Summer is in full swing, and it is getting HOT out there. The best way to beat the heat? Dessert… obviously! Well, frozen desserts, to be exact. We’ve teamed up with our friends at So Delicious Dairy Free® to bring you four epic (+ easy) summer desserts. Plus, they’re all dairy-free AND vegan! Pretty *cool*, huh? Read on for the recipes!
Frozen Cookie Dough Bites
Ingredients:
– 1 pint So Delicious Dairy Free® Coconut Milk Cookie Dough Frozen Dessert
– 2 cups vegan chocolate chips
Instructions:
1. Pour chips in a microwave-safe bowl. Microwave for 1 minute. Stir. Continue to microwave in 30-second intervals until completely melted.
2. Line a cookie sheet with wax paper. Place mini scoops of frozen dessert onto the wax paper. Pop the cookie sheet in the freezer for 10 minutes.
3. Using a spoon, drizzle melted chocolate over the bites. Return the cookie sheet to the freezer for 15-20 minutes, until chocolate is firm. Enjoy!

Peanut Butter Banana Shake
– 2 bananas, sliced
– 1 1/2 cups So Delicious Dairy Free® Vanilla Coconut Milk Beverage
– 1 cup So Delicious Dairy Free® Unsweetened Vanilla Cultured Coconut Milk
– 1/3 cup creamy peanut butter
– handful of ice
– So Delicious Dairy Free® CocoWhip Light
Instructions:
1. In a blender, combine bananas, coconut milk, cultured coconut milk, peanut butter and a handful of ice. Blend until smooth.
2. Pour into a glass and top with a spoonful of CocoWhip. Drink up!

Ingredients:
Layered Fruity Terrine
– 1 pint So Delicious Dairy Free® Coconut Milk Oregon Mixed Berry Frozen Dessert
– 1 pint So Delicious Dairy Free® Coconut Milk Coconut Frozen Dessert
– 1 pint So Delicious Dairy Free® Coconut Milk Simply Strawberry Frozen Dessert
– assorted fresh fruit
Instructions:
1. Line a 9- by 5-inch loaf pan with plastic wrap. Scoop mixed berry pint into the bottom of the pan. Smooth with a spatula and freeze until firm. Scoop coconut pint on top of the mixed berry layer. Smooth with a spatula. Freeze until firm. Top the coconut layer with strawberry pint. Smooth with a spatula and freeze until firm.
2. Remove the terrine from the freezer and let sit for 5-10 minutes. Carefully remove from the pan and turn onto a plate. Garnish with fresh berries. Enjoy!

– vegan brownies, crumbled
– 1 pint So Delicious Dairy Free® Cashew Milk Salted Caramel Cluster Frozen Dessert
– 1 pint So Delicious Dairy Free® Cashew Milk Dark Chocolate Truffle Frozen Dessert
– vegan chocolate sauce
– So Delicious Dairy Free® CocoWhip Original
Instructions:
1. Add a handful of brownie pieces to the bottom of a mason jar. Top with a scoop of caramel frozen dessert. Add another handful of brownie pieces. Top with a scoop of chocolate truffle frozen dessert. Place your sundae in the freezer for 10 minutes to firm up.
2. Top with chocolate sauce and a spoonful of CocoWhip.
