How Two College Roommates Turned a Food Allergy Into a Superfood Ice Cream

Women food entrepreneurs and makers are making waves in the industry by developing delish sweets that are successful. In our How to Quit Your Day Job series, we’ve gotten the inside scoop on how Ben & Jerry’s Flavor Guru Natalia Butler landed her dream gig, learned how Sugarfina co-founder Rosie O’Neill made her candy-land fantasy a reality, and discovered how one former lawyer’s pie-making hobby became her full-time job. Now, we chat with Rachel Geicke and Mariana Ferreira, the co-founders of Snow Monkey, an allergy-friendly ice cream that they once whipped up in their college dorm.

Meet the Ice Cream Pros: Rachel Geicke & Mariana Ferreira

In 2015, Rachel Geicke and Mariana Ferreira were roommates at Boston University who made batches of superfood protein ice cream that Geicke, who has severe food allergies, could eat. Calculating the nutrition profile of their frozen dessert was part of the equation for launching a Kickstarter campaign to get the treat out to consumers. The campaign was fully funded in four days, and the duo moved forward with bringing their pints to market. The Santa Monica-based company’s products recently became available to buy at Kroger grocery stores in the Pacific Northwest, Southern California, and Denver, with five delicious vegan- and paleo-friendly flavors currently on shelves: Cacao, Açaí Berry, Cinnamon, Passionfruit, and Matcha Green Tea. Here, Geicke and Ferreira share how their dorm room dessert became a big business.

Brit + Co: What’s your morning routine?

Rachel Geicke: I wake up, do a short meditation (breath work, if I have time), prep my post workout shake, train, walk the pup, and work. I shower too.

Mariana Ferreira: I wake up, check my phone (automatic response!), stretch, prep my bag, put on gym clothes, and go work out. And coffee.

B+C: What inspired you to start your company?

RG: I’m a lifelong athlete with serious food allergies. There was no tasty frozen treat that fit my nutritional needs and dietary restrictions. Snow Monkey was originally created to solve a personal problem; however, once we realized that countless Americans are in an unhealthy relationship with ice cream, we felt compelled to bring Snow Monkey to market. We believe that nutritious and delicious can go hand in hand, so we’re on a mission to reinvent ice cream for America and help people make healthier choices.

MF: I think there is a lack of education on what it means to eat well. Part of that is the responsibility of food companies to provide nutritious, natural products. I hope we can be part of the solution. Also, by showing how goods like ours do well, we want to inspire the brands that aren’t providing healthy options to follow the trend.

B+C: How do you challenge yourself as an entrepreneur?

RG: Every day is a challenge, but I love it. We’re a young team, trying to compete with giant food conglomerates with a fraction of the budget. So we are constantly learning, fighting fires, throwing Hail Marys, and doing whatever it takes to reach our goals.

MF: Managing risk, stress, and time management [is my challenge]. I am always looking for ways to check in with myself and ensure I am showing up for my company, my family, and myself. It’s a careful and delicate balance, but on the weeks where I am able to do it well, it feels like I am on top of the world and I am pleased I am able to be there for everyone else in my life too.

B+C: Tell us about how your family and friends help support your business.

RG: My father is my number-one supporter. He inspires me to chase my dreams and always shares thoughtful advice. I ditched corporate plans to pursue Snow Monkey, which was incredibly risky. There were plenty of dark moments during the early days, and I wouldn’t be here without the early support, product feedback, and encouragement from family and friends.

MF: My family is an amazing support system. They are always excited for Snow Monkey’s wins, offer their ear if I ever have concerns, and help me troubleshoot or make connections whenever possible. Without them, this wouldn’t be possible for me. My close friends are also very supportive by sharing Snow Monkey with others, supporting our online sales, and celebrating wins with me.

B+C: What’s the best advice you’ve ever gotten?

RG: I like a David Bowie quote: “Tomorrow belongs to those who can hear it coming.” I’m a visionary, and this reminds me to focus on my skill and build a diverse team with complementary skill sets so we can divide and conquer.

MF: “Don’t look down.” Starting something new — be it a venture, a project, etc. — there are so many things to do at once, and it’s important to remind yourself to focus on the task at hand and see it through before moving on.

B+C: What do you love about your job?

RG: Snow Monkey delivers an authentic solution that benefits our community on a large scale. I love watching how pleasantly surprised consumers are when they try Snow Monkey for the first time. They can’t believe that such a healthy ice cream alternative tastes great. Or hearing stories from consumers about how Snow Monkey has allowed them to eat ice cream again.

MF: Learning. I am such a nerd, and I love knowledge: sharing it, having it, expanding it — all of it. Entrepreneurship lets me learn, teach, and do, all at the same time. For me, that’s a dream come true.

B+C: Name two female heroes who you think should get a shout-out.

RG: Former race car driver Susie Wolff and tennis star Serena Williams.

MF: There are too many amazing women in this world, but I’d say Shakira and Karlie Kloss.

B+C: If you could tell aspiring creative women anything, what would it be?

RG: Prioritize self-care, because it will allow you to deliver optimal work to your project or business.

MF: Never be afraid to be unabashedly yourself. And if that rubs someone the wrong way, don’t apologize.

The Frosty Swirls lineup that launched on April 15 consists of three flavors: strawberry, caramel, and brownie batter. The Strawberry Frosty Swirl features a “sweet, juicy” strawberry sauce that’s mixed throughout and placed on top of the Frosty treat. Next, Wendy’s says the Caramel Frosty Swirl tastes like a “cold, creamy candy bar.” The last flavor, Brownie Batter, is nothing but decadent and chocolatey.

But that’s not all when it comes to new Wendy’s Frosty's – the chain is also launching a trio of Frosty Fusions that not only incorporate the new sauces, but some tasty mix-ins, too.

The Frosty Fusions will hit menus nationwide on May 12 with three flavors: Pop-Tarts Strawberry, Oreo Brownie, and Caramel Crunch. The Pop-Tarts Strawberry Frosty Fusion combines Wendy’s strawberry sauce with chunks of strawberry Pop-Tarts Crunchy Poppers pieces. The Oreo Brownie Frosty Fusion features the new Brownie Batter sauce mixed with Oreo cookie pieces – yum! The last Frosty Fusion flavor, Caramel Crunch, highlights crunchy toffee pieces and a sweet caramel sauce.

Frosty fans will also be delighted to know that Wendy’s is launching a new cup design for these treats! The new cup is fitted with a domed lid that makes room for all the sweetness inside, plus makes a great dipping space for fries. Wendy’s also created a custom Frosty spoon that is “specially designed for the best experience” so you can eat every last bit of Frosty.

Everybody raise your Kir Royale cocktails because Emily in Paris has been renewed for season 5! (And it looks like she might be trading some of her cocktails for espresso). The official Emily in Paris & Netflix Instagram accounts made the announcement on September 16 with a video of Lily Collins sipping some espresso on a rooftop.

"There's no place like Rome," Lily says with a wink. And, to be frank, we have to agree. I didn't think Emily in Parisseason 4 (or its fashion) could get any better after that Part 1 ending, but taking our favorite Parisians to Rome turned out to be a fantastic move — and not just because it introduced us to Marcello.

A more fitting question might be "Who isn't in the Emily in Paris season 5 cast?" because Camille Razat won't be returning as Camille. "Characters can come in and out of a series, but you don’t necessarily have to see them," Darren Star told TVLine. "But again, [Camille's] part of the world of the series. I’m not sure how soon we’ll see her, but it doesn’t mean, again, that we won’t be seeing her."

We don't have an official Emily in Paris season 5 release date yet, but Deadline confirms the show begins production in May and will release on Netflix in 2025!

The Emily in Paris season 4 finale changed everything when Emily decided to stay in Rome and head up an Italian office for Agence Grateau. But, don't worry French fans. Darren Star promises we'll see her in the City of Love again, telling The Wrap, "definitely we’re not leaving Paris behind.”

And after Gabriel realized how much he wants to be with Emily in the season 4 finale, it looks like season 5 will feature even more of the show's signature relationship drama. "I think [Gabriel] realized that he wasn’t even aware of the fact that [Emily] left and how disconnected they’d become," Star continues. "He’s met the guy; he realizes the circumstances under which they met, and I think he just didn’t understand how fast things had moved between them."

But as much as we love to see Emily and Gabriel together, Lily Collins is excited to explore a Emily and Marcello. “Marcello is a whole other adventure that we want for Emily because we ultimately want Emily to be able to have a better work/life balance,” she tells TUDUM. “We want to have Emily be able to smile without condition. We want to see her beyond her vacay mode. And he comes at that perfect time.”

Yes, Emily in Paris season 5 is coming to Netflix. "We’re thrilled with the incredible response to this season of Emily in Paris and excited to return for a fifth to continue Emily’s adventures in Rome and Paris!" creator Darren Star tells TUDUM.

The renewal comes as no surprise considering season 4 held Netflix Global Top 10's top spot and received almost 20 million views in four days.

Brandon Sklenar has some pretty epic love stories under his belt. 1923's Alex and Spencer and It Ends With Us' Lily and Atlas are two iconic couples in pop culture right now, and I'm adding Violet and Henry from Drop (premiering in theaters April 11) to the list. What starts out as a fun first date turns terrifying when anonymous drops to her phone demand Violet kill Henry before the date's over. Whoa. That's intense.

But despite the fact this is probably the worst first date in recent cinema, Brandon Sklenar and White Lotus star Meghann Fahy's chemistry is so electric that I'll be referring to the movie as a scary rom-com from here on out. Naturally, I have to ask Brandon if he'd ever do a classic rom-com!

Is Brandon Sklenar in a rom-com?

"It's possible. I'm not saying no, but it's possible," he teases. "I'd love to do a comedy at some point. Everything I have in the future is very far from, and very far from romance, but I'd say it's possible. Yeah, never say never."

As far as his dream comedy goes, Brandon tells Brit + Co, "I love Peter Sellers and I love like Chevy Chase movies. I'm like I'm a very physical guy and I'd love to be able to do something just absurd like grounded but completely absurd."

What have Meghann Fahy said about Brandon Sklenar?

The best ensemble comedies and rom-coms always have incredible casts, but I can't imagine a better duo than Brandon and Meghann. They make an incredible team in Drop, and Meghann admits if she found herself in the same situation as Violet, she wouldn't hesitate to tap Brandon in to help her.

"If sh—t went down, he'd be a good guy to be with," she says. "I feel like you got some real survival skills."

"I could do a couple of things, but most of that I learned from my friends of mine who are even gnarlier than me," he says. "I take little credit. I mean, you learn everything from somewhere, right?"

"I mean, I'm pretty good with like hand to hand combat," he continues, before Meghann tells him he's good at intimidation and he quite literally goes, "Grr, scary face. Spooky."

What is a good first date conversation?

But, more often than not, a bad date won't have any danger...just awkwardness. "I think if you're on a bad date and you realize 'I'm probably not gonna end up with this person,' just try to enjoy yourself anyway and make it about just trying to connect with somebody," Brandon says. "Just just get to know somebody for the sake of getting to know someone."

When it comes to ice breaker questions and conversation starters, Meghann loves "a final meal [question] like last meal, appetizer, main, dessert, drinks, sides, the whole bit."

"What did you want to be when you were really little growing up?" Brandon adds. "Dream scenario." (Let the record show Brandon has admitted he loved Batman growing up, and he's a leading fancast for the DCU. I'm totally here for it).

MAJOR The Last of Us season 2 spoilers ahead!

If you thought The Last of Us season 2 couldn't get more dramatic than its premiere, then you'd be wrong. Season 2 primes us for some emotional drama by showing just how much Ellie (Bella Ramsey) and Joel (Pedro Pascal) are at odds, and throwing Abby (Kaitlyn Dever), who's seeking revenge on Joel for her own father's murder, into the mix shatters everything.

The Last of Us season 2, episode 2, "Through The Valley" is already being heralded by social media users as one of the best episodes in TV history. But it's definitely memorable for one specific reason: the episode killed off Joel, played by Pedro Pascal.

Let's talk about what the heck just happened with Joel Miller (Pedro Pascal) in The Last of Us season 2.

Does Joel die in episode 2?

Joel Miller (played by Pedro Pascal in the hit HBO show) dies in The Last of Us season 2, episode 2. "People are going to be upset. That's sometimes how good drama goes," executive producer Craig Mazin tellsUSA Today. "This was something that was always meant to happen. So much of the first season was, in a weird way, leading to this moment. And it's upsetting."

The horrifying moment comes after a blizzard — and some infected — put Abby, Joel, and Dina (Isabela Merced) on a collision course. After they rescue her from the aforementioned infected, Abby brings the two Jackson residents back to the lodge in the mountains where her group is hiding. Meanwhile Jackson, dealing with its own infected attack, burns in the distance.

Joel's anxious to return to town, but he's got bigger problems: Abby recognizes him as the man who killed her father (and wiped out the Firefly hospital) and, after putting Dina to sleep, Abby takes out five years' worth of anger and devastation on him with a golf club. Yeah. I can't believe it either.

But even more horrifying is when Ellie finds the lodge and bursts into the room. When she begs Joel to get up, there's a moment when you can see a beaten Joel start to lift himself up from the ground before Abby uses the now-broken golf club to kill him. I hope Ellie holds onto this moment and knows Joel was willing and able to do whatever it took to keep her safe!! I will scream about them forever!!

As Abby's group leaves, Ellie swears she'll kill them, and "you can't help but believe it is absolutely true," Craig says. There's a truly devastating shot of Ellie lying over Joel's body in the empty room that parallels her nursing him back to health at the end of season 1, episode 7 and I don't know if I'll ever get over it.

Why was Joel killed off?

In addition to being literal retribution for the death of Abby's father, Joel's death is a catalyst for Ellie's journey throughout the rest of the season as she grapples with revenge, grief, and anger. "Loss is kind of how this story functions, so this was largely preordained," Craig continues.

And yes, Pedro was aware of this devastating scene when he signed up for the life-changing role. "When I talked to Pedro the first time, I said, 'This is how this will go,'" Craig says. "I wanted him to know that we're not going to do this for seven seasons with you in that spot. We're going to do a season, and if it goes well and there's a second season, this will happen."

What happens to Ellie after Joel dies?

The trailer for the rest of The Last of Us season 2 shows that Ellie and Dina aren't giving up until they enact their own revenge on Abby and her group. The two women are headed for Seattle and they're up against infected, the militia, and everything else this post-apocalyptic world has to throw at them.

But even though Joel's gone for good, Pedro isn't. We're in for plenty of flashbacks that fill in those five years between seasons 1 and 2!
