • ¾ cup heavy cream
  • ½ cup sugar
  • ¼ teaspoon mastic, ground
  • 1 pinch kosher salt
  • 1 tablespoon rose water
  • 1 tablespoon orange blossom water
  • Crushed pistachios, for garnish
  • Dried rose petals, optional, for garnish

Instructions

1. To start, rinse the rice just one time. The key to making Lebanese rice pudding without cornstarch is not to rinse the rice too much or you'll lose a lot of its thickening starch.

2. Add the rinsed rice, water, milk, and heavy cream to a large sauce pan and place over medium heat. Stir occasionally until the mixture begins to boil, about 10 minutes.

3. Reduce the heat to a simmer, and stir every couple of minutes to prevent sticking, until the rice has puffed up and can be mashed with a spoon or between your fingers, about 15 minutes.

4. Once the rice is cooked, add the sugar and continue stirring until the rice pudding has thickened, about 20 to 25 minutes. You can test it by leaving a plate in the freezer while making it, then spoon some pudding on the cold plate and tilt it. If the pudding runs a little bit then stops in its tracks, it's done. If it keeps running even after it has cooled on the plate, it needs more time to thicken.

5. When the rice pudding has thickened, turn off the heat and add the ground mastic, rose water, and orange blossom water and stir to combine. If using whole mastic, place them in a mortar with a pinch of salt and grind them with the pestle into a fine powder. You don't want any chunks of mastic in the pudding as they can be bitter and overpowering in one bite.

How To Serve Lebanese Rice Pudding (Riz Bi Haleeb)

While the rice pudding is still warm, transfer it into little bowls or ramekins for individual servings. Alternatively, you can transfer it to one serving bowl. Let them cool to room temperature, then cover them and place them in the refrigerator until fully set and chilled.

No one will judge you if you eat half of it while it's still warm. I may or may not be speaking from personal experience.

Once you are ready to serve the Lebanese rice pudding, top them with crushed pistachios for a delicious, nutty crunch. If you want to elevate it even further, dried rose petals are a dreamy garnish for riz bi haleeb.

Tips On Making The Best Lebanese Rice Pudding

  • Don't rinse the rice more than once. We want to save its starches to make the pudding thick and creamy.
  • Use whole milk. For the creamiest rice pudding, use whole milk instead of skim or low-fat. (If you're vegan and/or dairy-free, substitute the milk and heavy cream for a plant-based milk you enjoy instead.)
  • Skip recipes that call for cornstarch. Rice is already loaded with starch - there is absolutely no need to add another type of starch.
  • Be patient. Not using cornstarch means it will take a little longer for the pudding to thicken. But it's so worth it! The rice will absorb the milk and cream slowly while thickening the mixture into a perfect consistency and a much more flavorful rice pudding.
  • Stir frequently. You don't want the bottom to stick and burn. Stay nearby and give it a stir and scrape the bottom every couple of minutes.
  • Don't skip the mastic, rose water, and orange blossom water. Unless it is impossible for you to access them, I would highly advise you against omitting them as they add such a delicious, delicate flavor to the rice pudding. It's not really Lebanese rice pudding without them. If you must omit something, I would say omit the mastic. But I say that with hesitation and a heavy heart.

What type of rice is best for rice pudding?

I have found that medium grain rice results in the best rice pudding. You can experiment with different types and see what you prefer. Short grain rice is starchier so it will yield a mushier pudding. Long grain rice is less starchy so it's a little less creamy and the rice is firmer.

Should I wash my rice when making rice pudding?

Regardless of what you are making, you should always always wash your rice. In the case of rice pudding, rinse the rice just once to wash off any dust and debris. But don't rinse it more, as we need all the starch possible.

Why is my rice pudding so runny/thick?

A runny rice pudding means you haven't cooked it long enough. Continue cooking and it will thicken, I promise. If the pudding is too thick, you cooked it too long. Remember, rice pudding thickens quite a bit as it cools. It should still be a pourable consistence when it's done. If it's too thick, place it over medium-low heat and add milk and stir until it thins out a bit.

Can I make rice pudding with cooked rice?

Yes, you can use leftover rice to make rice pudding but it will not be the same consistency. Place the cooked rice in a pot and add enough milk and cream to cover it and cook, stirring often. Follow the rest of the recipe as is, adjusting the amounts according to how much cooked rice you're using.

How long will rice pudding keep?

Store the Lebanese rice pudding covered in the fridge for up to one week.

The recipe for Taylor Swift's chai cookies is fairly straightforward. All you need to do is measure out and combine every ingredient into a large bowl and mix it all together! After chilling the dough for an hour or so, you'll be ready to roll it into balls before baking in the oven. All in all, making the chai cookies took me under an hour – so this could make for a great weeknight baking project, or a weekend activity to beat a cold-weather slump. I've made them several times for friends' parties!

  • ½ cup unsalted butter, at room temperature
  • ½ cup vegetable oil (I used olive oil, since I didn’t have any vegetable oil)
  • ½ cup white sugar, plus more for topping
  • ½ cup powdered sugar, plus more for the icing
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 chai tea bag, plus more for the icing

How To Make The Taylor Swift Chai Cookies

Rolling the cookie dough in sugar before baking them was a really sweet extra touch.

  1. Set your oven to 350 degrees F. Grease a cookie sheet and set aside.
  2. While the oven warms, beat the butter in a large bowl. After it gets fluffy, add the vegetable oil.
  3. Add the sugar, powdered sugar, egg, and vanilla.
  4. Add the flour, baking soda, salt, and the chai tea to the bowl, and mix.
  5. Chill the dough for about an hour.
  6. Pour a small amount of white sugar onto a plate, for rolling the cookie dough in.
  7. Roll the dough into 12 balls using your hands, covering each one in the white sugar before placing them on your cookie sheet.
  8. Bake for “9ish” minutes. I ended up baking them for 10.
  9. While the cookies are baking, make your chai icing – mix together a small amount (I used about ½ cup) of powdered sugar and half of a chai tea bag. Adding a capful of milk at a time, stir together until you reach your desired icing consistency.
  10. When the cookies are done and completely cool, cover the tops with the chai icing. Then you’re ready to dig in!

The cookie dough didn't need too long in the oven to bake – about 12 minutes for me!

Recipe notes:

  • For step 1, pro tip: use the wrapper from your butter to grease your cookie sheet!
  • For step 2, I used an electric hand mixer to beat the butter – much less physical work on the baker’s part.
  • For step 4, I found that mixing with a fork helped incorporate the mixture really well. I then used a rubber spatula to scrape the sides of the bowl that I missed.
  • For step 5, I didn’t end up chilling the dough, but the cookies turned out just fine!
  • For step 8, Taylor’s recipe says to bake for 9 minutes, but I found I had to bake mine a little longer, around 12 minutes. This might be because I baked them at a higher altitude here in Colorado!

I'm not going to lie to you. The editorial team, including myself, are extremely biased about Fourth Wingand Iron Flame. From my perspective, I think these are great books for anyone who had the pleasure of growing up during the great Harry Potter era and moved on to watchingGame of Thrones and House of Dragons.

Did she announce the name of book no. 3?

YES! Book No. 3 is titled Oynx Storm.

Knowing what we do about the manifestation of Violet's powers, I think this could hint she's going to play an even larger role in the series. According to a fan theory shared on TikTok(via Empyrean Riders), it's believed that Violet and Xaden Riorson are actually gods. Stay with me here.

Empyrean Riders noted that Violet's last name means heavenly and that she's able to control time thanks to her connection to the young dragon Andarna (I love her so much!). That sounds pretty god-like to me.

And when asked which two Taylor Swift songs describe Onyx Storm, Rebecca Yarros chose "Who's Afraid of Little Old Me?" from The Tortured Poets Department and "So It Goes..." from Reputation. "Who's Afraid of Little Old Me?" is one of Taylor's most powerful songs and definitely translates the idea that Violet's powers are going to be stronger than ever, while "So It Goes..." is equal parts suspense and seduction, and is TOTALLY about "all the pieces fall right into place" to get together with the right person.

There's so much more to unpack so I suggest grabbing a yummy snack while you fall down the rabbit hole. All I'm sure of is that Onyx Storm is going to leave our emotions in shambles just like Fourth Wing and Iron Flame did.

When did Rebecca Yarros announce she's done writing book no. 3 in the series?

On June 17, Rebecca Yarros shared this image of her laptop to indicate she'd finished the third book in the Empyrean series.

She wrote, "(Pic from one of the very many locations in which this book was written)," towards the end of the caption before adding a few relevant hashtags to it.

When will Onxy Storm be available for purchase?

Rebecca Yarros exclusively told Good Morning America that fans can expect the book to hit shelves January 21, 2025! That gives us a little over six months to prepare our emotions for what's sure to be a storm of a book.

She said, "There will be politics, new adventures, old enemies and of course, dragons." There's no way she could forget the dragons because I'd willingly riot over them. They deserve to have their stories told forever.

As luck would have it, Cosmopolitan received an exciting first look at what's to come in Onyx Storm. The excerpt begins with Violet realizing the Venin have found their way into Basgiath War College and are wreaking havoc. Alongside Rhiannon, Sawyer, and Ridoc, she races to stop the Venin from releasing Jack Barlowe from his prison cell.

However, Violet's shocked when she discovered one of the "dark wielders" has a long silver braid that closely resembles her own. Before she can fully react, the woman disappears. According to Screen Rant, there are possible theories about why Violet saw her and what this means for her growing power.

Towards the end of the excerpt, Violet discovers the Venin want to capture her too. Also, Xaden makes his long-awaited appearance and it's clear their playful banter in the face of danger hasn't changed. That he hasn't fully changed into the Venin Violet's used to seeing.

I officially can't wait to read the rest of the book in January!

2. Scoop out the bites using a cookie scooper (about 1 and 1/2 tablespoons) and roll in the fresh chopped apple bits. Then roll the bite to form an evenly curved ball shape. Set aside on parchment paper and repeat with the remaining dough.

Talking to Vanity Fair for her newest film Lee, Kate Winslet revealed one project she wishes fans asked about more is Iris. The 2001 film stars Kate as a young Iris Murdoch against Judi Dench's older counterpart. And for Kate, nothing was more terrifying than working with such a wonderful actress.

"People don’t really ask me about Iris. It’s such a delicate film," she says. "It was the first thing I had done after having my daughter. Going to work with a baby, I’m playing Iris Murdoch, looking to Judi Dench’s older Iris Murdoch — I was sh—ting myself."

Considering how nervous I get when I meet my heroes, I can only imagine what it was like to meet Dame Judi Dench. Talk about a dream! Another film Kate loves is Revolutionary Road, and not just because she got to reunite with Leonardo DiCaprio.

"The thing that people say is, 'You got to work with Leo again.' Then they go off on the whole Leo tangent, which I totally understand," she says of the film, which follows an ambitious couple who find themselves trapped in the reality of 1950s suburbia. "But Revolutionary Road — f—king hell, it just knocked us all sideways. Unbelievably difficult material. I was very proud of that film and what Leo and I were able to create as Frank and April. It was so brutal."

The process for getting Lee into the world sounds equally brutal, considering Kate started working on it over a decade ago. As producer, Kate tells Vanity Fair she doesn't mind the fact she's done more for the film than if she only had an acting credit. "That has felt very necessary for this film. But it’s also just really important to me," she says. "It’s important to me that people know that it’s out there and might feel compelled to go and see it."

Because it turns out, commercial success or stardom on its own doesn't actually help your movie get made! "It doesn’t matter who you are," she says. "No one’s going to go, 'Oh, I’ll just back that pony because she was in Titanic.' It doesn’t happen that way, and I never expected that. That’s really important to say."

"I've gotten older and I’ve learned more and felt more confident in myself about whether or not I could actually do it," she adds. "It’s not something I would’ve done had I not felt so passionately about the subject, and Lee was just—she wouldn’t let me go."

This is a huge cast, and Viswanathan just revealed how crazy the first day of filming was. “My first day didn’t feel real," she tells Vanity Fair. "I felt this extra pressure of, ‘Know your lines, babe. You can’t really play around like you usually do.’"

Historically, sci-fi fans haven't been kind to actresses in their favorite projects (remember when Star Wars fans bullied Kelly Marie Tran off social media?). But Viswanathan is already thinking ahead. “If it’s overwhelming, I’ll log off. But I like discourse around pop culture,” she says. “[Thunderbolts*] felt a little bit edgier and fresher, more existential and dark.”

The rest of the cast also enjoyed working together. “Everyone is going to f—kin’ love me! It’s really, really, really fun to be with a group of actors that you have a good time with," Wyatt Russell says at Comic Con (via Variety), while David Harbour adds, “Florence Pugh [is] just electric to work with. There’s warmth and humor, but there’s also a lot of pathos.”

“This is why we can't stop laughing together, because we genuinely just had such a wonderful time with each other and we've loved working with one another," Pugh tells People. “I feel like this is something that we've never seen before from Marvel...it's a very open and honest and truthful idea. And I'm just really excited for people to watch it.”
